1 cup dried lentils
1 cup basmati rice*
2 teaspoons vegetable oil
2 1-inch pieces of cinnamon stick
2 whole cloves
1 teaspoon cumin seeds
3 garlic cloves, finely chopped
2 teaspoons chopped fresh ginger
4 1/3 cups water
2 teaspoons salt
1 teaspoon sugar
1/4 teaspoon turmeric
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice

Steps:

  • Rinse lentils; drain. Place in small bowl. Rinse rice; drain. Place in another small bowl. Heat oil in heavy large saucepan over medium-high heat. Add cinnamon, cloves, and cumin; sauté about 2 minutes. Add garlic and ginger; sauté about 30 seconds. Add water, salt, sugar, and turmeric; bring to boil. Reduce heat; add lentils and cook 8 minutes. Increase heat to high. Add rice and boil 5 minutes. Reduce heat; cover and simmer until lentils and rice are tender and liquid is absorbed, about 8 minutes longer. Remove from heat; let stand covered 5 minutes. Transfer rice to large bowl. Remove cinnamon stick pieces and cloves. Mix in cilantro and lime juice.
  • Basmati rice is available at Indian markets and some supermarkets.

Kashmiri Chicken, Cardamom and Saffron Pilau: Spiced Indian Rice image

A wonderfully fragrant and spiced Indian chicken dish, with saffron and cardamom studded rice. This has become a popular and much loved family recipe; an Indian friend who was studying Art with me many years ago, used to make this for all of us Art students every Saturday night; she finally shared the recipe with us before we all graduated! I have been making this for over 30 years now, and I have never changed a thing! Serve this with cool cucumber raita, sambals and naan bread, for a delectable "one Pot" Indian feast. NB: As one reviewer found out, if you use brown rice in this recipe, this adds considerably to the cooking time and you will need more liquid; brown rice takes longer to cook and takes about a third more liquid!

1 lb white basmati rice
2 tablespoons oil
2 onions, peeled and diced
4 garlic cloves, peeled and crushed
1 inch fresh gingerroot, peeled and finely diced
2 teaspoons cumin seeds
1 1/2 lbs boneless chicken or 1 1/2 lbs boneless chicken breasts, cubed
1 teaspoon saffron strand
1/2 pint boiling water
6 cardamom pods, bruised
4 tablespoons chopped of fresh mint
2 teaspoons garam masala
1 cinnamon stick
8 ounces skinned and chopped tomatoes or 8 ounces tinned chopped tomatoes
2 ounces sultanas
salt
pepper
2 ounces blanched almonds, toasted

Steps:

  • Rinse the basmati rice several times in cold water and drain in a colander - leave to dry.
  • Heat half of the oil (1 tablespoon) in a large pan and add half of the onion (1 onion), the garlic, ginger and cumin seeds. Fry them over a gentle heat for about 5 minutes.
  • Add the chicken pieces and brown them - turning them regularly to achieve a good colour all over.
  • Add the saffron, boiling water, cardamom pods, mint, garam masala and cinnamon stick. Bring it all to the boil and then cover, reduce the heat and simmer for 25 to 30 minutes, until the chicken is tender.
  • Transfer all the contents to a bowl and rinse out the pan.
  • Add the remaining oil and onion to the pan and fry until the onion is lightly coloured. Add the rice and stir it well, cook for about 2 to 3 minutes until the rice is opaque.
  • Add the chicken mixture, tomatoes and sultanas - then season to taste with salt and pepper. Stir gently, then shake the pan to level the ingredients.
  • Add sufficient boiling water to come about 3/4" above the rice mixture. Cover with a tight fitting lid and cook gently over a low heat for 20 to 25 minutes, until the rice is tender and the liquid has all been absorbed.
  • Discard the cinnamon stick and transfer to a warm serving dish, sprinkle with the toasted almonds and serve immediately.

1 tablespoon canola oil
1 cup chopped onion
1 tablespoon minced fresh ginger root
1 clove garlic, minced
½ teaspoon ground coriander seed
½ teaspoon ground cardamom
¼ teaspoon ground nutmeg
½ teaspoon ground cumin
1 ¼ cups dry jasmine rice
¾ teaspoon salt
½ cup dry lentils
3 cups water
1 potato, peeled and diced
1 red bell pepper, chopped
½ cup green peas
3 tablespoons raisins
1 tablespoon butter

Steps:

  • In a large skillet or saucepan, heat the oil over medium heat. Add the onions, and cook, stirring frequently until they have softened. Sprinkle in the ginger, garlic, coriander, cardamom, nutmeg, and cumin. Cook for 3 minutes more, stirring frequently.
  • Pour the rice into the saucepan and saute the rice with the spices for 2 minutes, stirring constantly. Pour the lentils and salt into the saucepan. Pour 3 cups of water into the pan, stir.
  • Place the potatoes into the pan. Bring the mixture to a boil, cover the pan and turn the heat to low. Cook for 10 minutes.
  • Place the bell pepper, peas, and raisins into the saucepan. Stir well, then cover the pan again. Cook 10 minutes more, or until the rice, potatoes, and lentils are tender. Stir in the butter, if you like. Serve and enjoy.

2 tablespoons vegetable oil
1 large onion, finely chopped
8 garlic cloves, chopped
4 teaspoons paprika
2 teaspoons ground cumin
1 teaspoon salt
1 teaspoon ground coriander
3/4 teaspoon ground ginger
1/2 teaspoon cayenne pepper
1/4 teaspoon ground cardamom
1/4 teaspoon ground cloves
1/4 teaspoon pepper
2 bay leaves
1 cinnamon stick (apx 2-inch piece)
1 1/2 cups water, divided
6 tablespoons plain yogurt
hot cooked rice
chopped peanuts (optional)

Steps:

  • Brown meat in oil in a large pot. Remove with a slotted spoon.
  • Cook onion and garlic in pot for about 4-5 minutes, stirring (don't let garlic burn).
  • Add all spices. Stir.
  • Stir in meat and 1/4 cup water.
  • Stir in 1 tablespoons yogurt until well combined. Continue adding yogurt 1 tablespoons at a time.
  • Stir in remaining 1-1/4 cup water.
  • Cover. Simmer on low heat for 1 hour.
  • Remove bay leaves and cinnamon stick.
  • Serve over hot, cooked rice.
  • Garnish with chopped peanuts if desired.

1/4 cup ghee (olive oil OK)
1/2 cup onion, chopped
3 garlic cloves, chopped
1 teaspoon cumin seed
1/2 teaspoon mustard seeds
1 tablespoon ginger, grated fresh
1 fresh chili pepper (jalapeno, serrano OK)
1 eggplant, cubed
1 bunch spinach, fresh rinsed
4 tomatoes, chopped
1 teaspoon turmeric
1 1/2 teaspoons salt
15 ounces garbanzo beans (1 can)
1 tablespoon lemon juice, fresh
1 tablespoon sugar
1 cup white basmati rice, rinsed twice
2 cups water
1 teaspoon salt
1 teaspoon turmeric
1 tablespoon ginger, fresh, grated
1 tablespoon ghee (olive oil OK)

Steps:

  • For the Vegetables:.
  • Heat a large soup pot over medium to high heat and add the ghee or olive oil. Add the onions and garlic, cumin seeds, mustard seeds, ginger, and hot pepper until the onions are translucent and the mustard seeds begin to pop.
  • Add the eggplant and mix well so the spices and ghee are absorbed, the let it cook for 8 minutes, stirring occasionally.
  • Add the bunch of fresh spinach. There is no need to cut off the stems since many of the vitamins are found there. You can put the spinach in without chopping and it will cook down.
  • Cover the stew pot for a few minutes until it cooks down and you can fit the rest of the ingredients in the pot.
  • Add the tomatoes, turmeric, and salt and cook above for about 10 minutes, until spinach is soft. Add the garbanzo beans, lemon juice, and sugar, and cook for about 5 more minutes. Serve over spiced basmati rice.
  • For Spiced Basmati Rice:.
  • Bring water to a rolling boil, then reduce heat to low. Add the rice, ghee, and spices and mix well. Cook for 25-30 minutes then remove from the heat. Let the cooked rice sit for 5 minutes and then fluff the rice with a fork. You can also use a rice cooker to make the spiced rice.

1/4 cup sliced green onion
2 teaspoons butter or 2 teaspoons margarine
1 1/3 cups long grain rice
1/2 teaspoon salt
1/2 teaspoon garam masala
1/8 teaspoon ground red pepper
1 garlic clove, minced
2 2/3 cups water

Steps:

  • Cook green onion in butter in a saucepan until tender but not brown.
  • Stir in rice, salt garam masala, red pepper and garlic.
  • Cook and stir over medium heat for 1 minute.
  • Add water.
  • Bring to boil.
  • Reduce heat and simmer, covered, for 15 minutes; do not lift lid.
  • Remove saucepan from heat.
  • Let stand covered for 10 minutes.
  • To freeze: Place prepared rice in freezer bag. Seal, pushing out as much air as possible, label and freeze.
  • To serve: Thaw in fridge. Place in baking dish and add 1 T.water for each cup of rice. Stir and reheat at 300 degrees for 35-40 minutes.

2 tablespoons plain flour

4 (125 g) fish fillets (firm white)

300 g broccoli (cut into small florets)
1 cup peas (frozen)
1/4 cup coriander (coarsely chopped)
3 cups basmati rice & wild rice mix (cooked)

Steps:

  • Combine ground coriander, garam masala, chilli powder and flour on a large plate and season with salt and pepper.
  • Dust fish in flour mixture to coat both sides, shaking of excess.
  • Heat oil in a large frying pan over moderately high heat and add fish skin side down and cook for 2-3 3 minutes each side or until just cooked (timing will depend on thickness of fish) and drain on paper towels.
  • Meanwhile cook broccoli and peas in a medium saucepan of boiling water until just tender and then drain.
  • Add vegetables and coriander to the rice and season with salt and pepper.
  • Serve fish with rice mixture.
