CLASSIC HOT CHICKEN SALAD



Classic Hot Chicken Salad image

Dress up your chicken salad with this recipe that transforms it into a warm, crunchy casserole using breadcrumbs and toasted almonds.

3 cups chicken (cooked and cubed)
2 cups celery (thinly sliced)
1 cup mayonnaise
1/2 cup toasted slivered almonds
2 tablespoons lemon juice (freshly squeezed)
2 tablespoons onion (finely chopped)
1/2 teaspoon salt (or to taste)
1/2 cup shredded cheddar cheese or a cheddar-jack combination
1 1/2 cups toasted breadcrumbs ( divided )
2 tablespoons butter (melted)
Garnish: chopped green onion or parsley

Steps:

  • Preheat oven to 425 F.
  • Butter a 2-quart baking dish or baking pan.
  • Combine the cubed cooked chicken, celery, mayonnaise, toasted almonds, lemon juice, and chopped onion in a bowl. Taste and add salt, if needed.
  • Stir 1/2 cup of the toasted breadcrumbs into the chicken mixture.
  • Spoon the chicken salad mixture into the prepared baking dish.
  • Sprinkle with the shredded cheese.
  • Toss the remaining 1 cup of toasted breadcrumbs with the melted butter. Sprinkle over the cheese layer.
  • Bake the casserole for 15 to 20 minutes, until the topping has browned and the filling is bubbly around the edges.
  • Garnish with chopped green onion tops or parsley, if desired.
  • Serve the chicken hot with cooked rice and a tossed salad, steamed broccoli, or green beans.
  • To toast the almonds, spread them out in a single layer in a dry skillet.
  • Place the skillet over medium heat and cook, stirring constantly, until the almonds are lightly browned and aromatic.
  • Remove to a plate or bowl immediately so they won't over brown.
  • To make homemade toasted breadcrumbs , heat the oven to 325 F.
  • Cut or tear fresh or day-old bread into small pieces.
  • Spread out on a large rimmed baking sheet.
  • Sprinkle with a small amount of kosher salt , if desired.
  • Bake for about 12 to 14 minutes, or until dry and lightly browned.
  • Crush the dried bread coarsely or finely and use in the recipe.
  • Freeze extra breadcrumbs in a zip-close food storage bag.

2 cups cooked chicken or turkey, diced
1 cup celery, diced
2 cups of cooked rice
3/4 cup mayonnaise
1 cup fresh mushroom, sliced
1 tsp lemon juice
salt and pepper to taste
1 (10 3/4 oz) can cream of chicken soup
1/4 cup butter, melted
1 cup corn flakes
1 (4 oz) pkg slice almonds

Steps:

  • In a bowl combine chicken, celery, rice, mayonnaise, mushrooms, lemon juice, salt, pepper, and cream of chicken soup. Mix ingredients until well combined.
  • Pour mixture into sprayed 9 x 13 inch dish and spread out evenly in the dish.
  • Combine corn flakes and butter until corn flakes are well coated with butter.
  • Spoon corn flake mixture evenly over chicken/rice mixture.
  • Place dish in a 400 degree oven for 15 minutes.
  • Remove dish from oven and sprinkle with sliced almonds.
  • Place dish back into oven for 5 more minutes. Serves 6-8.

1 garlic clove, minced

1 package (10 ounces) frozen peas, thawed
1/2 cup sliced green onions
1/2 cup diced celery
2 tablespoons diced sweet red pepper
2 tablespoons diced green pepper
DRESSING:
1/4 cup cider vinegar
2 tablespoons Dijon mustard
1 tablespoon reduced-sodium soy sauce
1 tablespoon olive oil
1 tablespoon sesame oil
2 teaspoons honey
1 garlic clove, minced
Dash ground ginger

Steps:

  • In a large nonstick skillet, combine the wine, lemon juice, garlic and 1/4 teaspoon ginger. Bring to a boil; reduce heat. Add chicken; poach, uncovered, over medium-low heat for 15 minutes or until a thermometer reads 170°. Remove chicken from cooking liquid; cool., In a large saucepan, bring broth and remaining ginger to a boil. Stir in rice. Reduce heat; cover and simmer for 15-20 minutes or until liquid is absorbed and rice is tender. Fluff with a fork., Transfer to a large bowl; cool. Add the peas, onions, celery and peppers. Cut chicken into bite-size pieces; add to rice mixture and toss., Whisk the dressing ingredients; drizzle over salad and toss to coat.

2 medium ears sweet corn
1/4 cup olive oil, divided
2 cups cubed cooked chicken breast
1 medium sweet red pepper, julienned
2 jalapeno peppers, seeded and minced
2 tablespoons minced fresh cilantro
1/4 cup lime juice
1 garlic clove, minced
1 teaspoon chili powder
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup uncooked long grain rice
2 medium ripe avocados, peeled and cubed

Steps:

  • Remove and discard corn husks and silk. Brush 1 tablespoon oil over ears of corn. Grill, covered, over medium heat for 15-20 minutes or until tender. 2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
Kosher salt and freshly ground pepper (to taste)
2 cups diced cooked chicken
2 cups cooked rice ((any kind))
1 cup diced celery
1 cup diced zucchini
½ cup chopped red onion
½ cup chopped parsley

Steps:

  • In a large bowl combine the olive oil, lemon juice, lemon zest, salt and pepper.

Raid the fridge and rustle up this hearty yet healthy salad with pulses, nuts, tikka chicken and a mango curry dressing

500g bag long grain rice
1 tsp turmeric
small bunch coriander , leaves roughly chopped, stalks reserved
100g bag toasted cashew , ½ very roughly chopped
1 cucumber , deseeded and cut into chunks
1 large red onion , finely chopped
about 110g pack pomegranate seeds
400g can black bean , drained and rinsed
2 x roughly 130g packs cooked chicken tikka pieces, chopped
natural yogurt and mini poppadum crisps, to serve (optional)
4 tbsp mango chutney
1 tbsp sunflower oil
1 tbsp brown sugar
1 tbsp medium curry powder , plus 1 tsp for the rice
juice 1½-2 lemon , depending on size

Steps:

  • Cook the rice following pack instructions but add the turmeric and 1 tsp curry powder to the cooking water. Drain well and spread on a tray lined with kitchen paper to cool.
  • Meanwhile, finely chop the coriander stalks and whisk with all the other dressing ingredients, plus seasoning.
  • Tip the rice into a big mixing bowl. Using a fork, break up any large lumps, then mix in the cashews, cucumber, onion, coriander leaves, pomegranate seeds, beans and chicken. Pour over the dressing and lightly stir in, then cover and keep in the fridge. Eat over the next 2 days (as long as it's within the chicken use-by date). Keep a big spoon in the bowl so kids can easily help themselves. Top with a dollop of yogurt and add a handful of poppadum crisps, if you like.
