ITALIAN SAUSAGE AND CABBAGE SOUP WITH WHITE BEANS
This recipe is my version of an Italian Salsiccia Minestra, or sausage soup. You can add or subtract ingredients according to what you have on hand. If you use linguica, kidney beans, and kale, it becomes Portugeuse Kale Soup. Buon mangiare!

Steps:
- In large soup pot, cook italian sausage in olive oil on medium heat until cooked through. Remove sausage, cut it into cubes, & set aside.
- Saute onion and celery in same pot 5 minutes.
- Add garlic, saute 3 minutes.
- Add chicken broth, water, carrots, and potatoes. Bring to a boil.
- Reduce heat to medium, cook until potatoes are almost tender, about 10 minutes.
- Add cabbage, italian sausage, and beans. Cook until cabbage is tender.
- Add salt and pepper to taste.
- Serve hot with italian bread and a good cheese.

- Preheat oven to 350°F.
- Place sausages in the bottom of a Dutch oven or casserole with a cover.
- Place cabbage over sausage and add water.
- Dot cabbage with butter, cover and bake for 1 hour and 15 minutes.

Steps:
- Heat oil and garlic in a large sauté pan over medium heat.
- Add crumbled sausage, and sauté until meat is cooked.
- Add cooked cabbage pieces and salt and pepper to taste, and sauté for an additional 2 minutes.
- Stir in Marinara Sauce, and cook for 5 minutes, until flavors have blended.
- Meanwhile, cook penne in a large, deep pot in rapidly boiling salted water until al dente.
- Drain pasta, and return it to the pot with 1/2 cup of sauce.
- Stir for one minute over high heat, then place sauced pasta on serving platter and pour remaining sauce on top.
- Sprinkle top with Parmesan cheese and serve.

ITALIAN PASTA WITH CABBAGE AND SAUSAGE

- Sauté with a little olive oil, the cabbage, bell pepper, onion and garlic in large dutch oven or wok over medium-high heat. Stir occasionally and when the cabbage mixture has cooked down to about half the volume, add tomatoes and chicken broth along with the sausage. Once it comes to a boil, add pasta and cook until pasta is al dente. If the mixture becomes dry to where it starts burning and the pasta isn't absorbing anymore water but is dry, turn down the heat a notch to medium add 2 cups water or more over time and cook until the pasta is al dente. You want the liquid to be absorbed by the pasta but not runny. (The amount of liquid is dependent on the amount of moisture in the cabbage) Serve with grated Parmesan Romano cheese.

- 1. First I brown my italian sausage with my sliced onions in tablespoon of butter, just till onions softened and sausage has nice brown sear. Right in same pan add Juice, vinegar, salt and pepper and springs of thyme.Stir set off burner till ready for crockpot.
- 2. In crockpot set at low, place sliced cabbage then sliced apples. Place sausage on top, pour all juices over. Cover and slow cook 6-8 hours. When done remove springs of thyme. Great to serve at parties with hoagie rolls. Or add Your potatoes for that italian St.Patties Day celebration!

Steps:
- Cook the tortellini as per package directions, drain reserving 3 tablespoons cooking liquid.
- Place the sausages in boiling water and cook until firm, remove and cool until cool enough to handle. Thinly slice the sausage.
- Over medium heat, melt the butter and add olive oil, cook sausages through until nicely browned; stir in onions, minced garlic and cabbage.
- Saute for 5 minutes or until cabbage is crisp tender; stir in drained cooked tortellini, fennel seeds, red pepper flakes and pimentos. Season with salt and lots of freshly ground black pepper to taste.
- Lower the heat to low, add the crème fraiche and reserved pasta cooking liquid; cook just until warmed through.
- Serve with freshly grated Parmesan cheese and crusty Italian bread.

ITALIAN SAUSAGE AND CABBAGE STEW
Steps:
- 1 Heat the olive oil on medium-high heat in a large (8-quart), thick-bottomed pot. Add the sausage, breaking it up into pieces as you put it into the pot in a single layer. When the sausage has nicely browned, remove it with a slotted spoon and set aside. 2 Add the minced onion (save the sliced onion for later) and sauté for 3-4 minutes, stirring often. Once the onions give up some of their water, use a wooden spoon to scrape up any browned bits from the bottom of the pot. Add the minced garlic and cook for another 1-2 minutes. 3 Add the white wine and the beans and bring to a rolling boil. Reduce to a simmer. Cover and cook for 10 minutes. If you want, for a thicker base, use an immersion blender to blend some (or all) of the beans and onions. 4 Add the water, stock, salt, cabbage, sliced onion half, bay leaves and browned sausage. Bring to a boil, reduce heat to a simmer. Cover and simmer for 10 minutes, then uncover and continue cooking until the cabbage is tender, about another 10-20 minutes. To serve, sprinkle on chopped parsley and grated cheese.
