ITALIAN CHICKEN AND PEPPERS
A welcome change from traditional spaghetti and meatballs! I got this recipe from Campbell's website, and made some of my own changes, which are listed below. This is a big hit with my family and have been asked to make it often. I have occasionally substituted the chicken with sausage and it came out just as great!

Steps:
- Sauté peppers, onions, mushrooms and garlic in a large skillet until the peppers are slightly tender.
- Remove vegetables from skillet and set aside.
- Add vegetable oil to warm skillet. Place cubed chicken into the skillet and cook on medium heat until browned; approximately 15 minutes.
- Return sauteed vegetables to skillet with chicken.
- Add sauce to the skillet and heat through. Add salt, pepper and additional spices if needed**.
- Serve over cooked pasta.

CHICKEN SCARPARIELLO - COUNTRY STYLE
"Fuggeddaboutit!" A favorite dish of the wiseguys. Make this for dinner and, ba-da-bing, you're ready for an evening with the Sopranos. This is one of my all-time favorite Italian-American chicken recipes. Be sure to serve some crusty bread to sop up the sauce.

Steps:
- In a skillet, heat oil. Add chicken and sausage in batches; brown on all sides. removing pieces to a plate as they brown.
- Discard all but 2 tablespoons drippings from pan. To hot drippings, add the mushrooms, red bell peppers, sliced cherry peppers, onion, potatoes, and garlic; saute until tender.
- Return chicken and sausage to skillet. Add salt, black pepper, the rosemary , the broth, the wine, and lemon juice. Bring to a boil; lower heat and simmer, covered, until chicken is tender, about 25 minutes.
- Remove chicken and sausage from skillet; arrange on warm serving platter.
- Skim fat from mixture in skillet.
- In a small glass measure, mix flour with 1/4 cup water until blended. Stir into liquid in skillet. bring to boiling, stirring constantly; boil for 1 minute, stirring, until mixture thickens.
- Spoon sauce over chicken and sausage.

NONA'S ITALIAN COUNTRY CHICKEN
I found this recipe in the American Profile and the submitter was Kathryn Novak of Northville, Mich. I made this for dinner last night and it was delicious! The prep time is the soaking of the chicken in the eggs.

Steps:
- Soak chicken breast in beaten eggs overnight.
- Preheat oven to 350°F.
- Coat chicken pieces with breadcrumbs. In a large skillet, melt 1/2 cup butter over medium heat until golden brown. Add half the chicken and cook about 2 minutes per side. Repeat until all chicken is browned, adding 1 to 2 tablespoons additional butter, if needed. Transfer chicken to a 13-by-9 inch baking pan.
- add olive oil and Italian seasoning to pan dripping and heat over medium heat. Add peppers and cook 12 minutes or until richly brown and caramelized, stirring frequently. Sprinkle peppers and mushrooms evenly over chicken. Deglaze the pan with some of the chicken broth and pour over all. Add remaining chicken broth. Top with cheese. Bake, uncovered, 30 minutes. Sprinkle onions evenly over all and bake 15 minutes or until golden.
