GINGER GREEN ICED TEA

5 cups water
2 1/2-inch piece of fresh ginger (unpeeled is okay), coarsely chopped
3 tablespoons honey
6 bags of green tea
Mint sprigs (optional)

Steps:

  • 1. Place 2 cups water and the ginger into a saucepan and bring to a boil. Reduce the heat to low and simmer for 5 minutes. Stir in the honey. Remove the pan from heat and add the tea bags. Steep for 3 minutes, and then strain out all the solids.
  • 2. In a large pitcher combine the strained tea with the remaining 3 cups water. Chill in the refrigerator. Serve over ice, garnished with mint sprigs, if using.

3 green tea bags
1/2 cup sugar
1-inch piece ginger, sliced, plus more for garnish
1 bottle prosecco (optional)

Steps:

  • Put the green tea bags into a heatproof container and pour in 1 quart boiling water. Let steep until it comes to room temperature, about 1 hour. Remove the tea bags and discard.
  • While the tea is steeping, in a saucepan over medium-high heat, bring 1 cup water, the sugar, and ginger to a boil. Stir to dissolve the sugar, remove from the heat, and allow to cool to room temperature, about 1 hour. Store the tea and ginger simple syrup in the refrigerator until ready to serve.
  • To serve, fill glasses with ice and pour in the tea. Sweeten, to taste, with the ginger simple syrup. Garnish with a slice of ginger. For the adults, top each with 1/2 cup prosecco, if desired.

1 qt water
4 green tea bags
2 slice thin slices of fresh ginger, about 1 " dia.
1/2 c white sugar
1/4 c freshly squeezed lime juice. 2 to 3 limes
sugared limes slices (opt)

Steps:

  • 1. Bring water and ginget to a boil. Pour water over the tea bags in a 4 cup heat proof measuring cup. Step 3 minutes. remove tea bags and ginger. discard. Stir in 1/4 cup sugar & let cool to room temperature. Mix remaining 1/4 cup sugar with lime juice, add to tea. Pour into pitcher, chill in fridge. Serving sugesstion: Pour over ice in to 4 tall ice tea tumblers & garnish with sugared lime slices if desired.
  • 2. Alternate method. Make tea as suggested with gren tea bags and sliced ginger, Let each person squeeze in lime or lemon juice and add sugar, or sweetner as desired. Server over ice. Add green food coloring for a greener color.

GINGER LEMONGRASS ICED GREEN TEA

8 cups water
1 stalk lemongrass
1 piece of ginger (about the size of two thumbs (or one freakishly large thumb))
1/3 cup sugar (or 1/4 cup agave nectar, or sugar substitute to taste - just add to taste after it's chilled)
10 individual bags green tea or 3 heaping tablespoons loose green tea
Mint for garnish

Steps:

  • Cut lemongrass into two-inch pieces, and crush with the flat side of a knife, or just cut each piece lengthwise a few more times like I did.
  • Peel ginger and cut into thin slices.
  • In a large saucepan over high heat, bring the water, lemongrass, ginger, and sugar to a boil.
  • Remove saucepan from the heat, and add the green tea (if you're adding the loose tea, put it in something so you can get it out right after it's steeped, while leaving the ginger and lemongrass in). Steep for about a minute, or until it's the right color/flavor for your tastes.
  • Remove the tea bags/leaves, then let sit for about 30 minutes.
  • Pour the tea through a fine-mesh sieve into a pitcher.
  • Refrigerate until cool - about a couple of hours.
  • Pour over ice. Top with a mint sprig. And enjoy!

I'm totally in love with lemongrass. I purchased a little 4 dollar plant at my local plant nursery and in just 2 years, it's grown into quit a substantial plant. It has even survived many winter freezes. Adapted from the Lemongrass, Mint, and Ginger Iced Tea recipe from the novel, Sweet Life, by Mia King.

4 cups water
1 stalk fresh lemongrass
1/4 cup sugar (can use sugar substitute)
8 thin slices fresh ginger
4 mint sprigs
4 teaspoons loose green tea (or substitute 5 single-serve green tea bags)

Steps:

  • Cut lemongrass into 2" inch lengths, then crush with the flat side of a large knife.
  • In a 2-quart pan, bring 4 cups water, sugar, ginger and lemongrass to a boil. Remove from heat and add tea leaves or tea bags; let steep about 4 minutes or until desired flavor and color are achieved. Let cool, about 30 minutes.
  • Pour through a fine strainer into a glass pitcher. Cover and chill until cold, at least 2 hours. Pour into tall glasses filled with ice and garnish with a spring of mint.

  • Add tea leaves; brew 1-3 minutes (or longer, depending on how strong you like your tea).

  • 1. ring water and ginger to a boil in a large sauce pan. Pour water over tea bags in a teapot or 4-cup heat-proof measuring cup; steep 3 minutes . Remove and discard tea bags. and ginger. Stir in 1/4 cup sugar; cool tea to room temperature.
  • 2. Mix remaining 1/4 cup sugar with lime juice ; add to tea. Pour tea into 4 ice-filled glasses. Garnish with lime slices.
