SUNFLOWER SEED COOKIES

Number Of Ingredients 10

1 cup butter, softened
3/4 cup shortening
2 cups sugar
1 tablespoon water
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup roasted salted sunflower kernels

Steps:

  • In a bowl, cream butter, shortening and sugar. Add water and vanilla; mix well. Combine flour, baking soda, baking powder and salt; add to creamed mixture and mix well. Stir in sunflower sees. , Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Flatten with a glass dipped in sugar. Bake at 350° for 11-13 minutes or until lightly browned. Remove to a wire rack to cool.

1/2 cup oil
3/4 cup brown sugar
1 egg
1/2 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups rolled oats
3/4 cup sunflower seeds

Steps:

  • Cream oil, brown sugar, egg and vanilla. Add flour, soda, salt (unless seeds are salted). Add oats and sunflower seeds.
  • Cook @ 350 degrees 10-15 minutes.

3/4 cup shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 cups quick-cooking oats
1 cup sweetened shredded coconut
1 cup salted sunflower kernels

Steps:

  • In a bowl, cream shortening and sugars until light and fluffy. Add eggs and vanilla; mix well. Combine flour, baking soda, baking powder and salt; add to creamed mixture and mix well. Stir in the oats, coconut and sunflower kernels., Drop by teaspoonfuls onto greased baking sheets. Bake at 350° for 12-15 minutes or until golden brown.

1 ⅛ cups all-purpose flour
1 ⅛ cups whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1 cup butter
5 tablespoons brown sugar
5 tablespoons white sugar
2 eggs
1 teaspoon vanilla extract
1 cup sunflower seeds
2 cups flaked coconut

Steps:

  • In a large mixing bowl, cream together sugar and butter or margarine. Beat in eggs and vanilla.
  • Stir in flour, salt and baking soda. Add coconut and sunflower seeds. Mix together well.
  • Drop by spoonfuls onto greased cookie sheet. Bake at 350 degrees F (175 degrees C) for 8 to 10 minutes.

A few years ago I needed an authentic Indian recipe for a class I was teaching. A girlfriend from India was gracious enough to share this recipe with me. The children loved them. Yield and prep time are a guess as I didn't make a notation of them.

5 cups flour
1 cup oil
1 cup water
3/4 cup sugar
oil, to deep fry

Steps:

  • Put the oil in a thick bottom pan.
  • Add water and sugar.
  • Stir and bring to a boil.
  • Remove from heat immediately.
  • Let it stand until it is lukewarm.
  • Fold in the flour adding a little at a time.
  • Knead well.
  • Heat oil in a deep frying pan.
  • Divide the dough into lemon sized balls and roll out with a rolling pin.
  • You should not be able to see the surface you are rolling it on through the dough.
  • Using a pizza cutter or a sharp knife cut into strips at an angle.
  • Turn the surface 90 degrees and cut diagonally to form diamonds.
  • If you don't cut at an angle you will get squares, diamonds look better.
  • Deep fry in the oil until golden brown.
  • Store in a air tight container.

2 1/2 cups shelled sunflower seeds (fresh or dried)
3 cups water
6 tablespoons fine cornmeal
3 tablespoons maple syrup
1/2 cup oil

Steps:

  • Simmer the seeds in the water, covered, for 1 hour. Drain & grind the seeds when done.
  • Mix the syrup & cornmeal, 1 tablespoon at a time, into the ground seeds, making a stiff dough. Shape into 3 inch flat cakes, about 15 cakes.
  • Fry the cakes in hot oil on both sides. Drain on paper towels & serve hot.

1 cup butter, softened
2 eggs
1 teaspoon vanilla extract

½ teaspoon baking powder

2 cups rolled oats
1 cup roasted and salted sunflower seeds
1 cup flaked coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the white sugar, brown sugar, and butter until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and baking soda; stir into the creamed mixture until just blended. Mix in the rolled oats and sunflower seeds. Stir in coconut if desired. Drop dough by heaping teaspoonfuls onto ungreased cookie sheets. Leave room for spreading.
