BASIC SWEET TEA (GREEN TEA)
This is a simple recipe, yes. However, I've had some British/Irish/Scottish friends in the past who've taught me what real tea tastes like, and I've found that I like this flavor to be present in both hot and cold forms of the beverage. Not to criticize, but many Americans don't understand the specifics of how to brew tea to its full potential and flavor. Some overbrew it, some underbrew it. I will be covering brewing both black and green teas for making sweet iced tea, in separate recipes.

Steps:
- Put the ice aside in a container or pitcher that can withstand the hot tea without breaking and put it in the fridge while you're brewing.
- Heat the 40 oz. of water in a pot, but not to a boil. It should be able to produce steam, but should not be boiling (boiling water overbrews green tea). Place the teabags in the hot water, and allow them to brew for 1 to 2 minutes while maintaining the current heat (hot but not boiling). Do not let the tea brew too long or it will end up too bitter.
- Remove the tea bags from the pot, remove the pot from the heat and stir in the cup of cane sugar. It will dissolve almost instantly into the tea. Allow it to stand for a minute as your retrieve the container/pitcher.
- Carefully pour the brewed tea into the container. It will melt most of the ice instantly, evening out the temperature so that the tea does not damage the container. Chill the tea further before serving.

REFRESHING ICED GREEN TEA
This recipe is more about the method than the ingredients. If you don't already like green tea, this will not change your mind! I found it on several different websites including wikihow, but I am not sure where it originally came from. I use "London Fruit&Herb Company-Green Tea and Raspberry" for my tea. *Note prep time does not include chilling time.

- Pour the water into container.
- Add the green tea bags. Move it back and forth slowly several times.
- After 15 seconds or so of moving the teabags back and forth, place the container in the refrigerator. Leave the teabags inside.
- Chill for one hour. Take the container out of the refrigerator, remove the teabags, and keep chilling until you have it at the temperature you want it.

- Brew the chamomile tea bag with 500ml boiling water, steep for 2-3 mins or following pack instructions. Remove the bag and leave to cool for 5 mins.
- Pour into a large jug with the pink gin, rum, elderflower cordial and juice. Add ice and stir, then add the thyme sprigs and stir again before serving.

ICED HONEY GREEN TEA
Iced green tea is great in the summer -- it's cool, it's got that slight bitter edge, and it's full of healthy antioxidants. You can keep this in a pitcher in the refrigerator and drink it whenever you need something to help you cool down. I make it with decaffeinated green tea so I don't get all wired. I have also made it using "green tea with mint" and that was excellent chilled. This proportion assumes you are going to pour it over ice; you could probably water it down a bit if you are going to drink it without ice. I never sweeten my green tea, so I can't tell you how much honey or sweetener to use, but that's a matter of personal taste anyway. I got this idea from a box of Celestial Seasonings brand green tea.
