Bobby Flay's Hot Wings with Blue Cheese-Yogurt Sauce image

1 cup Greek yogurt
1/4 cup crumbled blue cheese (Bobby likes cabrales)
2 tablespoons finely grated red onion
2 tablespoons finely chopped fresh cilantro
Kosher salt and freshly ground pepper
Peanut oil, for frying
1 1/2 cups all-purpose flour
Kosher salt and freshly ground pepper
3 tablespoons ancho chili powder
1 1/2 teaspoons garlic powder
3 pounds chicken wings, split at the joint, tips removed
1/2 cup red wine vinegar
1 to 2 tablespoons pureed chipotle chiles in adobo sauce
1 tablespoon New Mexico chili powder
1 tablespoon dijon mustard
1 to 2 tablespoons honey
1 stick unsalted butter, quartered
Chopped fresh cilantro, for garnish (optional)
Jicama sticks, for serving

Steps:

  • Make the sauce: Combine the yogurt, blue cheese, red onion, cilantro, and salt and pepper to taste in a small bowl. Refrigerate at least 30 minutes before serving to allow the flavors to meld.
  • Make the wings: Heat 2 inches of peanut oil in a large high-sided pan until a deep-fry thermometer registers 375 degrees F.
  • Stir together the flour, salt and pepper to taste, 1 tablespoon ancho chili powder and the garlic powder in a shallow bowl. Season the wings with salt and pepper and add in batches to the flour mixture to lightly coat. Tap off the excess flour, add the wings to the oil in batches and fry until golden brown and cooked through, 8 to 10 minutes. Transfer with a slotted spoon to a paper-towel-lined plate.
  • Bring the vinegar, chipotle puree, the remaining 2 tablespoons ancho chili powder and the New Mexico chili powder to a simmer in a large high-sided saute pan over medium heat. Remove from the heat and whisk in the mustard, 1 teaspoon salt, the honey and butter until smooth. Add the wings and toss to coat. Garnish with cilantro, if desired, and serve with the jicama sticks and blue cheese sauce.

These Slow Cooker BBQ Hot Wings with Blue Cheese Dip will be a hit at your next party! The wings are slow-cooked in a perfect blend of seasoning and spices.

1 package frozen wings
1/2 cup water
2 Tbsp. liquid smoke
kosher salt (to taste)
1 tsp. garlic (minced )
¾ c. ketchup
½ c. cider vinegar
¼ c brown sugar (firmly packed )
3 Tbsp. Worcetershire sauce
1 ½ Tbsp. Yellow mustard
1 Tbsp soy sauce
1 to 2 Tbsp sriracha hot sauce
½ tsp chili powder
3/4 c. mayonnaise
3/4 c. sour cream
1 c. buttermilk
1 tsp. worcestershire sauce
1 tsp. lemon juice
1 package hidden valley ranch mix (dry, regular, not buttermilk)
1/2 c. blue cheese crumbles

Steps:

  • Mix water and liquid smoke in the bottom of a large slow cooker. Add frozen wings and sprinkle with kosher salt. Cook on high for about 4 hours.
  • Mix together all the ingredients for the blue cheese dip except for the blue cheese crumbles. Then gently stir in the blue cheese. (You can also blend them in if you don't like big pieces of cheese). Refrigerate for at least a couple of hours, the longer the better- it just gets more flavorful.
  • Just before wings are done cooking, add all sauce ingredients to a small sauce pan and bring to a boil. Reduce heat and simmer about 15 minutes.
  • When wings are done cooking in the slow cooker, dip each wing in the sauce and place on a cookie sheet. Place in oven under the broiler on high for a couple of minutes, then dip each wing again and place on the cookie sheet again with the other side of the wing facing up. Place under the broiler again for a couple of minutes. Place wings on a serving plate and baste with the remaining sauce.
  • Serve with blue cheese dip and celery.

1/4 cup mayonnaise
1 small clove garlic, chopped
1 tablespoon milk or buttermilk
Juice of 1/2 lemon

Vegetable or peanut oil, for frying
1 cup all-purpose flour
1 tablespoon paprika
3 pounds chicken wings, split at the joints, tips removed
1 1/2 cups Frank's RedHot sauce (or 3/4 cup other hot sauce)
1 stick unsalted butter
2 tablespoons honey

Steps:

  • Make the dip: Pulse the sour cream, blue cheese, mayonnaise, garlic, milk and lemon juice in a food processor until combined but still chunky. Season with salt and pepper. Cover and refrigerate until ready to serve.
  • Make the wings: Heat 1 inch of vegetable oil in a large deep skillet over high heat until a deep-fry thermometer registers 375 degrees F. Set a rack on a rimmed baking sheet.
  • Mix the flour and paprika in a shallow dish. Dredge the wings in the flour mixture to coat, tapping off the excess. Fry the wings in batches, turning as needed, until cooked through and deep golden brown, about 15 minutes. (Return the oil to 375 degrees F between batches.) Remove with tongs and transfer to the rack to drain.
  • Meanwhile, combine the hot sauce, butter and honey in a medium pot over medium heat until the butter melts. Continue to cook, stirring, until the sauce thickens slightly, about 10 minutes. Reserve one-quarter of the sauce for serving. Add the cooked wings to the pot and toss with the remaining sauce. Serve with the blue cheese dip and reserved sauce.

2 teaspoons granulated sugar
1/4 cup hot pepper sauce
1 lb whole chicken wings or 1 lb whole chicken drummettes
1/2 cup light salad dressing or 1/2 cup mayonnaise
1/4 cup crumbled blue cheese
1 tablespoon lemon juice
1/4 teaspoon onion powder
1 tablespoon garlic powder
1/2 teaspoon Worcestershire sauce
1/2 cup sour cream

Steps:

  • Combine first 4 ingredients in small cup.
  • Stir.
  • Discard tip and cut wings apart at joints.
  • Brush sauce over both sides of chicken pieces.

Top with half the sauce and toss to coat. Lock pressure lid. Press pressure function; select poultry setting. Press timer; set to 1 minute. 1 8-ounce package cream cheese
2 garlic cloves, minced
1 pinch kosher salt
1/4 cup heavy cream or half and half
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon hot sauce, more for serving if desired
1/4 teaspoon freshly ground black pepper
4 ounces blue cheese (about 1 cup, crumbled)
2 tablespoons chopped chives

Steps:

  • Preheat oven to 325 degrees. Place cream cheese in bowl of a food processor and pulse to soften.
  • Using a mortar and pestle or flat part of a knife, mash garlic and salt together until it forms a paste. 4 tbsp butter
5 tbsp hot sauce such as Tabasco sauce or Crystal
1 tbsp white wine vinegar
900g/2lb - 1kg/2lb 4oz chicken wings
¼ tsp celery salt (optional)
flour , for dusting
sunflower oil , for frying
celery sticks, to serve
150ml buttermilk
150ml soured cream
85g blue cheese , crumbled
1 garlic clove , crushed
¼ tsp sweet paprika

Steps:

  • Slowly melt the butter, hot sauce and vinegar in a medium saucepan, then pour into a large bowl. Mix all the ingredients for the blue cheese dip together with a pinch of salt. Cover and chill until needed.
  • Trim the end off each chicken wing, then cut each in half through the joint. Tip the wings into a bowl. Add the celery salt (if using), seasoning and enough flour so they're all evenly coated.
  • Heat 4 tbsp oil in a large, deep frying pan and add the wings (do this in 2 batches if your pan isn't big enough). Fry them, stirring frequently, until they are cooked through and browned all over, about 10 mins for each batch. As soon as they are cooked, transfer them to the bowl of butter sauce and stir well. Repeat with the second batch. Serve the wings on a platter with any extra buttery sauce poured over and the blue cheese dip and celery sticks on the side
