1 (16 ounce) package penne pasta
½ pound ground sausage
1 (1.2 ounce) package creamy pesto sauce mix (such as Knorr®)
1 cup milk
¼ cup olive oil

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook penne at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain and transfer pasta to a bowl.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; add to pasta.
  • Whisk pesto sauce mix, milk, and olive oil together in a small saucepan; bring to a boil while stirring constantly. Reduce heat to low and keep at a simmer until thickened, about 3 minutes; pour over pasta and sausage mixture and toss to coat.

Peppery arugula pesto is the perfect accompaniment to grilled Italian sausages. Save any extra pesto to use on other grilled meats or fish. It will last up to one week in the refrigerator.

1 bunch arugula (about 4 ounces), stems trimmed, washed
4 cloves garlic, peeled and smashed
1 cup freshly grated Parmesan cheese
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground pepper
1/2 cup extra-virgin olive oil
8 assorted Italian pork sausages (about 1 pound), both hot and sweet varieties

Steps:

  • Make the pesto: Place the arugula and garlic in the bowl of a food processor. Pulse until finely chopped, scraping down sides if necessary. Add cheese, salt, pepper, and olive oil, and puree until smooth and well combined.
  • Heat grill to medium-high heat. Prick sausages with fork to allow excess fat to drip. Grill until cooked through, about 4 minutes per side. Serve pesto over the grilled sausages.

Arugula Pesto
1/2 cup grated romano or parmesan cheese
1/2 cup walnuts, coarsely chopped
1 clove garlic
2 big handfuls of packed arugula leaves
A drizzle olive oil
salt and pepper
Italian Sausage
1 X 8 inch piece Chorizo Sausage, hot
Dash oil
Dash Sherry vinegar

Steps:

  • Arugula Pesto Grate your cheese. Pop all ingredients in a food processor or blender and while it's running drizzle in about 1/2 cup good olive oil. This will be used to garnish your Chorizo pieces. Season to taste with S&P. If too thick you can thin out with a bit of water. Italian Sausage Cut sausage in large 1 1/2 inch (3.8 cm) chunks. Pan fry till starting to brown on the edges (about 3 - 4 min), tossing to allow them to cook all over. Add a dash of sherry vinegar to the pan Plate up with a dollop of arugula pesto. Add little cocktail sticks or toothpicks to each piece for easy eating.

1 package (16 ounces) bow tie pasta
1 pound bulk Italian sausage
1/2 cup chopped onion
1/2 teaspoon crushed red pepper flakes
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) Italian stewed tomatoes, drained and chopped
1-1/2 cups heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon dried basil
Shredded Parmesan cheese

  • Cook pasta according to package directions. Drain., Meanwhile, in a 6-qt. stockpot, cook and crumble sausage with onion and pepper flakes over medium heat until no longer pink, 5-7 minutes. 2 (10 ounce) cans refrigerated buttermilk biscuit dough
5 teaspoons pesto
10 links breakfast sausage
1 tablespoon grated Parmesan cheese, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Press each biscuit into a 4-inch circle on a lightly floured surface. Spread 1/2 teaspoon pesto over top of each biscuit. Place 1 sausage link on the edge of each biscuit and roll dough around sausage. Cut each roll into 4 pieces and place on a baking sheet; sprinkle with Parmesan cheese.
