- Preheat the oven to 400˚ F. Melt the butter with the garlic in a saucepan.
- On a work surface, roll out the pizza dough into an 8-by-18-inch rectangle. Brush with one-third of the garlic butter and top with 1 cup mozzarella. Arrange pepperoni slices along one long side of the dough, then continue adding pepperoni to cover half of the dough. Tightly roll up the dough into a log, starting with the pepperoni side, then slice into 16 rounds.

HOMEMADE HOT ROLLS
We have a small close-knit community, so when someone dies, the women get together and prepare dinner for the family. I had taken food to one of these dinners, and helped served. I was lucky enough to get in line before the hot rolls were all gone. They were DELICIOUS! I asked who made them, and found out it was a woman by the name of Alice Ash. I asked her for the recipe, but she didn't have the recipe with her. A few days later, I received the recipe from my mom, who'd gotten it from her neighbor. - Dissolve yeast in warm water.
- Stir sugar, salt, and half of the flour into the yeast mixture.
- Beat in the eggs and shortening.
- Add the remaining flour and beat until smooth.
- Scrape down the sides of bowl, and cover with a cloth, and let rise in a warm place, until doubled in bulk (approx. 30 minutes).
- Stir down the dough.
- Add more sifted flour until it can be worked with hands (just add gradually until it feels right).
- Knead a few times, not a lot; just get it worked in and ready to pinch off into rolls.
- Pinch the rolls off (medium sized), and place in a greased pan.
- It may take two pans; one small, and one larger, for all the dough.
- You can also make loaves of bread out of it.
- Allow it to rise again, until doubled in bulk.
- Bake at 375-400 for 15-20 minutes .
- When done, brush with butter (while hot).
- Note: You can also use this recipe to make bread loaves (it should make 2 loaves in traditional bread pans), or cinnamon rolls.
- For the cinnamon rolls, roll the dough out, sprinkle with cinnamon and sugar, and roll up like a jelly roll.
- Slice off, place in a baking pan, and bake at the same temperature as the rolls, until done.
- Coat with frosting made with powdered sugar, milk, and a dash of vanilla.

- Heat milk and shortening in large bowl in microwave until shortening melts.
- Meanwhile, dissolve yeast and pinch of sugar into warm water.
- In a smaller bowl, whisk the salt, soda, sugar and first portion of flour.
- Stir in half the flour mixture into the milk mixture. Stir in the yeast mixture, then stir in the remaining flour.
- Let rise 1 1/2 hour in a warm place covered with a damp dish towel.
- Whisk together baking powder and last portion flour. Stir into the batter.
- Cover bowl with a plate and let rise in refrigerator 12-24 hours.
- Shape rolls (see two options below) and let rise in a warm place for 1 1/2 - 2 hours. Bake at 400 degrees for about 15 minutes or until done.
- PARKERHOUSE METHOD.
- Roll dough out on floured board to about 3/8" thick. Place on cookie sheet and brush with melted butter. Fold each one almost in half.
- CLOVERLEAF METHOD.
- By hand, shape dough into 1" balls, dip in melted butter and place 3 per hole in a greased muffin tin.
- Put remaining dough back into fridge and use within the next few days. Makes great cinnamon rolls too.

After a great deal of searching for this style of roll for the 2008 4th of July Holiday, I fiddled with the recipe and came up with a much better version. I hope that you enjoy these as much as we do. They are great rolls! Rich in eggs and butter, this dough is soft and tender and does not require excessive kneading. It is easy to make by hand and even easier if you have an electric mixer with a dough hook. Please note that when I make these rolls I use the 'dough setting' on my bread maker to mix the ingredients and get through the first rise. Please follow your bread makers instructions for adding ingredients if you choose to use your bread maker, as well. The times listed reflect making the buns manually.

- Combine the yeast and sugar with 1/4 cup of the warm water in a large bowl or in the bowl of an electric mixer. Let stand for 5 to 10 minutes until the mixture becomes frothy. (This allows the yeast to "bloom.").
- Add the salt and flour. Lightly beat 2 of the eggs with the milk and add this mixture to the bowl. Melt 3 tablespoons of the butter and add this as well. Have the remaining 1/4 cup warm water ready. If you are mixing by hand, add some of the water and begin to mix, adding the water as needed. If using an electric mixer, attach the dough hook and jog the machine (turn it on and off) until the dough begins to form. This prevents the flour from jumping out of the mixing bowl. Add the remaining warm water as needed; the dough usually takes the full amount. When a soft dough has formed, knead for 5 minutes by machine or about 8 minutes by hand. This is a soft bread and does not require as much kneading as chewier types The finished dough should be soft but dense and should NOT be sticky.
- Shape the dough into a ball and lightly oil it with the salad oil. Place it in a large bowl. Cover with plastic wrap or a slightly damp towel and let rise in a warm place for about 1 hour until doubled in bulk.
- Punch the dough down and move to a work surface. Lightly dust the work surface with flour. Shape the dough into a square. Using a knife, cut the dough into 12 equal pieces.
- With the remaining 1 tablespoon butter, lightly grease a baking sheet that is at least 15 inches long. Shape the dough into uniform 7-inch-long tubular pieces. It is important that all the pieces be the same length. Place the tube in a line, side by side, down the center of the baking sheet, leaving a 1/2-inch gap between them. Put the pan in a warm place and let rise a second time.
- Prepare a thick egg wash by mixing the remaining egg with 2 tablespoons water. After 15 to 20 minutes, the tubes of dough will have risen enough that they will be touching.
- Generously brush the tubes with egg wash, return the pan to the warm spot and let the dough rise until almost doubled in size, 10 to 15 minutes. Preheat the oven to 350 degrees F.
- Place the buns in the oven and bake for about 30 minutes until deep golden brown.
- Let the buns cool on the baking sheet for at least 15 minutes, then run a spatula under them to make sure they are not sticking to the pan. Using 1 or 2 spatulas, carefully lift the baked dough in one piece onto a rack to cool. It is crucial that you not let the buns break or tear apart. After an hour, when the baked dough is completely cooled, move it in one piece to a cutting board. Using a serrated knife, slice down the center of each tube. You will lose half a tube on each end (which is why you need 13 tubes to make 12 buns). The place where the tubes met is now the center of each bun. They will open naturally when it comes time to stuff them, but you can make a small incision to ensure that this happens.
- Wrap the buns in plastic wrap until ready to use. If you do not intend to use all 12 buns, freeze the extras and defrost when needed.
- COOK'S NOTE: To infuse the dough with the delicate flavor of saffron, chop 1 teaspoon saffron threads and add to 1/4 cup water in a small pan. Bring the mixture to a boil over medium-high heat, then remove from the heat. Let cool to lukewarm and substitute for the 1/4 cup water added for mixing. Since the dough will be golden to start with, look for a dark brown top before removing from the oven.

- 1. In a large mixing bowl, dissolve yeast in the warm water. Add sugar, salt, shortening & 3 cups of flour. Mix until pancake batter consistency (it will look chunky, because the Crisco will not be completely melted). Cover with plastic wrap & set on top of pan ½ filled with hot (not boiling) water. Cover with towel & let rise until double in a warm area (about 30 - 45 minutes).

- In a medium-sized saucepan, put 1/2 C sugar & Crisco All-Vegetable Shortening in the 1 cup of BOILING water. Turn the heat off when all ingredients are dropped in the saucepan. Dissolve 1/2 C sugar & Crisco All-Vegetable Shortening. Once all dissolved, add in salt. Dissolve salt. Once everything is all dissolved add in the one cup of the ICE-COLD WATER. Stir to become a luke-warm mixture. Let mixture sit aside. In a separate cup, put the 1/4 cup of luke-warm water and dissolve the 1/2 TSP of sugar in it. Once all dissolved, but still luke-warm, add in the Active-Dry Yeast and stir. Make sure all yeast is dissolved. Then let the mixture of sugar, water, & yeast sit for 5 minutes. **If the mixture does not rise up and become bubbly, that means you have killed the yeast cells with too hot temperature of water, or you just bought a faulty pack or jar of yeast** If indeed that happens, start over with the sugar, water & yeast mixture. After your mixture has risen up and become bubbly, place out a large bowl and pour the sugar, salt, & Crisco All-Vegetable Shortening mixture into it first to make sure that the mixture is luke-warm and not too hot. Then pour the yeast mixture into the large bowl also. Stir with a wire whisk to combine well. Then add in 2 cups of the Gold Medal All-Purpose flour to the combined mixture. Stir well to combine, the mixture should look like cake batter or a little thicker depending on the day's humidity. Place a warm, wet towel over the large bowl & let the mixture sit for 15 minutes or until it forms bubbles. After the approximated 15 minutes, add in 1 3/4 cup of the Gold Medal All-Purpose Flour to the mixture. Stir and combine very well. Then after the flour is worked in see if the dough is sticky and wet. If it is sticky and wet, add in 1/2 cup of the Gold Medal All-Purpose Flour and combine very well. If it is not sticky and wet, the mixture should form a dough ball (or a roughly-shaped one). Then dump the dough onto a heavily floured board or countertop and knead by hand well for 5 minutes approximately. The dough should be springy & elastic. Once you have reached that point by hand-kneading the dough, place the dough into a well-oiled large bowl (tossing the dough to coat). Cover the bowl and dough with a wet and warm towel, and let sit in a warm place for at least 2 hours (or until doubled in size) Once doubled in size, place the dough on a lightly floured surface and punch down with hand (to remove any extra air pockets in the dough). **If dough does not rise, that means you killed the yeast in the process of combining the yeast mixture with the sugar, salt, and Crisco mixture because it was too hot, or you just bought a faulty pack or jar of yeast** Grab a pie dish that has been well-greased, and place beside the dough. Pinch off dough balls about 2" in diameter. Roll the dough in hand to form a smooth ball. Place in the greased pie dish. Continue the process until you have about 8-11 rolls in the pie dish. **Recommended: Let the yeast rolls sit over night in the chill-chest for extra-fluffy texture, but let them rise a little longer if you leave them overnight the next day** After you have your rolls ready in the pie dish, place them in a warm spot, not covered, to let each roll expand and rise. Once the rolls have risen to your desired size (let the rolls at least sit for 45 minutes or they will become hard and will look like rocks), place them in a 350 degree Fahrenheit oven and let cook for about 15-20 minutes, or until desired color on top of rolls. - To make the filling: Combine all of the dry ingredients in a small bowl. Add the melted butter and stir with a fork until the mixture looks like wet sand. Cover and set aside. To make the dough: Preheat the oven to 425 degrees. Grease and flour (or coat with non-stick baking spray) a 9-inch cake or pie pan. In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Add the buttermilk, rum extract, and 3 tablespoons of the butter and stir until just combined. Transfer the dough to a floured work surface and knead until the dough is smooth (it will still be very soft and a little sticky, but should be smoother and less lumpy). Add more flour, as needed, to be able to knead the dough without it sticking too much. Flatten the dough into a rectangle about 12 inches by 8 inches. Pour 2 tablespoons of the remaining melted butter on and spread around with your fingers. - Add eggs and shortening.
- Beat 1 minute.
- Blend in 4 cups of flour until dough is formed.

- Mix yeast in water and let stand about 10 minutes.
- Add sugar, melted shortening and salt and mix well.
- Add egg to mixture.
- Stir in 4-5 cups of flour.
- Place on a flour surface and knead in the remaining cup of flour.
- Knead about 10 minutes.
- Put in large greased bowel and let rise until double in size, about 1 hour.
- Punch dough down and form into dinner rolls and place sides touching in a 9x13 greased pan.
- Let rise again until double, about 1 hours.
- Bake at 350 degrees 15-20 minutes or until golden brown.
