- In a large bowl, cream butter and cream cheese until blended. Gradually beat flour into creamed mixture. Divide dough into 3 portions. Shape each into a disk. Wrap and refrigerate 1 hour or until firm enough to roll., Preheat oven to 375°. For filling, in a small bowl, beat egg whites and vanilla on medium speed until foamy. Gradually add sugar, 1 tablespoon at a time, beating on medium after each addition until well blended. Stir in walnuts., Generously coat a work surface with confectioners' sugar. Roll 1 portion of dough into a 12-in. square about 1/8 in. thick, sprinkling with additional confectioners' sugar as necessary to coat well. Cut into sixteen 3-in. squares., Shape 2 teaspoons filling into a small log about 2 in. long. Place diagonally onto a square. Overlap opposite corners of dough over filling; pinch tightly to seal. Place 2 in. apart on greased baking sheets. Repeat with remaining dough and filling., Bake until bottoms are golden brown, 9-11 minutes. Remove from pans to wire racks to cool completely. Dust with confectioners' sugar., To Make Ahead: Dough can be made 2 days in advance. Wrap and store in an airtight container in the refrigerator. , Freeze option: Freeze cookies in freezer containers. To use, thaw before serving. If desired, dust with additional confectioners' sugar.

HUNGARIAN POPPY SEED COOKIES
Posted for the Zaar World Tour 2006-Hungary. From the "Best of Baking" cookbook. Lemon peel, clove and poppy seed often flavor Eastern European cookies. Poppy seed filling can be found next to the canned pie filling at the supermarket.

- In a large bowl, beat margarine or butter and granulated sugar until light and fluffy. Beat in lemon peel and egg. Stir in flour, baking soda and cloves, mixing well.
- Roll dough, between two pieces of waxed paper, into a 1/4-inch thick, 12"x10" rectangle. Refrigerate 30 minutes or until firm.
- Heat oven to 350ºF. Grease a large cookie sheet. Remove waxed paper from one side of cookie dough. Spread poppy seed filling on dough to within 1/4-inch of the edges. Roll up dough tightly, beginning with long (12") side, peeling off waxed paper as dough is rolled. Pinch edge of dough to seal well. Cut dough into 1/2-inch slices. Place on cookie sheet about 1-inch apart.
- Bake 10 to 12 minutes or until edges are light brown. Cool slightly; remove from cookie sheet. Sprinkle with powdered sugar.

HUNGARIAN DEEP-FRIED ANGEL WING COOKIES (CSOROGE)
Wonderful crispy and light as a feather fried cookies. Always made for Hungarian weddings. These pastries would also be served with coffee after Sunday dinner.

- About 20 minutes before frying fill a deep saucepan halfway to 2/3 full of oil, lard, or shortening, and heat slowly to 365°F or follow the manufacturer's directions for set-up if using an automatic deep-fryer.
- Sift together flour, sugar, and salt into a bowl.
- Mix together the egg yolks, sour cream, whiskey, and vanilla, then make a well in the center of the dry mixture and pour the wet mixture inches.
- Mix the ingredients until all of the flour is moistened.
- Let dough rest 1-2 minutes.
- Turn dough out onto a lightly floured surface and knead by folding opposite side over towards you, then using the heels of your hands to push the dough away, then give it a quarter turn and repeat process just until ingredients are well blended (always turn the dough in the same direction and use as little additional flour as possible).
- Shape dough into a smooth ball and roll out on a lightly floured surface into a rectangle 1/8-inch thick (if you don't have enough space to do this, divide dough in half first, then roll out the halves seperately).
- Use a spatula to loosen the dough, lift it slightly and sprinkle a little flour underneath anywhere the dough sticks.
- With a floured knife cut the dough into diamond shapes about 2-inches wide at the center and 6-inches long (you can make a cardboard pattern beforehand and use that as a guide if you wish).
- Make a 1-inch slit lengthwise at the center of each cookie, and pull one end through the opening, twisting slightly as you do.
- Deep fry only one layer of cookies at a time (don't crowd the pan).
- With a fork, turn the cookies several times as they fry and as they rise to the surface, but be careful not to pierce the cookie.
- Fry until lightly browned (about 3 minutes).
- Drain cookies over fat for a few seconds and then drain on paper towels.
- Sprinkle cookies with powdered sugar while still hot.

HUNGARIAN CREAM CHEESE COOKIES WITH PRUNE LEKVAR
This is a very flaky cookie that has been in my family years. My grandmother passed it down to all. I've seen it called many other names but in my house we've nicknamed it: Mom's Hurry Up Cream Cheese Cookies, because if your kitchen is too warm they do become a bit difficult to handle. So if you plan on having a day of baking.... do these first! You're gonna love them. NOTE: Very easy to make total time includes refrigeration of 1 hr if your kitchen is warm from holiday baking.

- Cream together the cream cheese and butter.
- To this, add the flour - in small portions by hand.
- When it comes together, turn over on a lightly floured surface and add the rest of the flour to form a dough (IT WILL BE SOFT - but it should be smooth)
- Refrigerate for about 1 hour.
- Roll out to about 1/4 inch thick on a floured surface.
- Cut into squares about 2 x 2 and fill center with about 1/4 tsp of the lekvar.
- Bring together opposite corners and pinch and fold over.
- Bake on a lightly greased baking sheet for about 15 - 20 minutes until lite gold at 350F (Be careful not to let them burn).
- While still warm, role in powdered sugar and let cool.
- Once cooled, repeat the powdered sugar coating once more.
- You can use any flavor lekvar or even an almond paste.
- It just has to be really thick so it doesn't run while baking.

- Place in the center of a bread board one cup of flour. Make a dent or well in the center. Add the whole yolks, sour cream, sugar, rum and salt. With a fork mix until the liquids are well combined.
- Gradually work into the flour. The dough should be of the consistency of a noodle dough. Knead for a few minutes to make the dough smooth.
- Split the dough into 2 portions. On a lightly floured board roll out each section until paper thin.
- If you have a pie crimping wheel, use it to cut the dough into squares of 3 1/2-inches or a rectangle of 3 1/2 x 2 1/2-inches. They will have beautiful serrated edges.
- With a paring knife make three or four gashes about 2 to 2 1/2-inches evenly spaced.

- In a large bowl blend the ingredients with a wire pastry blender until the ingredients form when squeezed together.
- Form into balls (or nuggets) by tablespoons; dough will be very crumbly, I press and form them in my palms instead of my fingers.

- In bowl of a food processor, process nuts until coarsely ground. Set aside.
- Place egg whites in bowl of an electric mixer with a pinch of salt. Beat until just beginning to stiffen. Add brown sugar and beat until stiff peaks form and the mixture is glossy. Carefully fold in nuts with a flexible rubber spatula.

- Preheat oven to 350.
- Mix flour, baking powder, sugar, and salt in large mixing bowl. Add butter or margarine, and, using clean hands, blend until mixture resembles coarse meal. Add egg and sour cream, and mix until dough holds together. Cover and refrigerate for about 2 hours.

HUNGARIAN KIFLI (CHRISTMAS COOKIES) WITH DATES
I woke up a few mornings ago thinking about a special Christmas cookie we used to make using my Hungarian grandmother's recipe. I could remember the cookie, but not the name. Thanks to Facebook (who knew a friend in Cabo had a friend in Hungary!) I got the name but an internet search didn't come up with something exactly like I remembered. I took the closest, which used raisins, and came up with this which is EXACTLY as I remembered, but much easier. NOTE: if you like the filling you might want to make about 1.3 times the amount to overstuff your Kifli. If there's any left over roll it into balls, cover with sugar and call it a truffle. Hope someone out there enjoys this!

- For the dough: mix butter, cream cheese and flour in food processor. Split into two balls, wrap in plastic wrap and refrigerate overnight.
- For the filling: Mix all ingredients in food processor, let stand at room temperature.
- Preheat oven to 350 degrees. Remove the dough from refrigerator, roll out on floured cutting board, cut into about 2 inch squares. Put about one teaspoon filling onto each square. Roll diagonally, then crimp in the middle to make a crescent. Place on ungreased cookie sheet and bake for 20 minutes or until golden. Sprinkle with powdered sugar as soon as removed from oven.
- All of the recipes I searched agreed that letting the dough rest overnight is key to getting it nice and flaky.

This recipe has been passed down for generations throughout my family. It tends to be a rich holiday treat for us and we never fail to share it with others. After MANY requests for the recipe I have decided to make it my first RecipeZaar post. I hope you enjoy. As a side note, the jam can be any seedless variety, raspberry just happens to be my favorite. The dough is meant to be flaky so be certain not to over handle.

- Preheat the oven to 325.
- Grease the bottom and sides of a 9x9x2 cake pan and set aside.
- Cream the butter, sugar, and yolks.
- Fold in flour and walnuts.
- Divide the batter in half. Do not over handle the dough. One half will serve as the top layer and the other as the bottom.
- Take a piece of batter and gently flatten it using your fingers. You will see that the batter tends to make its own sections. Work with those. Place this section on the bottom of the cake pan and continue until you have covered the bottom of the cake pan in a patchwork manner. Do not worry about the dough not looking smooth in the pan, you will fix that in a minute.
- If you have leftover dough from the half, fill in holes and build up areas that may be thinner than others.
- Take the back of a spoon and gently smooth the edges of the dough together so no holes are apparent.
- Spread a thin layer of jam over the dough. Do not make the layer thick, you are not making PB and J here.
- Use the final half of batter to make the top layer using the same technique as above.
- Place in the oven at 325 degrees for 30-45 minutes. At around 25 minutes start peaking in the oven, the dough should be a nice golden brown color when it is finished.
- Let cookies cool completely before cutting into small squares.

KIFLIE, HUNGARIAN COOKIES
This is a cheat version of a recipe my Grandmother used to make. She spent days folding and greasing the dough so it came out layered and flaky. Since I have neither the time or patience to make that dough I found an easier method. There are two ways to fold these and I'll cover both below.

- Lay out puff pastry on floured board.
- Combine grated walnuts and the sugars, mix thoroughly.
- Add cream until mixture is a thin paste, spreadable but not runny.
- Form cookies.
- Method 1. spread filling on top of pastry, edge to edge in one direction but leave 1 inch uncovered on both edges in the other direction.
- Starting with an uncovered edge roll the pastry into a cylinder. Wet the uncovered edge when you reach it and seal it to the side.
- Place rolled dough in freezer for no more than 20 minutes to firm it for cutting.
- Cut dough cylinder into 1/2 inch circles and place on greased cookie sheet.
- Method 2. Cut pastry sheets into squares 2 inches by 2 inches.
- Place a 12 teaspoon of the filling into the center of the square and bring two opposite points of the square together over the top of the filling.
- Either method, bake cookies at 425 degrees Fahrenheit for 12 minutes. .
- Allow to cool and enjoy.

Steps:
- Mix margarine and cottage cheese.
- Add flour until well-mixed and smooth dough forms.
- Cover and refrigerate overnight, or at least a couple of hours.
- (Shape into walnut-sized balls before or after chilling).
- Roll each ball on floured board to the size of a small saucer.
- (You can mix some sugar with the flour for rolling).
- Make filling by mixing sugar and nuts in blender or food processor till finely chopped.
- Place TSP.
- of filling in center of circles.
- Fold circles in half and seal.
- Form into crescents.
- Sprinkle with sugar and place on ungreased baking sheets.
- Bake at 375 for 15-20 minutes or until golden.
- ***NOTE:You may need to make more filling.
- Also, you may adjust the size of the dough circles too for different sized cookies.
- If you do this, you may need to adjust baking time too!

- Mix and blend flour, baking powder, water, vinegar, and egg yolks until dough comes clean of hands. Chill.
- Butter Mixture:.
- Mix margarine, lard and flour together and allow it to soften.

- Repeat this process 4 times; next day, cut the dough into squares with a hot knife.

How to make Hungarian Nut Horn Cookies

- Mix softened butter and cream cheese together until smooth.
- Gradually add flour until the mixture reaches a doughy consistency.
- Wrap dough in plastic wrap and refrigerate at least 2 hours.
- For filling, combine walnuts, sugar and milk. Stir until consistency is even.
- When dough has been refrigerated 2 hours, preheat oven to 350 degrees F.
- Roll out cold dough and slice into squares.
- Spread filling across squares of dough and roll lengthwise to create a cigar shape, or roll diagonally for a crescent shape.
- Gently roll each piece in granulated sugar until lightly coated, then transfer to a cookie sheet.
- Curve ends inward for crescent shape if desired.
- Bake 8-12 minutes or until lightly browned.

Cut into sixteen 3-in. squares., Shape 2 teaspoons filling into a small log about 2 in. long. Place diagonally onto a square. Overlap opposite corners of dough over filling; pinch tightly to seal. Place 2 in. apart on greased baking sheets. Repeat with remaining dough and filling., Bake until bottoms are golden brown, 9-11 minutes. Remove from pans to wire racks to cool completely. Dust with confectioners' sugar., To Make Ahead: Dough can be made 2 days in advance. Wrap in plastic and place in a resealable bag. Store in the refrigerator., Freeze option: Freeze cookies in freezer containers. To use, thaw before serving. If desired, dust with additional confectioners' sugar.
