1 1/2 cups cut-up cooked chicken
1 1/4 cups shredded mozzarella cheese (5 ounces)
1/2 teaspoon dried oregano leaves
1/2 teaspoon basil leaves
1/2 teaspoon garlic powder
1 (6 ounce) can tomato paste
1/2 cup original Bisquick baking mix
1 cup milk
1/4 teaspoon pepper
2 eggs

Steps:

  • Preheat oven to 400 degrees.
  • Grease 9-inch pie plate.
  • Sprinkle Parmesan Cheese in pie plate.
  • Mix chicken, 1/2 cup of mozzarella cheese, the oregano, basil, garlic powder and tomato paste; Spoon over Parmesan cheese.
  • Stir Bisquick mix, milk, pepper and eggs until blended, Pour over chicken mixture.
  • Bake 35 minutes.
  • Sprinkle with remaining mozzarella cheese.
  • Bake 5 to 8 minutes or longer or until knife inserted in center comes out clean.
  • Cool 5 minutes.
  • To Freeze: Freeze serving size in a rigid container. Label and Freeze.
  • To Reheat: Remove it from container, put it in a proper fitting dish, leave it uncovered, Bake at 425 degrees for 35 minutes(The time would have to be adjusted for how much you are reheating to make sure it is heated through).

2/3 cup yellow cornmeal
3/4 cup milk
1/4 cup chopped fresh basil

Steps:

  • In deep 12-inch skillet, heat oil over medium-high heat. Cook onion and garlic in oil 2 to 3 minutes, stirring occasionally, until onion is soft. Stir in zucchini, chicken, tomato sauce, beans, tomatoes, salt and pepper. Heat to boiling; reduce heat to medium-low. Cover; simmer 5 minutes.

1 1/4 cups flour
3/4 stick butter
White Pepper, Sage, salt, pepper to taste
Very Cold Water
For Filling:
1 Large Chicken Breast
1 heaping tbs flour (season with salt and pepper to taste)
1 tbs Olive Oil + some for coating
2 oz Pancetta
1 med Onion (minced)
2 large Garlic Cloves (minced)
1/4 cup chopped Scallions
1/3 cup chopped mushrooms
1 small Green Pepper (chopped)
1 1/2 cups water
1/2 tsp freshly ground White Pepper
1/4 tsp Black Pepper
1/4 tsp Onion Powder
1/4 tsp Garlic Powder
1/2 tsp Oregano
a dash of Sage
2 Bay Leaves (fresh or dried, break in half)
1 heaping tsp flour
2 med Carrots
2 med Celery stalks
4-8 Baby Red Potatoes (depending on size)
1 Plum Tomato
1 1/4 cup hearty Red Wine (like a Shiraz or Cabernet)

Steps:

  • For Crust, sift Flour with Spices and cut together with butter. When mixture resembled fine dust, add just enough water to make the dough stick together. Form into a ball, cover, and set in refrigerator. Cut Chicken into bite size cubes and toss with Flour. Heat Olive Oil in large skillet and brown the floured chicken. Add sliced Pancetta and heat until slightly crispy. Remove from heat and set aside. Lightly coat large saucepan with olive oil and add the Onion, Garlic, Scallions, Mushrooms, and Green Pepper. When sizzling, add water. Add all spices and herbs, stir together. Whisk in flour for thickening. Wait until boil and simmer until slightly thickened. Chop Carrots and Celery Crosswise and halve Baby Potatoes. Add to saucepan. Chop Plum Tomato and add. Stir in Red Wine, and when combined, add Chicken and Pancetta back into saucepan. Simmer until reduced to thick stew consistency. This may take as long as 45 minutes so if you like firmer veggies or don't have the time, sift another tsp of flour to mixture and stir. When thickened, remove from heat and pour into medium casserole dish. Roll out crust dough to cover your casserole dish and place over the top of filling. Tuck down the sides so they won't leak and cut slits in the top. Bake at 375°F for 1 hour or until juice bubbles through slits in top and the crust is browned.

3 tbsp olive oil
8 large skinless chicken thigh fillets, quartered
130g packet cubed pancetta
large butternut squash (about 900g/2lb), peeled, seeded and cut into 2.5cm/1in cubes
large onion , thinly sliced
garlic clove , thinly sliced
1 tsp dried marjoram
200ml Italian red wine (see Goes well with...)
level tsp plain flour
2 x cans Italian plum tomato
2 tbsp redcurrant or cranberry jelly
loaf garlic and herb or plain ciabatta
3 tbsp freshly grated parmesan

Steps:

  • Heat 2 tbsp of the oil in a large flameproof casserole and cook the chicken over a medium to high heat until lightly browned. Lift out on to a plate with a slotted spoon. Tip the pancetta, squash and onion into the pan and cook over a high heat for about 8 minutes, stirring occasionally until beginning to brown. Return the chicken to the pan, add the garlic and marjoram and cook for 1 minute. Keep back 2 tbsp of the wine then pour the rest into the pan and let it bubble for 5 minutes.
  • Blend the flour with the reserved wine until smooth. Stir this into the pan with the tomatoes and their juice, the jelly and some salt and pepper. Lower the heat, half-cover with a lid and simmer gently for 30-40 minutes until the squash is just tender. (To prepare ahead, cool then chill at this point up to a day before. You can also freeze it for up to a month. To serve, heat through in the casserole, then continue with step 3.)
  • Preheat the oven to 220C/gas 7/fan 200C. Cut the ciabatta into very thin slices and arrange on top of the casserole, so they casually overlap. Drizzle the last tablespoon of olive oil over the ciabatta and sprinkle with the parmesan and a good grinding of black pepper. Bake uncovered for 15 minutes or until golden brown. Serve straight from the casserole.

1 medium onion, chopped (1/2 cup)
1 clove garlic, finely chopped
3 small zucchini, cut into 1/2-inch pieces (about 2 cups)
2 cups shredded deli rotisserie chicken (from 2-lb chicken)
1 can (15 oz) tomato sauce
1 can (15 oz) Progresso® cannellini beans, drained, rinsed
1 can (14.5 oz) diced tomatoes with Italian-style herbs, undrained
1/4 teaspoon salt
1/4 teaspoon cracked black pepper
1 cup Original Bisquick® mix
2/3 cup yellow cornmeal
3/4 cup milk
1/4 cup chopped fresh basil

Steps:

  • In deep 12-inch skillet, heat oil over medium-high heat. Cook onion and garlic in oil 2 to 3 minutes, stirring occasionally, until onion is soft. Stir in zucchini, chicken, tomato sauce, beans, tomatoes, salt and pepper. Heat to boiling; reduce heat to medium-low. Cover; simmer 5 minutes.
  • Meanwhile, in medium bowl, mix Bisquick mix, cornmeal, milk and basil just until moistened. Drop dough by 18 rounded tablespoonfuls onto hot chicken mixture. Cover; cook 8 minutes.

1 1/2 cups cut-up cooked chicken
1 1/4 cups shredded mozzarella cheese (5 ounces)
1/3 cup grated Parmesan cheese
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/2 teaspoon garlic powder
1 can (8 ounces) tomato sauce
1/2 cup Original Bisquick® mix
1 cup milk
1/4 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400º. Grease bottom and side of pie plate, 9x1 1/4 inches, with shortening. Mix chicken, 1/2 cup of the mozzarella cheese, the Parmesan cheese, oregano, basil, garlic powder and 1/2 cup of the tomato sauce; spoon into pie late.
  • Stir Bisquick, milk, pepper and eggs until blended. Pour over chicken mixture.
  • Bake uncovered 35 minutes. Sprinkle with remaining 3/4 cup mozzarella cheese. Bake 5 to 8 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with remaining tomato sauce, heated if desired.

This is a very tasty pot pie made with a rich white sauce that includes chicken broth and Italian spices. There are none of the peas that are often in pot pies, but lots of chicken and potatoes.

1 whole chicken, cooked in boiling salted water and deboned
8 tablespoons butter
1/2 cup flour
2 (14 ounce) cans chicken broth
1 cup half-and-half cream
1/2 teaspoon italian seasoning
1 garlic clove, diced
1/2 cup white onion, diced
2 celery ribs, diced
1/2 cup carrot, diced
2 cups white potatoes, diced
salt, to taste
pepper, to taste
puff pastry sheet, to top casserole dish
1 egg, lightly beaten
1 teaspoon water

Steps:

  • In a large saucepan over medium heat, melt the butter.
  • Add the flour and cook, stirring constantly for 1-2 minutes.
  • Pour in the chicken broth slowly, stirring until smooth and simmering.
  • Pour in the half and half slowly, stirring until smooth and simmering.
  • Add the Italian seasoning, garlic, onions, celery, and carrots, and simmer for about 5 minutes.
  • Add the potatoes, chicken, salt and pepper and simmer another 5-10 minutes until the potatoes are tender.
  • Pour into a greased medium size casserole dish.
  • Cover the dish with the puff pastry, lightly sealing the edges, and brush the top with a mixture of the egg and teaspoon of water.
  • Bake in preheated oven at 400 degrees about 20 minutes, until the pastry is golden and puffy.
  • Let sit for 5-10 minutes before serving.
