Use the thick-cut pork chops for this not fast-fry and only dry breadcrumbs for this or they will not hold on to the chops and plan ahead the chops need to sit a room temperature for about 45 minutes before coating --- if desired for a lower fat option you may skip the skillet browning and just bake in the oven

2 eggs, lightly beaten
1/4 cup milk
1 1/2 cups dry breadcrumbs
1/2 cup freshly gated parmesan cheese
1 1/2 teaspoons garlic powder
1/2-1 teaspoon salt (I use seasoned salt)
1/2 teaspoon black pepper (can use more)
1 pinch cayenne pepper (optional)
1 tablespoon dried parsley
1/2 teaspoon dried Italian seasoning (rubbed between fingers to release the flavor)
2 tablespoons oil
1 tablespoon butter
7 thick-cut pork chops
seasoning salt

Steps:

  • Set oven to 350 degrees F.
  • Butter a 13 x 9-inch baking dish or a medium jelly-roll baking sheet (or use a baking dish large enough to hold the chops in).
  • In a bowl whisk together the eggs with milk.
  • In a shallow dish mix together the dry breadcrumbs with Parmesan cheese, garlic powder, salt, black pepper, cayenne, parsley and Italian seasoning.
  • Let the chops sit at room temperature for about 45 minutes.
  • Heat oil and butter in a skillet over medium-high heat.
  • Dip the chops into the egg/milk mixture (allowing any excess to drip off of the chops).
  • Coat in the breadcrumb mixture completely.
  • Brown the chops in the skillet on both sides (about 4-5 minutes per side) sprinkling both sides with seasoned salt when browning (you may omit this step if desired and just bake in the oven).
  • Place in prepared baking dish.
  • Bake the chops for about 25 minutes or until cooked (the cooking time will vary depending on how thick your chops are).

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with aluminum foil.
  • Combine pork chops, Italian dressing, salt, and pepper in a resealable bag. Shake to evenly coat pork chops with the dressing. Spread out in the prepared baking dish.
  • Bake in the preheated oven until pork chops are no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

4 thinly sliced, center-cut boneless pork chops
½ cup milk
1 cup dry bread crumbs
1 teaspoon finely chopped fresh thyme, or to taste
1 teaspoon finely chopped fresh rosemary, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Pour olive oil into a baking dish.
  • Pound pork chops with a meat tenderizer on a firm surface until thin and tender.

6 one inch thick, center cut pork chops
1 c plain bread crumbs
1/4 c Parmesan cheese, fresh grated
1 tsp kosher salt
1 tsp fresh cracked pepper
1 tsp fresh chopped oregano
1 tsp fresh chopped basil
1/4 tsp dried thyme
1 1/2 c all-purpose flour
4 eggs, beaten
2 Tbsp water
PENNE ALFREDO
1 lb penne pasta (or pasta of your choice)
1 c butter
4 clove garlic, minced
4 c whole milk (or plain almond milk)
1/2 c heavy cream (may omit if keeping dairy free)
8 oz fresh grated Parmesan cheese
2 oz fresh grated romano cheese
1 tsp kosher salt
1 tsp cracked pepper
2 Tbsp fresh minced parsley

Steps:

  • 1. Preheat oven to 350 degrees F. You will need 3 separate bowls for dredging. In first bowl mix together flour, salt, & cracked pepper. In second bowl, mix together eggs and water. In third bowl, mix together bread crumbs, basil, parsley, oregano, thyme, & parmesan cheese.
  • 2. Heat oil in large saute pan over medium heat. Dredge pork chops first in flour mixture, then egg mixture, then bread crumb mixture. Make sure they are completely and evenly coated. Place pork chops in skillet and fry for 3-5 minutes on each side until golden brown. Remove and place in large casserole dish. Place in oven and bake for 30 minutes or until pork chops are cooked through. Baking times may vary depending on thickness of chops.
  • 3. To prepare penne alfredo, prepare pasta according to package directions, al dente.
  • 4. In a dutch oven, melt butter over low-medium heat, add minced garlic, cook for 2-3 minutes, stirring constantly being careful not to burn garlic. Slowly add flour & wisk till slightly thickened, on medium heat. Add cream and milk slowly, continue to stir occasionally, be careful not to boil mixture.
  • 5. When milk mixture is hot, but NOT boiling, add Parmesan & romano cheeses, salt, pepper, & parsley. Mix well. Continue to cook for 3-5 minutes until cheese is melted and sauce thickens. Remove from heat.
  • 6. To serve, mix half sauce with hot pasta, serve portioned pasta on plate, top with cooked pork chop, and top with more alfredo sauce. Or serve penne & alfredo as side dish to pork chops. Delicious either way!

4 or more thick cut pork chops
4 or more italian sweet sausaage
2 large cleaned baking potatoes
2 large cleaned sweet potatoes
1 large vidalia onion chopped
1 cup italian seasoned bread crumbs
extra virgin olive oil
1 cup grated pecorino/romano cheese

Steps:

  • 1. I am using 1 thick cut pork chop per person and 2 sausage links per person, so you can portion size this dish according to how many your feeding. Could be 6 or 8, size pan accordingly.
  • 2. POTATOES FIRST: With skins on, clean and boil until fork tender all your potatoes, set aside and cool. When cooled and remove skins and cut into wedges, set aside.
  • 3. PORK CHOPS AND SAUSAGE: Pan should be the size needed to hold all chops,sausage and potato wedges. Put in the bottom of the pan just a sprinkle of olive oil and 3/4 cup of water. Place your pork chops, sausage and potato wedges on top of olive oiland water for all to fit. Sprinkle with just a little grated cheese.
  • 4. TOPPING: Chop vidalia onion, add grated cheese, Italian seasoned bread crumbs and mix together. Sprinkle all of this all over the chops, sausage and potato wedges. Sprinkle with a little more olive oil and BAKE 350 for 1 hour until pork chops are done, check that they are done and sausage is done according to your ovens heat. 1 cup Italian seasoned breadcrumbs
2 tablespoons italian seasoning
1 teaspoon garlic powder
1 teaspoon dried rosemary

Pam cooking spray

  • Dip chops in bread crumbs, then put on baking sheet.
  • Sprinkle the pork chops with a light dusting of the Italian Seasoning on both sides of chops.
  • Sprinkle some garlic powder on both sides of chops. As much or as little as you like.
