My husband's aunt passed along this super-easy recipe for this Hungarian sweet bread, and I made a couple of revisions to my family's taste. Cinnamon, poppy seed, or walnuts are a traditional filling. Her recipe is for cinnamon, but one of my favorite ways is to break from tradition and use a cocoa/sugar/butter/vanilla mixture. It's delicious, especially when the leftovers are toasted and buttered!

4 cups all-purpose flour
¼ cup white sugar
1 teaspoon salt
1 (.25 ounce) envelope active dry yeast
1 egg
¼ cup melted butter
1 ¼ cups warm milk (110 degrees F/45 degrees C)
1 teaspoon vanilla extract
melted butter for brushing
1 teaspoon ground cinnamon
⅓ cup brown sugar

Steps:

  • Place flour, white sugar, salt, and yeast into the bowl of a stand mixer. In a bowl, whisk together egg, melted butter, warm milk, and vanilla extract; pour into the flour mixture. Using dough hook attachment, mix on low until the flour is moistened and a dough forms, then increase speed to medium, and continue kneading until smooth and elastic, 4 to 5 minutes.
  • Place dough into a greased bowl, cover, and allow to rise in a warm place until doubled in bulk, about 1 1/2 hours.
  • Punch down dough, turn out onto a floured work surface, and divide into 2 equal pieces. Roll each piece into a 1/3 inch thick rectangle. Brush each square with melted butter. Mix together cinnamon and brown sugar in a small bowl, then sprinkle evenly over the two rectangles.
  • Roll each firmly into a log, pinch the ends closed, and tuck them underneath. Place each into a greased, glass loaf pan. Cover, and allow to rise in a warm place until doubled in bulk, about 45 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush the tops of the loaves with melted butter, then bake in preheated oven until loaves are golden brown, and sound hollow when tapped, about 30 minutes.

Yield Makes one 9-by-5-inch loaf

1 package (1/4 ounce) active dry yeast
1 1/4 cups warm milk
1 cup sugar
1 cup (2 sticks) unsalted butter, melted and cooled, plus more for brushing
3 large egg yolks
1 teaspoon salt
3 1/2 cups all-purpose flour, plus more for dusting
2 tablespoons ground cinnamon

Steps:

  • In the bowl of a standing electric mixer fitted with the dough hook, dissolve the yeast in 1/4 cup of the warm milk. Sprinkle with a pinch of the sugar and let the mixture stand until the yeast comes alive and starts to foam, about 5 to 10 minutes.
  • Turn the mixer on low speed and add the remaining 1 cup milk, 1/2 cup of the sugar, the 1 cup melted butter, the egg yolks, and salt. Add 2 cups of the flour and turn the speed up to medium; continue to mix until incorporated. Gradually add the remaining 1 1/2 cups flour and continue to mix until the dough holds together and pulls away from the sides of the bowl; the dough will be very soft.
  • Turn the dough out onto a lightly floured work surface and knead until smooth and elastic, about 10 minutes. Put the dough in a large bowl. Cover with a kitchen towel or plastic wrap and let rise in a warm place until doubled in size, about 1 1/2 hours. Test the dough by pressing 2 fingers into it. If indents remain, the dough is adequately risen.
  • Combine the remaining 1/2 cup sugar and the cinnamon in a small bowl. Brush the bottom and sides of a 9-by-5-inch loaf pan with melted butter.
  • On a lightly floured work surface, roll the dough into a rectangle about the size of the loaf pan. Brush the surface of the dough with melted butter and sprinkle the cinnamon sugar evenly across. Roll the dough up, jelly-roll style, into a long cylinder, and pinch the seam closed. Put the dough in the prepared loaf pan, seam side down. Make sure the dough touches all sides of the pan. Cover with plastic wrap and let rise a second time, until the top of the dough is nearly level with the top of the loaf pan, about 20 minutes.
  • Preheat the oven to 350°F. Brush the dough with more melted butter.
  • Bake until your kitchen smells like cinnamon and the bread is golden brown, 45 minutes to 1 hour. Let cool in the pan for 5 minutes, then turn out onto a wire rack to cool completely.

Batter:
1/2 cup all-purpose flour
3 large eggs
3/4 cup sour cream
1/4 cup orange juice
1/4 cup (1/2 stick) unsalted butter or margarine, softened
3 tablespoons sugar
1 teaspoon vanilla extract
1 teaspoon double-acting baking powder
1/4 teaspoon salt
Filling:
1 cup (8 ounces) small-curd cottage or ricotta cheese
4 ounces cream cheese, softened
1 large egg yolk
2 tablespoons sugar
1/2 teaspoon vanilla extract
1/2 teaspoon fresh lemon juice or ground cinnamon (optional)

Steps:

  • 1. Preheat the oven to 350°F (325°F if using a glass pan). Grease a 9-inch square baking pan.
  • 2. To make the batter: In a blender, food processor, or large bowl, beat together all the batter ingredients until smooth.
  • 3. To make the filling: Combine all the filling ingredients.
  • 4. Pour half of the batter into the prepared pan, drop the filling by heaping tablespoonfuls over the batter, then carefully top with the remaining batter (the layers will mix a bit). The loaf can be covered and refrigerated for up to 24 hours. Return to room temperature before baking.
  • 5. Bake until puffed and lightly browned, 50 to 60 minutes. Serve warm, accompanied with a fruit sauce or fresh fruit if desired.

2 tablespoons granulated sugar
1 1/2 teaspoons ground cinnamon
3 1/2 cups Original Bisquick™ mix
1/3 cup granulated sugar
3 tablespoons butter, softened
1/2 cup milk
1 teaspoon vanilla
1 egg
2 tablespoons butter, melted
1/2 cup powdered sugar
2 to 3 teaspoons water

Steps:

  • Heat oven to 375°F. Grease bottom and sides of 9x5-inch loaf pan with shortening or cooking spray. In small bowl, mix 2 tablespoons granulated sugar and the cinnamon; set aside.
  • In medium bowl, stir Bisquick™ mix, 1/3 cup granulated sugar, 3 tablespoons softened butter, the milk, vanilla and egg until soft dough forms.
  • Shape dough into 1-inch balls; roll in cinnamon-sugar. Place dough randomly in pan. Sprinkle with any remaining cinnamon-sugar. Drizzle 2 tablespoons melted butter over dough balls.
  • Bake 25 to 30 minutes or until golden brown. Cool in pan on cooling rack 10 minutes. Meanwhile, in small bowl, mix glaze ingredients until smooth and thin enough to drizzle.
  • Loosen sides of loaves from pan; remove loaf from pan to cooling rack. Drizzle glaze over loaf. Serve warm.

1/4 cup butter, softened
1 cup plus 2 tablespoons sugar, divided
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 cup buttermilk
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, beat butter until light and fluffy, about 1 minute. Gradually beat in 1 cup sugar. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Combine the flour, baking powder, baking soda and salt. Add to creamed mixture alternately with buttermilk just until mixed., Transfer half of the mixture to a 9x5-in. loaf pan coated with cooking spray. Combine cinnamon and remaining sugar. Sprinkle three-fourths of mixture over batter.
