SPICY PECANS - TEXAS STYLE
Crunchy, spiced, and habit forming! Note on teh chili powder- I've also used cayenne pepper and or chipotle depending on the heat tolerance of those munching.

Steps:
- In a skillet, mix all the dry ingredients.
- Stir in olive oil, Worchestershire sauce, and pepper sauce.
- Cook and stir over a low heat to allow flavors to blend and mellow for about 5 minutes.
- Place pecans in a large mixing bowl; add the spice mixture.
- Toss well to coat evenly.
- Spread pecans on a baking sheet or pan in a single layer.
- Bake at 325 for about 15 minutes, shaking pan occasionally.
- Cool completely.

SPICY GLAZED PECANS
We eat these spicy glazed pecans tossed on salads. They're also a nice addition to nut/trail mixes!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a 15x10x1-inch baking pan with foil or parchment paper.
- In a saucepan over medium heat, combine the sugar, water, and cayenne pepper. Stir and bring to a boil; let boil 2 minutes. Remove pan from heat; gently stir in nuts until evenly coated and the sugar mixture begins to thicken. Spread nuts over the prepared baking pan. Bake until browned, about 15 minutes. Remove pan from oven and let nuts cool. Place in a plastic bag, and gently tumble together to remove any excess glaze. Serve warm or store in an airtight container.

Steps:
- Place pecans in a 15 x 13 x 1 inch baking pan.
- Bake uncovered at 300F for 10 minutes.
- Meanwhile melt butter; stir in Worcestershire sauce, salt, cinnamon, garlic powder, red pepper, hot pepper sauce and cloves.
- Drizzle over pecans in pan, stir gently.
- Bake 10 minutes more, stirring once.
- Turn onto foil, cool.
- Makes 18 (1/4 cup) servings or 9 (1/2 cup) servings.
SWEET AND SPICY PECANS
These pecans have graced our family's Christmas sweet gift platters. I've also sprinkled them over my gourmet salads. They add so much in either case. I can't get enough of them! Lining the pans with parchment paper makes for easier removal of the pecans and easier cleanup!

- Stir 1 cup sugar into the hot water in a large bowl until the sugar is completely dissolved. Soak the pecans in the water for 1 hour; drain.
- Preheat an oven to 400 degrees F (200 degrees C). Line two 9x13 inch baking dishes with parchment paper.
- Sift the 2/3 cup sugar, chili powder, and cayenne pepper together in a separate large bowl; add the pecans and toss to coat evenly. Spread the coated pecans in a single layer into the prepared dishes.
- Bake in the preheated oven until the coating on the pecans are bubbly, stirring once, 10 to 15 minutes. Remove the pecans from the pans immediately and spread onto a counter or other flat surface covered with parchment paper to cool.

- Melt butter in a skillet over medium heat. Stir cumin and cayenne pepper into the butter until dissolved, about 1 minute. - Mix the pecans and melted butter in a foil-lined jellyroll pan.
- Put in a 350 degree oven and bake for 5 minutes.

- Preheat the oven to 250 degrees F. Beat the egg white with 1 tablespoon water in a large bowl until foamy. Add the nuts, sugar, cumin, cayenne, cinnamon and 1/2 teaspoon salt and mix well. Spread the mixture on a parchment-lined baking sheet. Bake until the nuts are mostly dry but still slightly sticky, about 40 minutes.
- Remove the nuts from the oven and stir. Reduce the temperature to 200 degrees F. Return the nuts to the oven and bake until crisp, about 30 more minutes. Stir to loosen the nuts from the baking sheet; cool completely on the sheet.
