3 pounds chicken wings
Oil for deep-fat frying
1/2 cup butter, cubed
1/2 cup maple syrup
1/2 cup Louisiana-style hot sauce
1/4 cup packed brown sugar
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons water
1-1/2 teaspoons cornstarch

Steps:

  • Cut each chicken wing into 3 sections; discard wing tip sections. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry chicken, a few pieces at a time, for 8 minutes or until golden brown and juices run clear, turning occasionally. Drain on paper towels., In a small saucepan, melt butter. Stir in the syrup, hot sauce, brown sugar, salt and pepper. Combine water and cornstarch; stir into sauce. Bring to a boil; cook and stir for 2 minutes or until thickened. , Place wings in a large bowl; pour sauce over wings and toss to coat.

2 Tbsp all-purpose flour
1 tsp salt
1 tsp dried sage
2 lb chicken drumettes and wingettes
2 1/2 Tbsp red hot sauce (frank's)
2 Tbsp unsalted butter, melted
1 canned chipotle pepper, minced
2 Tbsp pure maple syrup

Steps:

  • 1. Preheat the oven to 500°. Line a large baking sheet with foil and spray with vegetable oil. In a bowl, mix the flour with the salt and sage. Add the chicken and toss to coat. Spread the chicken on the baking sheet in a single layer and spray with vegetable oil. Roast the chicken for 45 minutes, turning once or twice, until browned and crispy.
  • 2. In a bowl, whisk the hot sauce, butter, chipotle pepper and maple syrup until combined. Add the chicken wings to the sauce and toss; serve.
