HUNGARIAN NOODLES AND CABBAGE



Hungarian Noodles and Cabbage image

I think anyone who likes cabbage will like this recipe. It is simple to make, uses everyday ingredients and yet is immensely satisfying.

1 tablespoon salt
4 cups finely shredded cabbage
1 cup finely sliced onion (optional)
4 tablespoons butter
2 teaspoons sugar
1/4 teaspoon pepper
3 cups cooked egg noodles, broad, drained

Steps:

  • Mix the salt and cabbage together and let stand 30 minutes. Squeeze out as much liquid as possible.
  • Heat the butter in a deep skillet. Add the onions, cabbage, sugar and pepper. Cook over low heat, stirring frequently, until cabbage is browned, about 45 minutes. Add the noodles and toss to blend thoroughly.

5 slices bacon, diced
2 teaspoons sugar
1 teaspoon salt
6 cups chopped cabbage (1-inch squares)
3 cups cooked noodles (4 ounces uncooked)
1 cup sour cream
Paprika

Steps:

  • Saute bacon until crisp in large frying pan. Remove bacon; set aside. Stir sugar and salt into bacon drippings. Add cabbage, stirring until cabbage is coated with bacon drippings. Cover and cook 7 to 10 minutes. Add cooked noodles and bacon, stirring to blend. Adjust seasoning to taste. , Spoon into 2-quart baking casserole; cover tightly and bake at 325° for 45 minutes. Spread sour cream over top of casserole; sprinkle with paprika and return to oven for 5 minutes more.

This dish has its roots in Hungary but is also popular in Austria and Germany. My German grandmother made this using square pieces of pasta but I will post the recipe as I found it on the internet. I like to fry some chopped bacon and garlic together with the onions and cabbage. This a cheap but very good meal. Edit to say, and hope this helps for others who will try this recipe, the step of letting the cabbage sit in the salt is important, it does add a better flavor to the recipe and the texture.

This is a recipe my grandmother and mom would make. It can be served as a main dish or is great as a side. This is delicious served with beef stew.

1 (8 ounce) package fine egg noodles
2 cups cottage cheese
2 cups sour cream
½ cup chopped onions
2 tablespoons Worcestershire sauce
2 tablespoons poppy seeds
1 teaspoon salt
1 tablespoon grated Parmesan cheese
1 pinch ground paprika

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the noodles, and return to a boil. Cook the noodles uncovered, stirring occasionally, until they are cooked through, but still firm to the bite, about 5 minutes. Drain well.
  • Preheat an oven to 350 degrees F (175 degrees C). Butter a large casserole dish.
  • Mix the noodles, cottage cheese, sour cream, onion, Worcestershire sauce, poppy seeds, and salt together in a large bowl. Spread mixture in the prepared baking dish. Sprinkle Parmesan cheese and paprika on top.
  • Bake in the preheated oven until bubbly, about 30 minutes.

2 tsp sugar
1/4 tsp freshly ground black pepper
3 c cooked noodles
sour cream for serving

1 (3 lb) savoy cabbage, cored, outer leaves removed, shredded (about 8 cups)
2 tablespoons olive oil (probably more than this if you don't use a non-stick pan)
1 tablespoon granulated sugar
1 yellow onions (American) or 1 brown onion, chopped (Australian)
6 garlic cloves, chopped
2 leeks, thoroughly washed, outer leaves removed, chopped
fresh ground black pepper, to taste
1 (12 ounce) package egg noodles
1 tablespoon poppy seed

Steps:

  • Heat the oil in a large non-stick pan; add the sugar and heat gently until the sugar browns.
  • Add the onions, garlic and leeks; cook until they start to wilt.
  • Stir in the cabbage; sauté, stirring frequently, until the cabbage has softened, about 20 minutes.
  • Season to taste with pepper, and transfer the cabbage mixture and pan juices to a large bowl and keep warm.
  • Cook the noodles according to the packet instructions, then drain. (Alternatively, using pre-cooked vacuum-packed noodles works well, and saves time).
  • Quickly toss the noodles with the cabbage mixture and the poppy seeds.
  • Serve immediately.
  • Notes: Traditionally, this noodle and cabbage dish is served with sour cream. It's certainly delicious with the sour cream. Opt for a lower fat dish another night!

Steps:

  • Bring 4 quarts of water to a boil in a large pot for the noodles.
  • Meanwhile, heat 1 tablespoon of the oil in a large skillet over medium-high heat until shimmering. Add half of the cabbage, season with 1/4 teaspoon of salt, and cook, tossing frequently, until golden brown, 5 - 8 minutes. Transfer the cooked cabbage to a place. Repeat with the remaining cabbage.

Steps:

  • Mix together the flour, eggs, salt and water.
  • Knead dough until smooth.
  • Let rest, covered, about 19 minutes.
  • Roll thin.
  • Roll up as for a jelly roll, or cut into strips. (Cut as narrow as possible or into SMALL squares).
  • Dry noodles then cook the same as you would regular noodles.

8 oz egg noodles
2 Tbsp extra-virgin olive oil
3 sweet italian turkey sausages (about 9 ounces), casings removed
1 small onion, chopped
1 clove garlic, minced
3/4 c chopped roasted red bell peppers
1 Tbsp paprika
1 c low-sodium chicken broth
2 c chopped fresh spinach
1/3 c light sour cream
2 Tbsp chopped fresh parsley
freshly ground black pepper

Steps:

  • 1. Bring a large pot of salted water to a boil. Add the egg noodles and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
  • 2. Meanwhile, heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until crumbled and lightly browned, about 3 minutes. Add the onion; cook, stirring occasionally, until softened, about 3 minutes. Add the garlic, red peppers and paprika and cook, stirring 1 minute. Add the chicken broth, spinach, and 1/2 tsp. salt. Bring to a gentle simmer and cook until the sprinach is tender, about 4 minutes.

HUNGARIAN GOULASH WITH POPPY SEED NOODLES

1/4 cup Vegetable oil
3 pounds boneless, skinless chicken breast and/or thighs
1 pound onion, peeled and sliced
1 tablespoon paprika
1-1/2 teaspoon salt
1/8 teaspoon pepper
1 can condensed chicken broth (10 oz)
3 tablespoon flour
1 cup non-fat greek yogurt

Steps:

  • In a dutch oven or heavy saucepan heat oil over high heat. Add protein, a single layer at a time and cook over medium heat until cubes are well-browned on all sides. As they brown, remove to a separate bowl. This will take about 15-20 min. in all.
  • Add onions to drippings and saute until tender and golden brown, about 10 min.
  • Return meat to dutch oven. Add paprika, salt and pepper, stirring until well-blended with meat. Stir in 3/4 cup of the beef (chicken) broth.
  • Bring to boiling, then reduce heat and simmer covered for 2 hours, or until beef/chicken is fork-tender.
  • In small bowl, combine flour and remaining broth, stirring until smooth. Gradually add to meat mixture, stirring constantly. Simmer uncovered and stirring occasionally 15 min. longer.
  • Just before serving, place sour cream (greek yogurt) in small bowl. Slowly add 1/2 cup hot gravy (from pot) to mix with cream/yogurt. Then slowly add mixture to beef/chicken, stirring until well-blended. Heat, but do not boil. Serve with poppy seed noodles.

Steps:

  • It's best not to add water and just add the flour last to get the consistency right, adding a little at a time: Mix ingredients together. The art is in making the paste a loose but sticky consistency. It should pull away like taffy attached to the spoon and be slightly wet and shiny. (Try a few sample noodles in boiling water first.) Put a tablespoonful of mix on a wooden board. Cut off a small 1/4 inch piece from the spoonful ( about a teaspoonful) and flick it with a sharp knife to the edge of the board and into the boiling pot of water. Do this until the noodles are filling the surface of the pot-when they rise to the surface they are done - about 3 minutes. These are noodles that resemble gnocchi. Take them out with a perforated spoon and continue until all the mix is gone. Add butter to the noodles in the bowl so they don't stick. Note: large or small, tender or chewy, even "bad" noodles taste delicious!
