CREPES SUZETTE WITH VANILLA ICE CREAM AND ORANGE BUTTER SAUCE

2 cups milk
2 eggs
1 1/2 cups all-purpose flour
Pinch salt
1 stick (4 ounces) unsalted butter, melted
Orange butter, recipe follows
1 tablespoon butter to brush the crepe pan
2 sticks (1/2 pound) unsalted butter
1 cup granulated sugar
1 cup freshly squeezed orange juice
1/2 lemon, juiced
1 teaspoon orange zest
1 big splash orange-flavored liqueur (recommended: Grand Marnier)

Steps:

  • Preheat oven to 350 degrees F.
  • Add milk and eggs to blender and combine. Add the flour 1/2 a cup at a time, blending after each addition to ensure there are no lumps. Add pinch of salt and melted butter then blend for 30 seconds until you achieve a smooth, silky consistency. Set aside in refrigerator for at least 30 minutes to rest. While it rests make the orange butter sauce.
  • Dip a piece of kitchen paper in butter and grease a small frying pan. Ladle a spoonful of batter into the pan. With a flick of the wrist swivel the pan in order to get a nice even covering all over. A good crepe should be paper- thin. Cook on a high heat and flip it over when you see the edge turning golden brown. Remove crepes from pan and fold in half and press into a muffin tray to form little cup shapes. Bake in hot oven for 10 to 12 minutes until slightly crispy and brown around the edges, the middle should remain spongy and light.
  • Combine the butter, sugar, citrus juices, and zest to a small saucepan and cook for about 10 minutes until it caramelizes. It should be a golden color. Remove from heat, add the Grand Marnier, return to the heat and continue to whisk and reduce until syrupy-about 10 minutes. When done, set to the side.
  • To assemble, place crepe "cup" in the center of plate and place a scoop of vanilla ice cream in the cup. Drizzle with the orange butter sauce

1 cup flour
2 teaspoons sugar
2 teaspoons espresso powder
1/4 teaspoon salt
1 cup milk
1/2 cup water
2 teaspoons butter, melted
2 large eggs
1/2 cup half-and-half
2 tablespoons honey
3 ounces semisweet chocolate, chopped
2 cups coffee ice cream
dark chocolate, curls
espresso powder

Steps:

  • In a small bowl whisk together the flour, sugar, espresso powder and salt.
  • In a blender combine the milk, water, melted butter, and eggs.
  • Pulse a few times to lightly blend.
  • Add the dry ingredients and blend until smooth.
  • Cover and chill-up to 1 hour.
  • Heat a non stick crepe pan or skillet over medium heat. (if using a skillet use a touch of butter to prevent sticking).
  • Pour 1/4 cup of the crepe batter into the pan.
  • Quickly tilt pan in all directions so batter covers pan with a thin coat.
  • cook for 30 to 35 seconds.
  • Carefully lift crepe with a spatula and turn.
  • Cook for an additional 30 seconds.
  • Place cooked crepe on a towel.
  • Repeat with remaining batter.
  • Makes 12 crepes.
  • In a small saucepan over medium heat combine half-and-half and honey.
  • Cook for 3 minutes, stirring often.
  • Remove from heat and add the chopped chocolate.
  • Stir until melted and smooth.
  • Fold each crepe in half, fold in half again.
  • Place each crepe on a plate.
  • Top each with 1/2 cup of ice cream-drizzle on 4 teaspoons of chocolate sauce on each.
  • Top with chocolate curls and dust with espresso powder.

1/2 cup heavy cream

  • Place eggs in a blender and pulse a few times to break them up. Add milk, oil, flour and salt and blend until smooth. Heat a small (8- or 9-inch) nonstick saute pan over medium-high heat. Place a small amount of oil on a paper towel and rub it over the surface of the pan. Pour in 1/4 cup of the crepe batter and quickly swirl the pan around until it covers the entire bottom of the pan. Cook for 2 minutes, or until the crepe is set in the center. Loosen the edges with a spatula and turn the crepe over. Cook for 1 minute, or until very lightly browned, and remove from the pan. Repeat the process with the remaining batter, oiling the pan before cooking each crepe.

Made it for my boyfriend and I'm pretty sure that's when he fell in love with me haha! Whether you're entertaining guests or have kids this recipe is a hit!

1 cup all-purpose flour
¼ cup milk
¼ cup water
2 eggs
¼ teaspoon salt
2 tablespoons melted butter
1 quart vanilla ice cream (such as Breyer's®)
1 quart coffee-flavored ice cream (such as Breyer's®)
1 (7 ounce) can whipped cream
1 (5.5 ounce) can chocolate syrup, or to taste

Steps:

  • Whisk flour, milk, water, eggs, and salt together in a medium-sized bowl until smooth and all lumps are gone. Mix in melted butter.
  • Heat a lightly greased frying pan over medium heat. Spoon in about 1/2 cup batter over the bottom of the pan in a very thin layer, about the size of a regular tortilla. Cook crepe until the bottom is a light golden brown, about 2 minutes. Flip using a spatula and cook, 1 to 2 minutes more. Repeat with remaining batter.

I originally got this idea from a dessert I had at Joe's Crab Shack. My husband and I loved it so much, that I gave the combination a shot and it turned out just like what my husband and I had eaten at the restaurant. If you have a favorite crepe recipe, any one will probably do. This is the one I like to use. This sweet treat is so amazing, I hope you like it as much as we do.

3/4 cup flour
3 tablespoons sugar
1/8 teaspoon salt
3/4 cup milk
1 1/2 tablespoons butter (melted)
3 eggs
3 -5 bananas (sliced)
whipped cream
chocolate syrup
vanilla ice cream

Steps:

  • MIx dry ingredients for the crepes.
  • Melt the butter, and let it cool some.
  • Whisk the milk and eggs together.
  • Add the butter into the milk/egg mixture.
  • Slowly mix in the dry ingredients.
  • Heat pan to medium heat and spray pan with cooking spray.
  • Pour batter onto heated pan, making sure they are spread out and thin.
  • Once bottom side is browned, flip to next side.
  • Allow your finished crepes to cool slightly.
  • Once crepes are cool, scoop ice cream in small scoops and place in the center of the crepe. Roll it like a burrito.
  • Shower the crepe(s) with bananas.
  • Add whip cream on top.
  • Add chocolate sauce to finish the dish.

My favorite recipe from my grandmother, who would make this to go over bread pudding and other desserts. So simple to make, but special enough for a holiday table (or over bread pudding to celebrate the birth of a child in our family!). An absolute family tradition; I haven't seen anything else like it. I've come to find that it's a pretty flexible recipe -- you can add more or less cinnamon, sugar, or even other spices (nutmeg, ginger, and cardamom are all good in addition to the cinnamon). I like mine a bit thicker so I use less water than called for here (2 to 2 1/2 cups), but most in my family make it just like this. Quick, easy, and really yummy.

8 tablespoons butter, melted
Purchased dulce de leche or pralines and cream ice cream
Purchased chocolate sauce, warmed
Toasted slivered almonds
Whipped cream

Steps:

  • Blend first 6 ingredients in blender until smooth. With machine running, add flour 1 heaping tablespoon at a time, blending well after each addition. Blend in 4 tablespoons melted butter. Let batter stand 2 hours at room temperature. Reblend crepe batter. Heat nonstick skillet with 8-inch-diameter bottom over medium-high heat. Brush with melted butter. Pour 2 generous tablespoons batter into skillet and swirl to coat bottom. Cook until bottom of crepe is light brown, about 30 seconds. Loosen edges gently with spatula. Carefully turn crepe over. Cook until bottom begins to brown in spots, about 30 seconds. Transfer to plate. Cover with paper towel. Repeat with remaining batter, brushing skillet with melted butter as needed and stacking crepes between paper towels. (Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.) Fold each crepe in half, then fold in half again, forming triangle. Place 2 folded crepes on each plate. Top each crepe with 1 scoop ice cream. Drizzle with warm chocolate sauce. Top with almonds and whipped cream.
