2 whole bartlett pears, sliced and marinated in lemon and sugar
3 bunches of arugula, cleaned and dry
Citronette dressing, recipe follows
Caramelized walnuts, recipe follows
2 ounces shaved Parmesan
1 quart extra-virgin olive oil
1 1/2 cups lemon juice
1 cup sugar
4 tablespoons water
2 tablespoons butter
1 cup toasted walnuts
2 ounces honey

Steps:

  • Layer bottom of plate with marinated pears. Lightly coat arugula leaves with citronette dressing in a mixing bowl and lay on top of pears. Sprinkle the caramelized walnuts around the plate and top with shaved Parmesan.
  • Add extra-virgin olive oil to the lemon juice in a steady stream, slowly, while whisking, until the citronette is emulsified.
  • In a saute pan over low flame add sugar and water, mix it well and allow to cook until sugar melts and gets golden brown in color. Mix in the butter and let thicken.. Add walnuts, mix until caramelized. Toss well. Make sure there is an even amount of coating, then drizzle the honey evenly over walnuts. Place on sheet pan and let cool.

ARUGULA PESTO: PESTO DI RUCOLA



Arugula Pesto: Pesto Di Rucola image

5 cloves garlic
2 anchovy fillets
1/4 cup capers
1/2 pound baby arugula
1/2 cup grated Parmigiano-Reggiano
1 1/2 lemons, juiced
1/2 cup extra-virgin olive oil
Pinch salt
Pinch pepper
Bread, crackers, or pasta, for serving

Steps:

  • Put the garlic, anchovies, and capers in the work bowl of a food processor and pulse until finely chopped. Add the arugula, cheese, lemon juice, and olive oil, and pulse until the mixture is completely combined and is the consistency of a classic pesto. Add salt and pepper, to taste. To serve, spread on bread or crackers, or toss with pasta. Transfer any remaining pesto to a freezer-safe airtight container and freeze for up to 1 month.

1 (2-pound) head cauliflower
3 (16-ounces each) jars giardiniera, drained
1 (15-ounce) can baby corn, drained and rinsed
1 (12-ounce) jar roasted red bell peppers, drained
1 (7.5-ounce) jar baby pearl onions, drained
1 (7-ounce) jar green olives, drained
1 (6-ounce) jar pitted kalamata olives, drained
1 (4-ounce) jar capers, drained
2/3 cup extra-virgin olive oil
1/3 cup red wine vinegar
1 teaspoon freshly ground black pepper

Steps:

  • Pour enough water (about 2 cups) into a large wide pot to come 1-inch up the sides. Cover and bring the water to a boil over high heat. Add the whole head of cauliflower to the boiling water. Reduce the heat to medium. Cover and steam until a skewer inserts easily into the core of the cauliflower, about 8 minutes. Transfer the cauliflower to the center of a 16 to 20-inch-diameter platter. Set aside to cool completely.
  • Arrange the giardiniera, corn, and roasted bell peppers in piles around the cauliflower. Sprinkle the onions and olives over the vegetables. Sprinkle the capers over.
  • Whisk the oil, vinegar, and black pepper in a medium bowl to blend. Drizzle the vinaigrette over the vegetables, and serve. The salad can be prepared ahead. Cover the salad and refrigerate it overnight. Bring the salad to room temperature before serving.

4 ounces fingerling potatoes
1 small red onion, peeled and thinly sliced
4 medium red heirloom tomatoes, cored and cut into 1-inch cubes
2 medium green heirloom tomatoes, cored and cut into 1-inch cubes
2 medium yellow heirloom tomatoes, cored and cut into 2-inch cubes
1/4 cup green (preferably Picholine) olives, pitted
1 tablespoon capers
1 tablespoon Champagne wine vinegar
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon minced oregano leaves
1/4 cup extra-virgin olive oil
Lemon juice, to taste
1/2 cup caperberries

Steps:

  • In salted boiling water, cook the potatoes until tender. Drain and allow to cool to room temperature. Peel and cut into 4 to 6 pieces. Transfer to a medium bowl. Add the red onions, tomatoes, olives and capers.
  • In another bowl, combine the vinegar, salt, pepper and oregano. Slowly whisk in the olive oil. Pour over salad mix. Taste and season with lemon juice.
  • Divide salad into 2 and mound onto salad plates. Surround with caper berries.

INSALATA DI FARRO: SPELT SALAD



Insalata di Farro: Spelt Salad image

7 tablespoons/100 ml extra-virgin olive oil, plus extra for drizzling
2 cloves garlic, crushed
14 ounces/400 g farro
6 cups/1.4 liters vegetable broth, plus extra for sauteing vegetables
1 red onion, coarsely chopped
2 zucchini, sliced
1 red pepper, seeded and chopped
1 eggplant, chopped
10 cherry tomatoes, halved
Salt
Bunch fresh parsley, leaves picked and finely chopped
Small bunch fresh mint leaves, finely chopped
Walnuts, toasted, for sprinkling

Steps:

  • In a saucepan, heat up 3 tablespoons olive oil; then add the garlic and farro. Cook the garlic until golden, allowing the farro to get toasted as well. Stir to prevent sticking. Add vegetable broth, a few ladles at a time as you would preparing risotto. Continue stirring and add more broth, a little at a time, as it evaporates. Cook until the farro is soft. In another saucepan, heat up 4 tablespoons olive oil. Add the onion, zucchini, red pepper, eggplant, and then the tomatoes. Add the salt and cook until tender. If the pan is drying out, avoid adding more oil, just add some vegetable broth to help cook the vegetables. Once the vegetables are soft, remove from the heat and add to the farro. Then add the parsley and mint and mix well. Plate the dish, top with walnuts and drizzle with olive oil.
