HOT CRAB CASSEROLE

1 tablespoon butter
1/2 cup chopped onion
1/2 cup chopped red bell pepper, can use green
1/2 cup crushed cracker
8 ounces cream cheese, softened
8 ounces sour cream
1/4 cup mayonnaise
1 tablespoon Worcestershire sauce
1/2-1 teaspoon hot sauce, favorite brand
1 teaspoon Old Bay Seasoning
1/2 teaspoon paprika
1/4-1/2 teaspoon garlic powder
1/4 teaspoon pepper
salt, to taste
1 lb crabmeat, preferably lump, you could you imitation I suppose
1 cup grated cheddar cheese, gouda works well, too

Steps:

  • Preheat oven to 350.
  • In a skillet or saucepan, melt butter. Saute onions and peppers over medium heat until tender; stir in the crushed crackers; remove from heat.
  • In a mixing bowl, beat together cream cheese, sour cream, worcestershire, hot sauce, and dry seasonings.
  • Stir in the sauteed onion/pepper/cracker mixture.
  • Gently fold in the crabmeat -- careful not to break up the lumps too much.
  • Pour into a 2-1/2 - 3 quart casserole dish. Bake uncovered for 20 minutes at 350. Remove from oven and stir. Sprinkle cheese on top and return to oven for another 10 minutes.

After several days of craving a crab bake casserole like the one at my local Chinese buffet, I came up with this recipe by tweaking one that I found online. To me, this tastes pretty close to those that I've had at several chinese buffets.

1 lb imitation crabmeat (or real, if preferred)
1/2 large onion, finely chopped
1/4 cup mayonnaise
1/4 cup sour cream
4 ounces cream cheese (1/2 a block)
1 cup shredded swiss cheese
2 teaspoons garlic powder
1 teaspoon dried parsley (or handful fresh)
1/2 cup shredded cheddar cheese

Steps:

  • Mix all ingredients together. Place into pan and sprinkle cheddar cheese on top. Bake in 350 degree oven for approximately 30 minutes.
  • VARIATION: You can mix seafood types -- use 1/2 lb. crab and 1/2 lb. shrimp, lobster, or other seafood.

This recipe came from an Old Pillsbury Bakeoff Booklet. I grew up having this on special occasions. VERY rich; serve with a simple side dish such as a plain salad.

1/2 cup(s) chopped green pepper
1/2 cup(s) chopped onion
1/2 cup(s) flour
1 teaspoon(s) dry mustard
1/2 teaspoon(s) accent
1 cup(s) milk
1 cup(s) shredded velveeta
1 can(s) lump crab meat
1-#2 can(s) tomatoes, drained
2 teaspoon(s) worcestershire sauce
1 teaspoon(s) salt
- cheese bisquit topping
1 cup(s) flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/4 cup(s) shredded velveeta
2 tablespoon(s) crisco
1/2 cup(s) milk

Steps:

  • Melt Crisco in top of double boiler. Add green pepper & onion. Cook until tender. Blend in flour, dry mustard, accent, milk & Velveeta. Cook, stirring until Velveeta is melted. Add crabmeat, tomatoes, worchestershire & salt. Pour into 2 qt. casserole.
  • Cheese Biscuit Topping: Sift together flour, baking powder & salt. Add Velveeta & cut in Crisco until mixture resembles coarse meal. Add milk & mix until flour is dampened. Drop by rounded teaspoonfuls on top of cobbler. Bake @ 450 degrees for 15-20 minutes.

1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
3 tablespoons mayonnaise
5 teaspoons minced celery
1 tablespoon minced green onion
2 English muffins, split
4 slices tomato
4 slices cheddar cheese (1/2 ounce each)
4 slices Monterey Jack cheese (1/2 ounce each)
Paprika

Steps:

  • In a small bowl, combine the crab, mayonnaise, celery and onion. Place muffins on an ungreased baking sheet. , Broil 4-6 in. from the heat until toasted. Spread each muffin half with crab mixture. Top with tomato and cheeses; sprinkle with paprika. Broil until bubbly.

1/3 cup salsa
3 packages (8 ounces each) cream cheese, cubed
2 packages (8 ounces each) imitation crabmeat, flaked
1 cup thinly sliced green onions
1 can (4 ounces) chopped green chiles
Assorted crackers or fresh vegetables

Steps:

  • In a small bowl, combine milk and salsa. Transfer to a greased 3-qt. slow cooker. Stir in cream cheese, crab, onions and chiles. Cover and cook on low for 3-4 hours, stirring every 30 minutes. Serve with crackers.
