ITALIAN PASTA AND BEEF BAKE
Have dinner on the table in less than an hour. With mostaccioli, mushrooms and mozzarella, it's marvelous!

Steps:
- Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray. Cook mostaccioli as directed on package. Drain.
- Meanwhile, in 12-inch nonstick skillet, brown ground beef over medium-high heat until thoroughly cooked, stirring frequently. Drain. Stir in tomato sauce, tomatoes and mushrooms. Bring to a boil. Remove from heat; pour into sprayed baking dish.
- Add cooked mostaccioli; stir gently to mix. Spray sheet of foil with cooking spray; place sprayed side down on baking dish and seal tightly.
- Bake at 350°F. for 15 minutes. Uncover; sprinkle with cheese. Bake uncovered an additional 5 to 10 minutes or until casserole is bubbly and cheese is melted.

This recipe is out of a Super Food Ideas magazine, which they sell at the supermarket here in Oz. I have modified the recipe to suit my family and it is quick and easy but tastes great.

Steps:
- Cook macaroni according to directions. Preheat oven to 180 degrees Celsius
- Spray a frypan lightly with cooking oil spray and cook the onion and garlic until soft. Add mince beef and cook until well browned.
- Add the can of tomatoes, tomato paste, brown sugar, paprika, herbs, salt and pepper to taste.
- Add cooked macaroni to sauce and stir through. You can adjust the amount of pasta according to how you like it.
- Pour into greased casserole dish and top with grated cheese and bake in the oven for about 15 mins until the cheese is melted.

Another family favorite. You can serve with some crusty bread and a tossed salad, as I do..or serve with mashed potatoes or as is..mighty tasty any way you choose. Enjoy!

- 1. Heat oil in a dutch oven under med heat, until hot. Season meat with salt & pepper. Brown half of the meat, cook until browned. Remove and repeat with remaining meat.
- 2. Add all of the meat back to pan and stir in the garlic, onion and seasoning. Cook for a few minutes, stirring.
- 3. Add beef broth, wine and tomatoes, bring to a boil, then cover and simmer for 1 hour and 30 minutes, or until meat is tender.
- 4. Now, add the mushrooms if using and the pasta...stir and cover pot. Cook for 20 - 25 min, remove cover, if pasta is not tender, cook another 5 min or until it is tender.
- 5. Place into a large serving bowl, sprinkle with Parmesan cheese and parsley.
- 6. Enjoy!
ITALIAN BEEF AND PASTA SOUP
Steps:
- Cut up roast into about 12 pieces. Heat olive oil in a large sauce pan or dutch oven over medium high heat then brown meat about 10 minutes. Add 12 cups of water and all other ingredients except the noodles and cheese. Reduce heat to low, simmer covered for 4 hours - stirring once in a while breaking up the onion and tomatoes as they soften. Strain the broth into a large bowl separating the meat into a separate container. Discard vegetables. If making in advance of serving, cool broth and then refrigerate or freeze. Refrigerate or freeze meat separately until preparing to serve. When preparing to serve: Heat 2 cups of reserved broth per desired serving to a light boil in a sauce pan. Add 1/4 cup acini di pepe per serving and simmer until tender, about 10 minutes. Add appropriate portion of the reserved meat 2 minutes before pasta is done. Serve with generous amount of freshly grated romano cheese on top.
BRAISED BEEF AND PASTA WITH ITALIAN MUSHROOM SAUCE
I found this recipe on my butcher's website and decided to give it a try. I used shoulder steaks and let me tell you, it was fabulous! The steak is so tender, and the sauce (or gravy as it's called in South Philly) is delicious.

- 1. 1. Sprinkle beef steaks with salt and pepper; press 1/4 cup Parmesan cheese onto steaks. Spray large nonstick skillet with cooking spray. Heat over medium-high heat until hot; brown steaks. Remove.
- 2. 2. Spray skillet with cooking spray again; heat over medium heat until hot. Add mushrooms, onion and garlic; cook and stir 4 to 5 minutes or until tender.
- 3. 3. Add wine; cook and stir 3 minutes. Stir in marinara sauce. Add steaks; bring to a boil. Reduce heat; cover tightly and simmer 1-1/4 to 1-1/2 hours or until beef is fork-tender.
- 4. 4. Carve steaks. Serve beef and 2 cups sauce over pasta. Sprinkle with 1/4 cup cheese. Pass remaining sauce.
ITALIAN BEEF PASTA SKILLET
Steps:
- Melt butter in medium skillet over medium heat. Add onion and garlic and cook until soft, about 4 minutes, stirring frequently. Add ground beef and brown, about 5 minutes. Drain excess grease. Add tomatoes, water, milk, pasta and contents of seasoning packet and bring just to a boil. Reduce heat to low boil. Cook uncovered for 10-12 minutes, stirring frequently, until pasta is tender. Add squash and stir to heat. Remove from heat and let stand 5 minutes for sauce to thicken. Top with Parmesan cheese before serving.
ITALIAN BEEF OVER PASTA
This recipe is similar to a stew only with a tomato base...You can use any veggies you like...I never make it the same way twice...this is especially good the next day, so if you want to prepare a day before serving, would be great...something about chili's, stews and such, always get better with each passing day... - 1. In a bowl, add beef and wine; making sure beef is covered. Place in refrigerator for at least an hour to marinade. Prepare vegetables and get together other ingredients.
- 2. Once meat has marinated, with a slotted spoon, remove meat from wine and drain in a strainer over a bowl so as to catch any wine drippings. Once meat is drained well. In a 3 quart dutch oven, heat a couple tablespoons of oil and brown all sides of meat. Remove meat and add wine, scraping any brown bits from bottom of pot. Now, add the meat, bay leaf beef broth / bouillon mixture, carrots, celery, garlic, garlic powder, tomatoes, tomato soup, Italian seasoning. Bring to a boil, then lower heat to a steady simmer. Place lid on pot and continue simmering until beef and vegetables are tender ( About 1 1/2 hours.)
- 3. Stir in tomato paste, sugar, green beans, and onion. Bring back to a simmer and cook until onion and green beans are tender. (about 30 - 45 minutes.) It should be a thicker sauce by now, if not as thick as you like, add a bit more paste.
- 4. When almost finished, add the beans, Rosemary and Thyme. Taste now, to see if needs salt & pepper or any other seasonings.
- 5. Remove bay leaf and serve over you favorite pasta, rice or egg noodles. Sprinkle with grated Parmesan cheese. A nice crusty bread goes well with this dish, to sop up those tasty juices.
