HURRY UP SPICE CAKE
This homemade cake goes into the oven already "frosted" with a cinnamon sugar nut streusel. Hurry Up Spice Cake is an easy dessert with a warm flavor.

Steps:
- In a medium bowl, combine the brown sugar, flour and cinnamon. Add the butter and mix until crumbly. Then mix in the nuts.
- Preheat the oven to 350º Fahrenheit. Spray a 9x13 baking pan with cooking spray.
- In the bowl of a stand mixer, cream together the shortening and sugars.
- Add the eggs and vanilla and mix until combined.
- Add in the milk and mix again.
- Add the remaining dry ingredients and mix at medium speed for about 2 minutes, scraping the sides of the bowl as needed.
- Pour half of the batter into the prepared pan.
- Sprinkle half of the nut topping over the batter.
- Then pour the remaining batter in the pan. Spread it lightly to cover the topping.
- Sprinkle the remaining topping evenly over the batter.
- Bake for 45-55 minutes or until the top springs back when you touch it.

HURRY UP CHOCOLATE CAKE
This recipe is my go too for impromptu parties and pot lucks. It comes from my BFF's Mom.

Steps:
- 1. Preheat oven to 350. Butter 13X9 cake pan or 2 8 inch round cake pans. Coat with cocoa or cocoa and cinnamon.
- 2. Sift together all dry ingredients
- 3. Blend in oil and buttermilk. Add eggs one at a time. Beat well.
- 4. Add boiling water. (You can substitute 1 cup boiling espresso to make a Capuccino Cake.) Stir well. Don't Panic! The batter will look like chocolate milk. Pour into prepared pan(s). Let rest for 5 minutes before baking.
- 5. Bake for 45 minutes or until knife in center comes out clean. Let cool. Enjoy. Although this cake needs no frosting, it looks great with powdered sugar sprinkled on top.

- Preheat oven to 350°. Grease and flour a 10-in. fluted or plain tube pan., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in lemon juice and vanilla. Add flour alternately with 7UP, beating well after each addition. , Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Cool in pan 20 minutes before removing to a wire rack to cool completely., For glaze, in a small bowl, mix confectioners' sugar, lemon juice and enough 7UP to reach desired consistency. If desired, stir in zest. Drizzle over cake.
