HOT GERMAN POTATO SALAD CASSEROLE
Passed down from my German/Dutch Grandmother. A hot potato salad with bacon, cheese and a creamy/vinegar sauce makes this a wonderful dish to serve with bratwurst on a cold fall day in Deutschland or wherever you might be. I usually double the bacon and sauce to make this extra flavorful.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring potatoes to a boil in a large pot of salted water. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain; transfer potatoes to a large baking dish.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels; crumble and sprinkle over potatoes.
- Heat a skillet over medium heat; cook and stir celery and green onion until celery is tender, about 5 minutes. Transfer vegetables to baking dish.
- Whisk mayonnaise, vinegar, sugar, mustard, salt, and black pepper in a bowl until smooth. Pour mixture over potatoes and stir until well mixed. Sprinkle with Cheddar cheese.
- Bake in preheated oven until cheese is melted, 20 to 35 minutes.

- Preheat oven to 325F.
- Combine potatoes, mayonnaise, cheese, and onion, adding salt and pepper to taste.
- Put into greased 9x13 baking dish.
- Top with bacon and olives.
- Bake 1 hour.

Steps:
- Cook onions and potatoes in one inch of boiling watch to which the 2 tsps of salt has been added.
- After boiling 5 minutes, drain.
- Melt butter in top of double boiler.
- Stir in flour, salt, pepper, paprika and milk.
- Stirring constantly, cook until smooth and thick.
- In a 2 quart casserole, arrange 1/3 of the vegetable mixture, topped with half of the hot dogs, which have been sliced lengthwise.
- Repeat 2 more layers.
- Arrange cheese slices on top.
- Bake 45 mins 400F.

I found this in a potato cookbook I picked up in a thrift shop and adapted it a little to suit our tastes. It's a great side for a BBQ in the colder weather.

Steps:
- Cook potatoes in boiling water until tender; drain and cool.
- Combine potatoes, eggs, bacon, parsley and spring onions in a casserole dish.
- Combine sour cream, mustard and black pepper and then mix through potato mixture, if mixture needs more moisture then add a little milk.
- Cover and bake at 180°C for 15-20 minutes, then sprinkle with cheese and grill until golden.

- Saute onion in 1 tablespoon butter until translucent. Mix all ingredients, except cornflakes and 4 tablespoons butter, together. Put potato mixture into a 9x13 inch baking pan. Combine cornflakes and butter, and sprinkle evenly over top of casserole. Bake at 350 degrees F for 40-50 minutes or until heated and bubbly.
