1 (14.4 ounce) package graham crackers, crushed
½ cup butter, melted
2 (8 ounce) packages cream cheese, softened
1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
1 cup white sugar
1 cup white sugar
¾ cup water
2 tablespoons cornstarch
1 pinch salt
¼ cup mashed huckleberries
1 teaspoon lemon juice
1 teaspoon red food coloring
1 cup huckleberries

Steps:

  • Mix graham cracker crumbs and butter together in a bowl until crumbs are evenly moistened. Press over the bottom of a 9x13-inch baking pan to make a crust.
  • Mix cream cheese, whipped topping, and 1 cup sugar together in a bowl until smooth. Spread evenly over crust.
  • Combine 1 cup sugar, water, cornstarch, and salt in a saucepan over medium heat; cook and stir until clear, 3 to 5 minutes. Stir in mashed huckleberries, lemon juice, and red food coloring; simmer until thickened, about 5 minutes.
  • Spread huckleberry mixture over cream cheese layer. Scatter whole huckleberries on top.

The best huckleberry dessert ever. It is a no-bake, cheesecake dessert that hooked this midwestern girl on huckleberries. Passed down from Mama Marchbanks.

1 individual package chocolate graham crackers, crushed
1 stick unsalted butter, melted
1 (8 ounce) package cream cheese, softened
1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed
1 cup powdered sugar
1 teaspoon vanilla extract
3 cups huckleberries
¼ cup apple juice
1 cup white sugar
3 tablespoons cornstarch

Steps:

  • Mix graham crackers and butter together in a bowl and pat crust into the bottom of a 9x13-inch baking pan.
  • Mix cream cheese, whipped topping, powdered sugar, and vanilla extract together with an electric mixer. Spread filling over the crust.
  • Crush 1 cup huckleberries in a bowl with a potato masher. Add apple juice and cook in a saucepan over low heat for 2 minutes.
  • Mix sugar and cornstarch in another bowl. Stir slowly into the hot berry mixture. Bring to a boil, stirring constantly. Cook and stir until thick, about 15 minutes. Add remaining berries. Pour mixture over the filling.
  • Refrigerate cheesecake until berries cool, about 3 hours.

This was a well earned dessert in my family, because we had to pick huckleberries every year for hours, and days on end just to have enough huckleberries to make a cheesecake every month or so. But it was worth the work just to get to eat it.

2 1/2 c crushed graham crackers
1/2 - 1 c butter, melted
1 can(s) sweeten condensed milk
1 - 8oz pkg cream cheese, room temperature
1 tsp vanilla
1/3 - 1/2 c lemon juice
1 - 2 c huckleberries , water to just cover berries, sugar to taste, thicken with cornstarch - or your choice of fruit

Steps:

  • 1. Crush crackers until fine, put in bottom of 8x8 in. pan. Pour melted butter over crumbs and press to make crust. Put in fridge to chill.
  • 2. Mix room temp. cream cheese and sweeten condensed milk until smooth. Add vanilla, mix. Add lemon juice, mix , to taste. Pour over cracker crust. Chill in fridge.
  • 3. Put Huckleberries in saucepan and just cover with water, add sugar to taste, bring to a boil and thicken with cornstarch. Pour over crust and cream cheese as a topping then chill for about 30 min. You can use other fruit, such as cherries, strawberries, blueberries, raspberries, or you can drizzle chocolate and/or carmel over the top.
