This homemade cake goes into the oven already "frosted" with a cinnamon sugar nut streusel. Hurry Up Spice Cake is an easy dessert with a warm flavor.

½ cup packed brown sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon
2 tablespoons salted butter (softened)
¾ cup chopped pecans
½ cup shortening
1 cup granulated sugar
¾ cup packed brown sugar
3 large eggs
1 teaspoon vanilla extract
1 cup 2% milk
3 cups all-purpose flour (lightly spooned and leveled)
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
½ teaspoon ground allspice

Steps:

  • In a medium bowl, combine the brown sugar, flour and cinnamon. Add the butter and mix until crumbly. Then mix in the nuts.
  • Preheat the oven to 350º Fahrenheit. Spray a 9x13 baking pan with cooking spray.
  • In the bowl of a stand mixer, cream together the shortening and sugars.
  • Add the eggs and vanilla and mix until combined.
  • Add in the milk and mix again.
  • Add the remaining dry ingredients and mix at medium speed for about 2 minutes, scraping the sides of the bowl as needed.
  • Pour half of the batter into the prepared pan.
  • Sprinkle half of the nut topping over the batter.
  • Then pour the remaining batter in the pan. Spread it lightly to cover the topping.
  • Sprinkle the remaining topping evenly over the batter.
  • Bake for 45-55 minutes or until the top springs back when you touch it.

This recipe is my go too for impromptu parties and pot lucks. It comes from my BFF's Mom.

2 c all purpose flour
2 c sugar
1/2` c cocoa, unsweetened
2 tsp baking soda
1/4 tsp salt
1 c canola oil
1 c buttermilk
2 eggs
1 c boiling water

Steps:

  • 1. Preheat oven to 350. Butter 13X9 cake pan or 2 8 inch round cake pans. Coat with cocoa or cocoa and cinnamon.
  • 2. Sift together all dry ingredients
  • 3. Blend in oil and buttermilk. Add eggs one at a time. Beat well.
  • 4. Add boiling water. (You can substitute 1 cup boiling espresso to make a Capuccino Cake.) Stir well. Don't Panic! The batter will look like chocolate milk. Pour into prepared pan(s). Let rest for 5 minutes before baking.
  • 5. Bake for 45 minutes or until knife in center comes out clean. Let cool. Enjoy. Although this cake needs no frosting, it looks great with powdered sugar sprinkled on top.

1-1/2 cups butter, softened
3 cups sugar
5 large eggs, room temperature
2 tablespoons lemon juice
1 teaspoon vanilla extract
3 cups all-purpose flour
3/4 cup 7UP soda
GLAZE:
1-1/2 cups confectioners' sugar
1 tablespoon lemon or lime juice
1 to 2 tablespoons 7UP soda
1/2 teaspoon grated lemon or lime zest, optional

Steps:

  • Preheat oven to 350°. Grease and flour a 10-in. fluted or plain tube pan., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in lemon juice and vanilla. Add flour alternately with 7UP, beating well after each addition. , Transfer batter to prepared pan. Bake until a toothpick inserted in center comes out clean, 65-75 minutes. Cool in pan 20 minutes before removing to a wire rack to cool completely., For glaze, in a small bowl, mix confectioners' sugar, lemon juice and enough 7UP to reach desired consistency. If desired, stir in zest. Drizzle over cake.
