4 1/2 slices French bread, thick, cut into 1 inch cubes (or substitute Irish soda bread Irish Soda Bread)
2 tablespoons butter
1 teaspoon vanilla extract
1 cup milk, scalded
1 pinch ground nutmeg
4 eggs, beaten
1 tablespoon dark brown sugar
1/2 cup white sugar
1/2 cup raisins
1 cup Baileys Irish Cream

Steps:

  • Preheat oven to 300 degrees.
  • Butter one 2-quart casserole dish.
  • Prepare a water bath for the 2-quart casserole dish by placing a larger dish with water in the oven.
  • Place bread cubes in the 2-quart casserole dish.
  • Beat together the eggs, sugar, and vanilla.
  • Slowly add the scalded milk and Bailey's Irish Cream.
  • Pour over the bread.
  • If desired, sprinkle with brown sugar, nutmeg, and raisins.
  • Place the casserole in the water bath and bake for 50 to 60 minutes or until a knife inserted in the middle comes out clean.
  • Server either hot or chilled.
  • When You take the pudding out of the oven, if the pudding seems to be dry, you can sprinkle some Bailey's over the top to help make it moist.

I created this recipe using a loaf of Dan's Favorite Irish Soda Bread, (Recipe Posted here) so therefore no additional raisins were needed. 1 loaf dan's irish soda bread cubed( or use your favorite type)
1 c unsweetened coconut
3 c 1% milk or can use whole milk
2 c heavy whipping cream
1 c packed brown sugar
1/2 c splenda granular
1/4 c irish whiskey
2 tsp each imitation butter extract & vanilla extract
1 tsp each cinnamon & nutmeg
6 large eggs room temperature
1 stick butter, melted
1 c chopped pecans
2 long hard rolls (cubed) i needed just a bit more bread
IRISH WHISKEY CREAM SAUCE
1 stick butter, softened
1 c sugar
6 Tbsp heavy whipping cream
1/4 c irish whiskey ( i used jameson)
1 c pecans (toasted if desired)
1 tsp butter flavoring

Steps:

  • 1. PREHEAT OVEN TO 350 DEGREES F.Cut both breads into 1 inch cubes.
  • 2. Spray pans with non stick cooking spray and set aside till needed.The pans I used are 9 X9 inch and the loaf pan is 12"X4 1/2 X 31/4 inches. I used the loaf pan at my brother Al's suggestion just to be different from the traditional.
  • 3. Add Bread cubes to large bowl.
  • 4. Toss in unsweetened coconut.
  • 5. Add Melted butter.
  • 6. Add Irish Whiskey.
  • 7. Finally add the chopped nuts, and stir with a large spoon to mix all the ingredients together.
  • 8. In the mean time to a separate bowl add the 6 eggs, brown sugar and splenda,
  • 9. Then measure and add milk to the bowl
  • 10. Then add the heavy whipping cream, cinnamon & nutmeg, whisk all of these ingredients together till blended
  • 11. Stir in the vanilla and butter extract, and whisk again. I make my own Vanilla by the 1/2 gallon size, so that is what you see in the picture.
  • 12. Pour milk mixture over the bread cubes and allow to sit for 30 to 45 minutes to absorb all or most of the liquid.
  • 13. After time has elapsed, pour mixture into prepared pan or pans.
  • 14. Bake in preheated 350 degrees F. oven for 55 minutes, or until tooth pick inserted in center comes out clean.
  • 15. Allow to cool for about 10 minutes then invert onto serving plate. Prepare whiskey sauce and serve over bread pudding. Top with whipped topping if desired.
  • 16. Prepare whiskey sauce by melting the butter in a small sauce pan, then when melted add the sugar, whipping cream and whiskey, then whisk briskly to blend, when it starts to simmer, lower heat and allow to simmer about 4-5 minutes until creamy whisking as you go to prevent sticking.Remove from heat add chopped nuts and butter flavoring.
  • 17. Serve with bread pudding slices.

2 eggs, beaten
3 tablespoons butter, melted
2 tablespoons vanilla extract
2 ½ cups milk
¼ cup white sugar
1 (1 pound) loaf French bread, cut into 1 inch cubes
1 cup chopped pecans
½ cup white sugar
½ cup butter
½ cup heavy cream
¼ cup whiskey

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch pan.
  • In a large bowl, stir together eggs, butter, vanilla and milk. Gradually add 1/4 cup sugar and mix thoroughly until sugar is dissolved.
  • Place bread cubes in bottom of prepared pan. Pour liquid over bread, fully saturating all bread. Sprinkle pecans on top.
  • Bake in preheated oven for 60 minutes, until golden. Meanwhile, combine 1/2 cup white sugar, 1/2 cup butter, cream and whiskey in a small saucepan. Warm over low heat, stirring constantly, until sauce is gently boiling. Pour sauce over baked bread pudding and serve.

1 stick butter, softened to room temperature
1 c sugar,
6 Tbsp heavy whipping cream
1/4 c irish whiskey ( i used jameson)
1 c toasted pecans
1 tsp butter flavoring

Steps:

  • 1. In a small sauce pan add 1 stick of butter,and place over low heat till melted.
  • 2. When butter has melted, add sugar, whipping cream & whiskey. Whisk together to blend. Then bring to a simmer, lower heat and let simmer for about 5 minutes, till mixture becomes slightly thickened.
  • 3. Remove from heat add chopped pecans and butter flavoring. Stir to blend, then serve with Bread pudding.

1/4 cup light butter, melted
1 (10 ounce) French baguettes, cut into 1 thick slices 1/2 cup raisins 1/4 cup irish whiskey 1 3/4 cups 1% low-fat milk 1 cup sugar
1/2 cup raisins
3/4 cup Irish whiskey
1 3/4 cups 1% low-fat milk
1 cup sugar
1 tablespoon vanilla extract
1 (12 ounce) can evaporated skim milk
2 large eggs, lightly beaten
cooking spray
1 tablespoon sugar
1 teaspoon cinnamon
1 1/2 cups sugar
2/3 cup water
1/4 cup light butter
2 ounces neufchatel cheese
1/4 cup Irish whiskey

Steps:

  • Caramel-Whisky Sauce: Combine sugar and water in a small heavy saucepan over medium-high heat; cook until sugar dissolves, stirring constantly.
  • Cook an additional 15 minutes or until golden (do not stir).
  • Remove from heat.
  • Carefully add butter and cream cheese, stirring constantly with a whisk (mixture will be hot and bubble vigorously).
  • Cool slightly, and stir in whiskey and milk.
  • Pudding: Preheat oven to 350F.
  • Brush melted butter on one side of French bread slices, and place bread, buttered sides up, on a baking sheet.
  • Bake bread at 350F for 10 minutes or until lightly toasted.
  • Cut bread into 1/2-inch cubes, and set aside.
  • Combine raisins and whiskey in a small bowl; cover and let stand 10 minutes or until soft (do not drain).
  • Combine 1% milk and next 4 ingredients (1% milk through eggs) in a large bowl; stir well with a whisk.
  • Add bread cubes and raisin mixture, pressing gently to moisten; let stand 15 minutes.
  • Spoon bread mixture into a 13 x 9-inch baking dish coated with cooking spray.
  • Combine 1 tablespoon sugar and cinnamon; sprinkle over pudding.
  • Bake at 350F for 35 minutes or until set.
  • Serve warm with Caramel-Whiskey Sauce.
  • *Substitute1/4 cup apple juice for the Irish whiskey, if desired.

1 lb white bread, cubed
6 ounces melted butter
8 eggs
1 cup sugar, plus
2 tablespoons sugar
1/2 teaspoon salt
1 tablespoon vanilla extract
1 quart milk
1 cup heavy cream
2 1/4 teaspoons cinnamon
1 pinch nutmeg
1 lb butter
2 cups sugar
4 egg yolks
1/3 cup Irish whiskey

Steps:

  • Heat oven to 350.
  • Line a large, deep roasting pan with dish towels.
  • Bring a kettle of water to a boil.
  • Place rack in the center of oven.
  • Drizzle the melted butter over bread cubes and place them in a buttered 9-by-13-inch baking pan.
  • Scald the milk and cream.
  • Mix together the eggs, sugar, salt and vanilla. Stir in the hot milk and cream.
  • Pour this custard over the bread cubes.
  • Sprinkle lightly with cinnamon and nutmeg (go easy on the nutmeg).
  • Place baking pan in roasting pan and set on oven rack.
  • Pour boiling water into roasting pan until it comes at least halfway up the sides of the baking pan.
  • Bake in a water bath until set, about 40 minutes.
  • Serve warm with whisky sauce.
  • You'll only need 1/2 the recipe for the sauce, or make only 1/2 the recipe.
  • Whiskey Sauce:.
  • Melt the butter in a sauce pan over medium heat.
  • When bubbling, whisk in sugar but do not bring to boil.
  • In a separate bowl beat the egg yolks.
  • When the sugar is melted, slowly whisk the yolks into the sugar mixture.
  • Remove from heat.
  • Slowly whisk in the whisky and drizzle over bread pudding.

3/4 cup whiskey
3/4 cup milk
1 cup and 2 tablespoons granulated sugar
1 tablespoon vanilla extract

16 ounces day old French bread, cut into 1/2 inch cubes
2 teaspoons ground cinnamon
1 1/2 cups granulated sugar
1/4 cup butter, cubed
2 ounces cream cheese, cubed
1/4 cup whiskey
1/4 cup milk
coarse salt

Steps:

  • Combine raisins and whiskey in a small bowl. Let sit until raisins are plump, about 30 minutes and up to overnight.
  • Preheat oven to 350°F. Grease 10-inch cast iron skillet with nonstick cooking spray.
  • Combine milk, 1 cup granulated sugar, vanilla extract, evaporated milk, eggs, and salt in a large bowl. Whisk to combine. Add raisin-whiskey mixture and stir.
  • Add bread cubes, pressing down gently to moisten; let stand about 30 minutes, stirring occasionally.
  • Divide mixture among prepared cast iron skillet. Combine remaining 2 tablespoons granulated sugar and cinnamon; sprinkle over pudding. Transfer to oven and bake until custard is set and pudding is golden brown, about 35 minutes.
  • Meanwhile, make caramel sauce: Combine granulated sugar and ⅔ cup water in a small saucepan over medium-high heat.
  • Stir continuously until sugar dissolves.
  • Simmer, not stirring, until sugar mixture is golden, about 18 minutes.
  • Remove from heat and carefully add butter and cream cheese, stirring constantly with a whisk until all clumps are dissolved. Mixture will bubble vigorously. Stir in whiskey, milk, and salt to taste.
  • Serve bread pudding warm with caramel-whiskey sauce.
