CHEF JOHN'S ITALIAN SAUSAGE CHILI

I've added pork to ground beef in chili before, but I've never tried it with all Italian sausage, and I loved the results. We Italian'd this up even more with cannellini beans and a touch of basil, but other than that, it's a fairly classic chili. Garnish with sour cream, avocado, red onion, and basil.

1 tablespoon olive oil
1 ¼ pounds hot Italian sausage, casings removed
1 ¼ pounds mild Italian sausage, casings removed
1 onion, chopped
salt to taste
2 tablespoons ancho chile powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon ground black pepper
½ teaspoon chipotle chile powder
½ teaspoon dried oregano
2 ½ cups water, or as needed
1 cup tomato puree
2 (15 ounce) cans cannellini beans, drained and rinsed
1 red bell pepper, diced
1 green bell pepper, diced

Steps:

  • Heat oil in a large pot over medium-high heat. Cook and stir hot Italian sausage, mild Italian sausage, onion, and a pinch of salt together in the pot, breaking up sausage with a wooden spoon. Cook until sausage is browned and crumbly, and most of the liquid is evaporated, about 10 minutes.
  • Stir ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture; saute until fragrant, about 2 minutes.
  • Pour water and tomato puree into sausage mixture, bring to a simmer, reduce heat to medium-low, and cook on a steady simmer until sausage is tender, about 45 minutes. Add water as necessary and skim any fat that floats to the top.
  • Stir cannellini beans, red bell pepper, and green bell pepper into sausage mixture. Simmer until vegetables are tender, about 30 minutes. Season with salt to taste.

I could barely boil water when I got out of the Navy, but I'm quite comfortable in the kitchen now. This recipe in one I created.

1 celery rib, chopped
1 small onion, chopped
1/4 cup chopped green pepper
1/4 cup chopped sweet red pepper
1 tablespoon vegetable oil
1 Italian sausage link (1/4 pound), casing removed
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 cup canned kidney beans, rinsed and drained
1 cup water
5 tablespoons tomato paste
2 tablespoons chopped green chilies
3/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded cheddar cheese

Steps:

  • In a small saucepan, saute the celery, onion and sweet peppers in oil until crisp-tender. Crumble the sausage into a skillet; cook over medium heat until meat is no longer pink; drain. Stir in the tomatoes, kidney beans, water, tomato paste, chilies and seasonings; bring to a boil. Reduce heat; simmer, uncovered, for 20-30 minutes or until thickened. Sprinkle with cheese.

1 tablespoon olive oil
1 lb Italian chicken sausage
1 garlic clove, minced
1 (19 ounce) can red kidney beans, rinsed and drained
1 (14 ounce) can tomato sauce
1 (28 ounce) can diced tomatoes, undrained
1 (12 ounce) can sweet corn
1 small zucchini, sliced
2 stalks celery, diced
1 large carrot, diced
1 medium onion, diced
1 sweet red pepper, diced
1 teaspoon cumin
1 -2 teaspoon chili powder
1 teaspoon red pepper flakes
2 tablespoons brown sugar

Steps:

  • Spray large pot with no-stick spray.
  • Heat oil over medium heat.
  • Remove sausage from casings and mash with fork to break up into small pieces When almost browned, add veggies and garlic and cook 3-4 minutes-drain any visible fat.
  • Add tomatoes, tomato sauce and spices.
  • Bring to boil and simmer 30 minutes.
  • Add corn and kidney beans and simmer another 30 minutes.

¼ cup vegetable oil
2 cups chopped bell peppers
1 large red onion, chopped
4 stalks celery, chopped
4 small carrots, chopped
2 ½ pounds Italian sausage links, casings removed
5 (14.5 ounce) cans Italian-style stewed tomatoes, undrained
6 cups water, or more to taste
2 cups black beans, rinsed and drained
2 cups kidney beans, rinsed and drained
1 ¼ cups tomato paste
1 cup uncooked brown rice
½ cup chopped green chile peppers
1 tablespoon chili powder, or more to taste
1 tablespoon chipotle peppers in adobo sauce
1 teaspoon salt
1 teaspoon ground black pepper
1 cup shredded Cheddar cheese

Steps:

  • Heat oil in a large saucepan over medium heat; stir in bell peppers, onion, celery, and carrots. Cook and stir until crisp tender, about 5 minutes.
  • At the same time, heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer cooked vegetables and sausage to a Dutch oven. Stir in stewed tomatoes, 6 cups water, black beans, kidney beans, tomato paste, brown rice, chile peppers, chili powder, chipotle peppers in adobo sauce, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer, uncovered, until thickened, 1 hour or more. Add more water if too thick.
  • Ladle into bowls and sprinkle with Cheddar cheese.

1 tbsp vegetable oil
1 lb hot Italian fennel
sausage links
1 tbsp olive oil
5 oz pancetta, diced
1 large yellow onion, diced
6 garlic cloves, minced
1 green bell pepper, diced
2 cups dry cannellini beans, rinsed
Spice mix:
1 tbsp finely chopped oregano leaves
2 tsp red-pepper flakes
2 qts (8 cups) chicken stock
coarse salt and ground black pepper to taste
Garnish:
sour cream
½ cup green onions, cut into long strips
½ cup fried leeks*

Steps:

  • Method Film a large stock pot with vegetable oil and place over moderately high heat. Brown sausage on all sides. Reduce heat to low and cook through, 8 to 10 minutes. Remove sausage from pan and cool. Discard grease. In the same pan, add olive oil and pancetta. Render pancetta over low heat until crisp, about seven to nine minutes. Add onion and cook until soft and translucent, five to six minutes. Add garlic and sauté until golden, about three minutes. Add remaining ingredients, increase heat, and bring to a boil. Dice reserved sausage and return to chili mixture. Lower heat and simmer until beans are tender, at least 90 minutes, stirring occasionally. Season with salt and pepper to taste. Serve each bowl of chili with a dollop of sour cream and some green onions and fried leeks. Serves 4 to 6. *Fried leeks: 2 leeks (white parts only), cleaned, trimmed, and cut into fine threads 1 cup canola oil coarse salt to taste Bring water to boil and blanch leek threads for five to eight seconds. Strain and squeeze excess moisture from leeks, patting dry with paper towels. In a large skillet, heat canola oil over high heat until almost smoking. Add leeks and fry until they just start to turn golden brown. Drain on paper towels. Season with salt.

1 small onion, chopped
1 stalk celery, sliced
1 Tbsp. chili powder
1 can (28 oz.) crushed tomatoes, undrained
1 can (14.5 oz.) black beans, rinsed
1 can (8 oz.) tomato sauce
2 tsp. packed brown sugar
2 tsp. GREY POUPON Dijon Mustard
1 tsp. HEINZ Worcestershire Sauce
1-1/2 cups KRAFT Shredded Cheddar & Monterey Jack Cheeses
1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Brown sausage with onions and celery in large saucepan on medium-high heat; drain. Add chili powder; cook and stir 1 min.
  • Add tomatoes, beans, tomato sauce, brown sugar, mustard and Worcestershire sauce; stir. Bring to boil, stirring occasionally. Simmer on medium-low heat 20 min., stirring occasionally.
  • Serve topped with cheese and sour cream.
