This recipe is adapted from SeriousEats.com. The recipe suggests using chocolate ice cream, but you can use whichever one you like.

1/2 gallon ice cream, slightly softened
13 1/3 ounces all-purpose flour
3 ½ ounces cocoa powder
3/4 tsp salt
7 ounces granulated sugar
10 ounces unsalted butter
2 egg yolks
2 tsp vanilla extract

Steps:

  • Press ice cream into a 9x13-inch, parchment-lined baking tray, then smooth out the top. Transfer into a freezer for at least one hour.
  • Position one rack in the upper-middle part of the oven and the other in the lower-middle part. Then, set the oven to preheat to 350°F.
  • Sift the flour, the cocoa, and the salt into a medium-sized bowl.
  • Cream sugar and butter with a mixer on medium speed until light and frothy, then with the mixer still on, add the yolks and the vanilla.
  • Stir in the flour and the cocoa mixture, but do not overmix.
  • Divide the dough in half, then shape each half into a 5-inch square. Wrap each square in plastic wrap. Refrigerate for 30 minutes.
  • Put one rectangle of dough on a lightly floured working surface, then roll out to an 8x12-inch rectangle and cut into 12 4x2-inch cookies. Do the same with the other rectangle of dough.
  • Using a flat spatula, place the cookies on two parchment-lined baking sheets. Then, poke 15 holes in each cookie using a pointy object.
  • Bake for 10-12 minutes, switching the baking sheets from bottom to top and from front to back at the 5-6 minute mark.
  • When done, take out of the oven and wait until the cookies are completely cooled, before proceeding with the next steps.
  • Take the ice cream out of the tray, then trim the edges for a cleaner look and cut the ice cream into 12 4x2-inch rectangles.
  • Place each rectangle in between two cookies, then wrap each ice cream sandwich in plastic wrap and refrigerate overnight, so they soften.

5 ounces semisweet chocolate
4 ounces unsweetened chocolate
3/4 cup (1 1/2 sticks) unsalted butter
1 teaspoon salt
1 1/2 cups sugar
3 eggs
2 1/4 cups all-purpose flour
Extra sugar for rolling out dough

Steps:

  • Melt together chocolates and butter in a medium bowl over simmering water, stirring with a wooden spoon. When smooth, add the salt and sugar, stirring well. Remove from heat. Beat in eggs, then fold in flour until mixed. Let cool, roll in plastic wrap, and refrigerate for at least 1 hour.
  • Heat oven to 350 degrees. Line a baking sheet with parchment paper.
  • When dough is firm, cut off a large piece. Dust a work surface with sugar and roll dough 1/4 inch thick, sprinkling more sugar as needed to prevent sticking. Cut into desired shapes and bake on prepared sheet for 11 minutes. Cool wafers on a wire rack.

KAHLUA CHIP ICE CREAM

8 large egg yolks
1 cup sugar
1 quart half-and-half
1 tablespoon vanilla extract
3/4 cup brewed double-strength espresso, cold
1/2 cup Kahlua or other coffee liqueur
8 ounces semisweet chocolate, chopped

Steps:

  • Place a large mixing bowl in the freezer.
  • In another large bowl, whisk together the egg yolks and sugar until thick and pale yellow. In a saucepan bring the half-and-half to a boil. Gradually pour into the egg mixture, whisking until the sugar dissolves. Let stand 5 minutes and then chill.
  • Stir the vanilla, cold espresso and Kahlua into the chilled custard. Pass through a fine strainer. Pour into an ice cream maker and process according to the manufacturer's instructions. When the ice cream is nearly done, melt the chocolate over simmering water.
  • Transfer the frozen ice cream into the chilled bowl from the freezer. Pour in the melted chocolate, stirring and mixing vigorously with a wooden spoon. Transfer to a container and freeze until firm.

1/2 cup Dutch process cocoa powder
1/2 teaspoon fine salt
1/4 teaspoon baking powder
6 tablespoons unsalted butter, softened
2 tablespoons shortening
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
2 (1-pint) containers ice cream (any flavor)

Steps:

  • 1. Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • 2. In a small bowl, whisk together the flour, cocoa powder, salt, and baking powder. In another bowl, beat the butter, shortening, and sugar together with an electric mixer until fluffy. Beat in the eggs and vanilla, beating until smooth. With a spoon, stir in the flour mixture, stirring just until you have a smooth dough.
  • 3. Using a 2 tablespoon cookie dough scoop, drop 6 mounds of dough on each baking sheet, leaving a couple inches between each cookie. Bake until the cookies are firm around the edges and soft in the middle, about 15 minutes. (For even baking, rotate the pans from top to bottom and back to front halfway through baking.) Using a spatula, transfer the cookies to a wire rack and cool completely.
  • 4. Meanwhile, turn the ice cream pints on their sides and use a serrated knife to slice through the containers, cutting each into 3 even rounds. Place the ice cream disks on a baking sheet and freeze until ready to assemble the sandwiches.
  • 5. To assemble, peel the cardboard from the ice cream disks and sandwich each disk between 2 cookies. Serve the sandwiches immediately, or wrap individually in plastic wrap and freeze up to 1 week.

This is how I make this Ice Cream dessert. Much like my Brownie Trifle. I add a tad of Kahlua to the chocolate fudge... Mmmmm Good!

24 ice cream sandwiches, unwrapped
2 tablespoons Kahlua or 2 tablespoons kahlua-flavored syrup
1 (16 ounce) container whipped topping
1 cup walnuts, chopped
caramel ice cream topping
chocolate ice cream topping
1 cup English toffee bits or 1 cup Heath candy bar

Steps:

  • Place half of your sandwiches in the bottom of a square serving dish . . . making sure sides of sandwiches are against the pan. I make it in a 9x13 glass dish.
  • Cover with whipped topping.
  • Top with half chopped walnuts.
  • Microwave 1/2 jar Chocolate syrup for 1-2 minutes, mix in 2 Tbls Kahlua.
  • Drizzle whipped topping with both chocolate and caramel.
  • Repeat above steps for next layer. Ending with whipped topping. Add Toffee Pieces to top.
  • Cover and freeze for 4 hours. Best overnight!

1 package chocolate cake mix (regular size)
1/4 cup shortening
1/4 cup butter, softened
1 large egg
1 tablespoon water
1 teaspoon vanilla extract
1/2 gallon ice cream

Steps:

  • In a large bowl, combine the cake mix, shortening, butter, egg, water and vanilla until well blended. Divide into four equal parts. , Between waxed paper, roll one part into a 10x6-in. rectangle. Remove top piece of waxed paper and invert dough onto a ungreased baking sheet. Remove second piece of waxed paper. Score the dough into eight pieces, each 3x2-1/2 in. Repeat with remaining dough. , Bake at 350° for 8-10 minutes or until puffed. Immediately cut along the scored lines and prick holes in each piece with a fork. 3 T Kahlua
2 T instant coffee granules
1 t vanilla
2 c all purpose flour
1/4 t baking powder
1/2 t salt

Steps:

  • Beat butter at medium speed until creamy; gradually add sugar, beating well. Stir together Kahlua, coffee and vanilla until coffee dissolves; add to butter mixture, beating until blended. Combine flour, baking powder, salt; add to butter mixture, beating at low speed just until blended. Turn dough onto a lightly floured surface and roll to 1/8 inch thickness. Cut with a floured 3-inch round cutter and place 1 inch apart on lightly greased baking sheets. Bake at 375 degrees for 7 minutes or until cookies are lightly browned; remove to wire racks to cool.
