1 cup gluten-free cornmeal ((5 ounces; 141 grams))
3/4 cup finely ground white rice flour ((3 ounces; 85 grams))
3 tablespoons granulated sugar ((1 1/2 ounces; 42 grams))
2 teaspoons baking powder
1 teaspoon seasoned salt or regular salt
1/2 teaspoon baking soda
1/2 teaspoon chipotle powder, optional
1/4 teaspoon xanthan gum
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 cup milk
1 large egg ((about 1 3/4 ounces; 50 grams, out of shell))
2 quarts vegetable oil, for frying

Steps:

  • In medium bowl, whisk together cornmeal, white rice flour, granulated sugar, baking powder, salt, baking soda, chipotle powder (if using), and xanthan gum.
  • In a medium bowl, whisk together onion, garlic, milk, and egg. Pour wet ingredients into dry ingredients and stir together until smooth but some lumps remain.
  • Heat oil in a Dutch oven over high heat to 350°F and adjust flame to maintain temperature. Line a rimmed baking sheet with paper towels.
  • Drop batter, about 2 teaspoons at a time into hot oil until you have a dozen hush puppies. Fry for two minutes and then turn the hush puppies. Fry until deep golden brown, about 2 minutes longer. Remove hush puppies from the oil with a skimmer. Transfer to prepared baking sheet. Repeat with remaining batter. Serve warm.

2 cups cornmeal
1/2 cup pancake mix
2-1/2 teaspoons sugar
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup buttermilk
2 tablespoons canola oil
3 jalapeno peppers, seeded and finely chopped
1/2 cup finely chopped onion
1/8 to 1/4 teaspoon hot pepper sauce
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, pancake mix, sugar, baking powder and salt. In another bowl, beat the egg, buttermilk, oil, jalapenos, onion and pepper sauce. 1 cup yellow cornmeal
3/4 cup self-rising flour
1 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon cayenne
1/2 small sweet onion, finely chopped
1/2 jalapeno, finely chopped
4 green onions, sliced thin
1 large egg, beaten
1/4 cup grated Cheddar
1 cup buttermilk
Orange Dipping Sauce, recipe follows
1/4 cup Dijon mustard
1/4 cup honey
1/4 cup orange marmalade

Steps:

  • Preheat deep fryer to 375 degrees F.
  • Mix all the ingredients together into a large mixing bowl to form a thick batter.
  • Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray. Serve with dipping sauce.
  • Mix the above ingredients together.
