1 lb ground beef
1 lb sausage
2 c cheese (your choice of cheese-shredded, or diced)
1/2 tsp oregano
2 Tbsp ketchup
1/2 tsp worcestershire sauce
1 loaf french or italian bread, sliced horizontally

Steps:

  • 1. Brown meat, then add the other ingredients.
  • 2. Spoon filling into loaf that has been sliced; if freezing, wrap in foil and put in plastic bag of later use.
  • 3. Bake at 350 degrees for 8 to 10 minutes. If frozen, bake for about 20 min or until bread is crispy and filling is heated through.
  • 4. **** This can be altered to use with pepperoni, veggies, and any type of cheese including velveta. My Dad hated velveta so my mom never made it that way. If adding other items, reduce meat to 1/2 lb. of each. **** In my picture, I sliced bread on top because of how the loaf was baked. It was presplit on top and would not have worked with split on side.

Yield 2 loaves (12 pieces each).

1 package (1/4 ounce) active dry yeast
2 cups warm water (110° to 115°)
1 teaspoon sugar
2 teaspoons salt
5-1/2 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide in half. Shape each portion into a loaf. Place each loaf seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. , Meanwhile, preheat oven to 400°. With a sharp knife, make 4 shallow slashes across top of each loaf. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

Pizza sounded good for dinner, but I wanted to try using a loaf of bread instead of a canned fresh pizza dough. The bakery in the SweetBay grocery store I frequent had their fresh baked loaves of mini Italian bread on sale for 99 cents, so I brought two home. You can use any of your favorite pizza toppings, or sauce.

2 mini-loaves italian bread, sliced in half and toasted
1/2-1/3 c alfredo sauce, divided
2 50 slice pepperoni, i had some left over after covering the 4 pieces of bread
1 8 oz package diced ham
1 3.8 oz can sliced black olives, drained
1 4 oz can mushroom stems & pieces, drained
2 2 c packages mixed pizza cheese
THE TRICK TO MAKING THIS BREAD BASED PIZZA IS TO NOT MAKE THE BREAD ITSELF SOGGY.

Steps:

  • 1. Slice the loaves of Italian bread, in half, the long way trying to cut the loaves equally in half like you would to make garlic bread.
  • 2. Set the four pieces on bread cut side up on a 16" pizza pan or large cookie sheet. Move the oven rack up the 2nd from the top level in an electric oven. Slide the pizza pan in, and turn on the broiler element on the HI setting. It doesn't take long to toast the bread, mine was toasted with edges turning golden and middles dry to touch in about 4 minutes. Remove from oven.
  • 3. Return the raised oven rack back to it's lower location, mine was back to the 4th level from the top. Set the oven to pre-heat at 375.
  • 4. I spread a thin layer of Alfredo sauce on all 4 pieces of bread. Set aside on the pizza pan after placing a layer of pepperoni on each piece of bread.
  • 5. In a medium mixing bowl, combine the rest of the topping ingredients, and add just enough Alfredo sauce to coat the mixture, then mix in about 1 cup of the pizza cheese. Divide this mixture evenly over the 4 pieces of bread as you pat it flat gently to evenly cover the bread.
  • 6. Roughly divide the remaining shredded Pizza cheese over all four pizzas.
  • 7. Return the pan to the pre-heated oven, and bake 10 minutes, or until the cheese is melted without burning the edges of the bread.

One 2-foot-long French bread, cut in half lengthwise
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 cups marinara sauce
8 ounces sopressata, thinly sliced
8 ounces hard salami, thinly sliced
1 1/2 cups grated Parmesan
Two 8-ounce balls smoked mozzarella, sliced
2 cups pitted Kalamata olives, chopped
8 pickled cherry peppers, drained and sliced
4 ounces ricotta salata
1 1/2 cups grated Pecorino-Romano
2 teaspoons red chile flakes
2 cups fresh basil leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the bread halves on a sheet tray. Drizzle the olive oil on each half of the bread, then spread on the marinara sauce evenly. Layer on the sopressata and hard salami by folding and overlapping the slices. Top with the Parmesan and smoked mozzarella.
  • Bake until the cheese is bubbling and the meat is very hot, 8 to 10 minutes. (Finish under the broiler if desired.)
  • Immediately distribute the olives and peppers evenly. Grate the ricotta salata over the top, then sprinkle on the Pecorino-Romano.
  • Sprinkle the chile flakes on top, and top with the fresh basil and a drizzle of olive oil. Cut each half into 8 slices. Serve immediately.
