1/2 small red onion, very thinly sliced into circles
1/3 cup grated Parmesan

Steps:

  • For the dressing: In a blender, add the olive oil, mayonnaise, Parmesan, parsley, sugar, vinegar, black pepper, salt, red pepper flakes, garlic and lemon juice and blend until pureed.

1 small cucumber, peeled and sliced
1 small red onion, thinly sliced
1 clove garlic, very finely minced

1/2 cup extra virgin olive oil, plus more as needed
3 tablespoons balsamic vinegar or 3 tablespoons red wine vinegar, plus more as needed

Steps:

1/2 cup plus 2 tablespoons extra-virgin olive oil
1 cup cubed rotisserie chicken
1 cup diced English cucumber (about 1/3 cucumber)
1 cup halved cherry tomatoes
1/2 cup chopped pitted Nicoise olives
1/2 cup chopped roasted red peppers (about 1 whole)
1/2 cup 1/4-inch diced hard salami (about 4 ounces)
1/4 cup diced red onion (about 1/2 small)
1/4 cup chopped fresh flat-leaf parsley
4 ounces ricotta salata, grated, or crumbled feta cheese
1/3 cup red wine vinegar

Steps:

1 small red onion, sliced very thin
Cold water

1 large garlic clove, minced or crushed in a mortar and pestle

8 ounces rotelle or spiral pasta, cooked and drained
2-1/2 cups assorted cut-up fresh vegetables (broccoli, carrots, tomatoes, bell peppers, cauliflower, onions and mushrooms)
1/2 cup cubed cheddar or mozzarella cheese
1/3 cup sliced pitted ripe olives (optional)
1 cup Wish-Bone® Italian Dressing

Steps:

  • 1. Combine all ingredients except Wish-Bone® Italian Dressing in large bowl. Add Dressing; toss well. Serve chilled or at room temperature.

Kosher salt
1 pound penne
1/3 cup mayonnaise
3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
1 16-ounce jar giardiniera, drained and chopped
5 ounces provolone cheese, diced (1 cup)
5 ounces salami, diced (1 cup)
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Drain and let cool to room temperature.
  • Meanwhile, mix the mayonnaise, olive oil and red wine vinegar in a large bowl. Add the pasta and toss well. Add the giardiniera, provolone, salami, parsley and basil; toss well and season with salt and pepper.
