¾ cup white sugar
1 ½ tablespoons all-purpose flour
½ cup unsweetened cocoa powder
1 ¼ cups milk
2 tablespoons butter
½ teaspoon vanilla extract, or more to taste
1 tiny pinch salt

Steps:

  • Place sugar, flour, and cocoa powder into a bowl. Whisk together to remove lumps.
  • Heat milk, butter, and vanilla extract in a saucepan over medium heat until butter melts.
  • Whisk dry ingredients into the milk mixture a little at a time. Increase heat to medium-high until mixture comes to a simmer. Cook, stirring constantly, for 6 minutes. After 6 minutes, turn off heat. Whisk in a pinch of salt.
  • Pour hot over ice cream or store in airtight containers in the refrigerator.

Vanilla ice cream is the standard here, but feel free to use your favorite flavor, or a combination of flavors. And if you like nuts, by all means use them here. 3/4 cup heavy cream
1/2 cup packed light brown sugar
1/3 cup light corn syrup or honey
3 tablespoons Dutch-processed cocoa
1/4 teaspoon fine sea salt
2 tablespoons unsalted butter, cubed
7 ounces finely chopped bittersweet chocolate
1 teaspoon vanilla extract or 1 tablespoon brandy or rum
1 cup chilled heavy cream
1 tablespoon superfine sugar, more to taste
1/2 teaspoon vanilla extract
2 pints your favorite flavor ice cream
Chopped toasted nuts, such as almonds, peanuts, or pecans (optional)
Cherries, for garnish (optional)

Steps:

  • In a medium saucepan over medium heat, bring the cream, sugar, corn syrup or honey, cocoa, and salt to a simmer, whisking until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
  • Stir in the chocolate and let cook until the chocolate melts. Stir in butter and vanilla or liquor. Let cool slightly. Contrary to its name, hot fudge is best served warm, not piping hot.
  • For assembly, make the whipped cream. Using a whisk or an electric mixer, beat the cream, sugar, and vanilla until soft peaks form.
  • Pour a little fudge sauce into the bottoms of sundae dishes or bowls. Top with ice cream, then more hot fudge, then nuts if using. Cover all with whipped cream and a cherry if you like. Serve.

2 tablespoons cocoa
1/8 teaspoon salt
1 1/2-2 tablespoons butter
1/4 cup water (more or less, as needed to make a stirable consistency)
1/4 teaspoon vanilla extract

Steps:

  • Combine sugar, cocoa, and salt in small saucepan.
  • Add enough water to make stirable consistency.
  • Add butter to cocoa mixture.
  • Bring to a boil over medium high heat, stirring constantly.
  • Allow to boil for 1 minute, stirring.
  • Remove from heat.
  • Add vanilla.
  • Serve warm over ice cream.

Steps:

  • In a small saucepan, heat the cream over medium heat until very hot, just below a simmer. Put the dark and milk chocolates into a medium bowl. Pour the hot cream over the chocolate and shake the bowl to settle it; let stand 2 minutes. With a small whisk, starting in the center of the bowl, whisk in small circles, working your way outward, until the chocolate is completely melted and the sauce is smooth.
  • Use warm or at room temperature. Store the leftover sauce in an airtight container for up to 1 week. The sauce can be warmed over low heat in a saucepan before using.

2 squares of baker's chocolate
1 c boiling water
1/2 c sugar
1 Tbsp corn starch
1 Tbsp cold water
1 tsp vanilla extract

Steps:

  • 1. Melt the chocolate in a sauce pan on very low heat Note: 6 Tablespoons of Cocoa + 2 tablespoons melted butter or coconut oil = 2 1-oz squares of baking chocolate -- just in case you need it
  • 2. Add the boiling water to the sugar and dissolve
  • 3. Add the water/sugar S-L-O-W-L-Y to the melted chocolate and bring to boil stirring constantly
  • 4. Mix the cornstarch with the Tbsp of cold water, then when the chocolate reaches the boiling point add the cornstarch S-L-O-W-L-Y to it then: boil for seven minutes (keeping a watchful eye and stirring as needed)
  • 5. add the vanilla and serve hot on ice cream
  • 6. I was wondering if I used milk (or evaporated milk) instead of water if it might add a nice flavor to the sauce and make it more like chocolate fudge sauce -- this would require a watchful eye because milk can burn -- just thinking

1/2 cup boiling water
1 cup sugar
2 tablespoons light corn syrup
1 teaspoon vanilla

Steps:

  • Melt unsweetened chocolate in double boiler over, not in, hot water. Add and melt buttter. Stir and blend well, then add boiling water. Stir well. Add sugar and corn syrup. Permit the sauce to boil readily but not furiously over direct heat. Do not stir. Boil 5 minutes for ordinary sauce, boil 8 minutes for sauce that hardens on ice cream. Remove from heat and add vanilla and stir. May reheat leftover sauce over hot water.
