MOM'S IRISH-AMERICAN SPAGHETTI SAUCE WITH SAUSAGE AND MEATBALLS
I just got Mom to e-mail me directions for how to make "meat sauce" like she did when we were kids. This was a staple in our house, always made in an enormous pot and simmering most of the day. It seemed like forever before we were allowed to taste test it! The measurements are mine, as Mom only gave vague instructions. There is something really special about this recipe ... everyone asks me what the secret ingredient is, but I think its the process of cooking the sausages in the sauce that makes it sooooo wonderful. This freezes well, so make extra. Can be defrosted slowly in the microwave.

Steps:
- Brown all but 3 of the sausages in olive oil in a big pot on the stove.
- Turn down heat and add onion and garlic. Saute till just translucent.
- Add tomato puree, crushed tomatoes, diced tomatoes, tomato paste and sugar. Season with oregano, basil, parsley, and salt and pepper. Let simmer.
- Meanwhile, into a large bowl, squeeze the remaining 3 sausages out of their casings.
- Add mince, breadcrumbs, herbs and salt and pepper. Mix well with your hands (rubber gloves work great!). Use the palms of your hands to firmly form golf ball-sized meatballs (I got 12 out of this mixture).
- When the sauce is piping hot, and the sausages are cooked through (about 40 minutes), throw meatballs into the sauce and let cook for another 30-40 minutes.
- If you want to let the sauce and sausages simmer longer, feel free. But don't throw in the meatballs till 40 minutes before the end.
- Serve over spaghetti or use to make lasagna.

Steps:
- Brown beef with onion.
- Add Soups and spices.
- Simmer covered for 45 Minutes.
- Cook pasta while the sauce simmers.
- Stir pasta in to sauce and add half the cheese.
- Serve with remaining cheese on top.
IRISH SPAGHETTI
Steps:
- Fry ground beef and sausage combined til cooked. In one pot, add cream of mushroom and tomoato soup. Add cooked meat with seasoning to your desired taste. I personally have put in a dash of soy sauce, tablespoon brown sugar and a dash vanilla extract to give it added flavor. Set oven for 350 In second pot cook spaghetti. I put in the olive oil before I put in the spaghetti so it doesn't stick. Once cooked, place spaghetti in pan with cream cheese, cut cream cheese up on top of hot spaghetti. Spread sauce on top of spaghetti. Let simmer for 2 minutes. Place in oven and let bake for 30-45 minutes or until cooked.

- Brown onions and mushrooms in hot oil, add meat and seasonings, brown lightly. Drain grease, add soups and mix well. Cover and simmer for 30-40 minutes. Boil noodles and serve.

- Brown beef and onion in skillet until meat is brown and onions are translucent.
- Drain. ( I usually saute the onions in a separate skillet to keep more of the flavor).
- Add soups and seasonings. Stir well, Cover and simmer about 45 minutes.
- Cook spaghetti according to directions on box.
- Rinse spaghetti.
- Spoon sauce over spaghetti and enjoy!

- Add soups and spaghetti sauce. Cover and simmer for 45 minutes.
- Cook spaghetti according to package instructions. Combine cooked sauce and cooked spaghetti. Devour!

- In large skillet or heavy saucepan, cook ground beef and onion until meat is brown and onion is transparent. Add seasonings simmer 10 minutes. Add soups cover and simmer 30 minutes. Cook spaghetti according to package instructions. Drain and serve hot with hot sauce spooned over. Sprinkle with Parmesan cheese.
