SLAB BACON IN HOT-PEPPER-AND-BROWN-LOAF-SUGAR ADOBO

Steps:
- Score the slab bacon on the meat side; set aside.
- Heat a heavy-bottomed skillet over medium heat. Working in batches, add dried peppers to skillet and toast lightly for 3 to 4 seconds on each side. Transfer toasted chiles to a medium bowl. Cover with hot water and let stand until soft, about 10 to 15 minutes.
- Transfer peppers to the jar of a blender or bowl of a food processor, along with olive oil, garlic, cumin, oregano, aniseed, paprika, orange juices, guava preserves or honey, sherry, brown loaf sugar, and salt; blend until smooth.
- Place bacon in a 2-inch deep baking pan. Pour the chile mixture over bacon and rub thoroughly until fully coated. Cover with plastic wrap and let marinate at least 6 hours and up to overnight.
- Preheat oven to 350 degrees with rack in the center. Remove plastic wrap from baking dish and add 1/4 cup water to dish. Cover baking dish tightly with parchment paper-lined aluminum foil. Transfer baking dish to oven and bake for 1 hour. Continue baking and basting bacon, until golden brown and fork tender, about 20 minutes more.
- Transfer bacon to a large cutting board and cut into 2 1/2-inch pieces. Serve immediately with Guatemalan red cabbage relish or Mendoza's fresh corn polenta; garnish with cacao nibs, if desired.

- Pour the beans into a 2-quart casserole; add the hot dog rounds.
- Add the onion, and stir in the mustard, ketchup, and brown sugar.
- Bake for 20-25 minutes, until bubbly and hot.
- Spoon over the cooked brown rice.

HOT AND BROWN

- To create the jam, in a saucepan over medium-high heat, add the red peppers, onions, 1 teaspoon salt and the white pepper. Cook for 30 minutes, stirring occasionally throughout. Next, add the sugar and reduce the heat to low. Cook, stirring, for 10 more minutes. Then remove from the heat and set aside.
- In another saucepan over low heat, warm the bechamel for 5 minutes. Then add the Brie to warm and melt, 2 to 3 minutes. Once melted, remove from the heat and keep warm.
- For the bread of the sandwich, heat a skillet or pan. When hot, add the butter and Texas toast, and cook until browned on each side, 2 minutes per side. Once browned, remove from the heat and set aside.
- To prepare the pork, preheat the oil to 350 degrees F in the deep fryer. Mix the flour with 1 teaspoon salt and the black pepper. Dredge the pork in the flour, then dip into the egg wash, then dredge in the flour again. Tap off any excess flour, then drop the pork into the fryer and cook until golden brown, 2 minutes. Once cooked, remove from the fryer and drain on paper towels to remove excess oil.
- Preheat the broiler.
- In a sauce pan over medium heat, warm the chicken stock, then add the turkey and warm for 2 minutes. Remove and drain excess liquid. Stack some turkey on the toasted bread, then add two pieces cooked pork, 1 tablespoon jam, and finish with 2 tablespoons bechamel. After building the sandwich, place under the broiler until golden brown, 2 minutes. Remove from the oven. Garnish with the paprika and parsley, then serve.
