My husband's aunt Edith made this and it's delish! Doesn't have to be cold-packed. She told me that she ate a lot of this one summer and lost weight...that could be a plus!

1/4 bushel hot peppers, seeded & coarsley chopped (wear plastic gloves!)
6 stalks celery, sliced
1 large head cauliflower, broken in florets
1-1/2 lb carrots, sliced
3 can(s) black olives, drained and sliced
1/3 c oregano, dried
1 large clove garlic, minced
3 c olive oil - do not substitute!
2/3 c salt
4 c water
1 qt white vinegar

Steps:

  • 1. Combine all vegetables in large stainless steel pot.
  • 2. Combine oregano, salt, oil, water and vinegar. Mix with vegetables; cover and let stand overnight. Mix well again.
  • 3. Put mixture in hot, sterile jars and add lids/rings. Does not need coldpacked.

HOT PEPPER BUTTER (MUSTARD) FOR CANNING

Awesome Mustard for anything from pretzels, sandwiches, or glazes on hams. I add more peppers than in the recipe for a hotter butter (approx 60 ranging med-large). Also I am trying other peppers as well, habenero, maybe only 10-12...I'll have to let you know how it works :) You will not be disappointed! I have sold the canned product to many family and friends and they can only say this is the best! Hope you enjoy!!

1 quart prepared yellow mustard
1 quart cider vinegar
6 cups sugar
1 1/4 cups flour
1 1/2 cups water
1 teaspoon salt
40 medium banana peppers or 50 small banana peppers

Steps:

  • Seed and chop peppers. (I use a food processor to chop the peppers tiny).
  • Mix everything together. Boil for 5 minutes !Stirring Constantly! or until desired thickness.
  • Ladle into hot, sterilized jars. Cap with hot lid and of course the ring and process in hot water bath for 10 minutes.
  • Enjoy! (if not selling or giving away you may want to can in quart jars -- this doesn't last long! :).

This is a very lovely recipe that my husband's grandmother gave to me to add to my canning list. My husband grew up on Grandma Grumney's canned olive oil and garlic peppers and just loves them. I grew up canning my grandma's peppers in tomato sauce. Which my husband also loves. So every year.... I do lots of canning with peppers...

TO MAKE THE OVERNIGHT BRINE
1 gal water
2 c salt
PREPARING PEPPERS & QUARTS
6-8 quart jars for canning, lids & rings
1 bushel, fresh picked hot peppers (or sweet) examples: hot hungarian wax, hot banana peppers, jalapeno, medium hot hungarian. (for sweet peppers, you can use sweet banana, etc.)
2-3 clove garlic, per quart
1/2-1 tsp italian seasoning mix, per quart
2-3 Tbsp olive oil, extra virgin, per quart
pinch small, of alum (optional), per quart
CANNING SOLUTION
1 gal water
1 c pickling salt
1 c cider vinegar

Steps:

  • 1. Prepare peppers: Wash peppers, drain. Then, wearing rubber gloves to protect your hands, cut into rings about 1/2" thick. Discard stem ends. Place cut pepper rings into a large stainless steel bowl or pan, or glass bowl. Make brine using one gallon of water and 2 cups of salt, stir together until salt is dissolved. Pour brine over peppers. Cover and allow to soak overnight. (10-12 hrs)
  • 2. Next day: Prepare quart sized jars for canning peppers. Clean, & sterilize jars, lids & rings. Place 2-3 cloves of garlic, Italian seasoning, EVOO, & alum (optional) in each quart sized jar.
  • 3. In a large stock pot, make canning solution of 1 gallon water, one cup pickling salt, & 1 cup cider vinegar. Bring to a boil. Remove from heat.
  • 4. Drain peppers. **** Rinse lightly with cold water. Pack peppers into quart size jars with garlic, olive oil, and Italian seasoning, leaving 1/2 inch head space. Fill with canning solution. (make sure to release any air bubbles. Clean rim of jar. Tightly place lids and rims on jars. Process in a hot water bath for 10 minutes. (Do not process in pressure cooker. Peppers will get mushy & not stay crisp.)
  • 5. **** You may add small green tomatoes, small pickles, small pieces of cauliflower, &/ or carrot slices to make a hot pepper vegetable mix. Just soak vegetables in brine overnight with peppers
  • 6. Store away in a cool place to allow seasonings to work. Can be used after 4 weeks, but they get better and hotter as more time goes by. For hot peppers and oil, pour peppers into a glass bowl and add 1/2 cup olive oil. Serve with fresh Italian bread and butter.

SWEET AND SOUR HOT PEPPERS



Sweet and Sour Hot Peppers image

If you have hot and sweet peppers in the garden this is a great recipe for canning them. A patient of my husband used to bring them to him whenever she had an appointment. We loved them!!

1/2 bushel sweet and hot pepper, sliced and seeded
2 cups brown sugar
3/4 cup granulated sugar
1 3/4 cups apple cider vinegar
1/2 cup canola oil
1 teaspoon salt
3 tablespoons mustard seeds
1 (32 ounce) bottle ketchup

Steps:

  • Place sliced and seeded peppers in a large turkey roaster. Mix other ingredients until dissolved. Pour over the peppers and bring to a rolling boil over high heat. remove from heat and bottle immediately in hot, sterilized jars and lids. Seal.
