CHEF JOHN'S ITALIAN SAUSAGE CHILI
I've added pork to ground beef in chili before, but I've never tried it with all Italian sausage, and I loved the results. We Italian'd this up even more with cannellini beans and a touch of basil, but other than that, it's a fairly classic chili. Garnish with sour cream, avocado, red onion, and basil.

Steps:
- Heat oil in a large pot over medium-high heat. Cook and stir hot Italian sausage, mild Italian sausage, onion, and a pinch of salt together in the pot, breaking up sausage with a wooden spoon. Cook until sausage is browned and crumbly, and most of the liquid is evaporated, about 10 minutes.
- Stir ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture; saute until fragrant, about 2 minutes.
- Pour water and tomato puree into sausage mixture, bring to a simmer, reduce heat to medium-low, and cook on a steady simmer until sausage is tender, about 45 minutes. Add water as necessary and skim any fat that floats to the top.
- Stir cannellini beans, red bell pepper, and green bell pepper into sausage mixture. Simmer until vegetables are tender, about 30 minutes. Season with salt to taste.

- Roast the bell pepper over a gas flame, turning with tongs, or broil until the skin is blackened. Transfer to a bowl, cover and let cool. Peel, seed and chop the pepper. Heat the EVOO in a Dutch oven or other heavy pot over medium-high heat. Add the sausage and pancetta and cook until well browned. Add the ground pork, thyme, fennel seeds, garlic, chile peppers, onions, oregano and roasted red peppers and cook until soft, about 5 minutes. Stir in the tomato paste and cook for 1 minute. Deglaze with the wine, stirring and scraping up any browned bits from the bottom of the pot with a wooden spoon. Add 2 to 3 cups chicken stock and simmer for a few minutes to allow the flavors to combine. Bring 2 cups chicken stock and the milk to a low boil in a saucepan. Whisk in the polenta and cook, whisking, until thick but pourable, 2 to 3 minutes. Remove from the heat. Add the butter and then the cheese, stirring until melted. Season with salt and pepper. Ladle the polenta into shallow bowls and hollow out the center. Fill with the chili and top with more cheese. Garnish with parsley. Cook's Note: The chili can be covered and refrigerated for a make-ahead meal. Reheat over medium heat, and prepare the polenta before serving.
THREE-ALARM ITALIAN STYLE CHILI MAC

- Cook pasta in salted water until al dente. Preheat broiler to high.
- Meanwhile, heat a deep skillet over medium high heat with extra-virgin olive oil. When oil ripples or smokes, crumble beef and brown, 5 to 6 minutes. This tastes even better the next day and freezes well also --- serve this on cooked spaghetti with crusty bread on the side, all ground beef or Italian sausage meat may be used if desired --- plan ahead this sauce needs some time to cook, the longer you cook it the thicker and richer it will be, you may also make this in a crockpot --- the recipe may be doubled, adjust the chili powder and all ingredient amounts to taste, try not to omit the Italian pepperoni, it really adds extra flavor to this dish! :)

- Heat oil in a large pot over medium heat.
- Add in ground beef, Italian sausage meat, onion, garlic, chili flakes and bell pepper; cook until the meat is browned breaking up meat with a spoon while cooking; drain fat.

ITALIAN STYLE CHILI (VEGETARIAN)
This is a recipe from my best friends Italian mother. I have made it with her before so I know what's in it and approximate quantities. It is different than my mothers chili but I have grown to love it. The whole garlic cloves may seem strange at first but it really makes it special and has become my favorite part of the meal. LEAVE THEM WHOLE! There is a variation to this recipe : use 2 cans of beans OR 1 can of beans and 2 crumbled soy burgers. (I prefer the soy burger version). I added the corn option because I LOVE this chili with corn, but it was not part of the recipe (recommended though!). Served over brown (or white) rice this is a simple, healthy dinner you can serve to anyone. Freezes great and keeps awhile that way.

- Cook the sausage in a large nonstick skillet over medium-high heat until brown, stirring to crumble. Drain most of the fat, leaving about a tablespoon of fat in the skillet with the sausage. Add diced onion and the next 6 ingredients (onion through salt), and cook for 8 minutes or until vegetables are tender. Add garlic and cook until fragrant, about 1 minute. Place meat mixture in an electric slow cooker; stir in beans, tomatoes, tomato paste, and red wine. Cover with lid, and cook on low heat setting for 4 hours. After 4 hours, add pasta to slow cooker and stir until all pasta is submerged in liquid; turn heat to high and cook for 15 - 20 minutes or until pasta is al dente. Stir in 3 tablespoons chopped parsley. Scoop into bowls and top with additional fresh parsley if desired. NOTE: The chili can be made on the stovetop if you don't have a slow cooker. Instead of transferring mixture to slow cooker, leave on stovetop and bring to a boil. Reduce heat; simmer, partially covered, 1½ hours. INSTANT POT ITALIAN CHILI

- For the chili: Set the Instant Pot® to saute (see Cook's Note) over high heat. Once hot, add the olive oil and sausage and cook until deep golden brown, about 8 minutes. Transfer the cooked sausage to a large bowl and set aside.
- Add the ground sirloin, season with salt and pepper and cook until browned, about 5 minutes. Add the cooked sausage, onion, garlic and red, yellow and green bell peppers. Season with salt and pepper and cook until heated through, about 3 minutes.
- Stir in the chili powder, cumin, paprika and brown sugar and cook until the spices become fragrant, about 2 minutes. Stir in the crushed tomatoes, bone broth, wine, tomato paste and oregano sprigs. Season with salt and pepper.
- Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on manual high setting for 10 minutes.
- After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Be careful of any remaining steam and unlock and remove the lid.
- If there is still too much liquid, turn the Instant Pot® to high saute and cook another 5 minutes. Remove the oregano stems before serving.
- Meanwhile, prepare the pickled onions and jalapenos.
- For the pickled onions and jalapenos: Shave the onions and slice the jalapenos on a mandoline. Combine the vinegar, 1 cup water, coriander, black peppercorns, brown sugar and 1 tablespoon salt to a boil in a medium saucepan over high heat and cook until just boiling. Boil until the sugar and salt are dissolved, for 3 minutes, then remove the saucepan from the heat. Put the jalapenos and onions in two separate medium bowls. Strain and carefully pour half of the pickling liquid over the jalapenos. Pour the remaining half of the pickling liquid over the red onions. Let sit until ready to serve.
- For the lime creme fraiche: Whisk together the creme fraiche, lime zest and lime juice in a small bowl. Season with salt and set aside until ready to serve.
- To serve, ladle the chili into bowls and top with the grated Cheddar, scallions, Lime Creme fraiche, Pickled Onions and Jalapenos and a squeeze of lime.
