I saw something like this on Guy Fieri's show. He piled the slaw on pulled pork sandwiches. It is also terrific with a grilled steak. Tastes best prepared a few hours before serving.

1/2 cup mayonnaise
2 tablespoons sugar
1 tablespoon Dijon mustard
1 tablespoon prepared horseradish
1 teaspoon salt
2 teaspoons fresh ground black pepper
2 tablespoons rice vinegar
6 1/2 cups green cabbage, shredded (1 14oz bag shredded Cole Slaw mix)
2 small carrots, shredded (optional)

Steps:

  • In a small bowl, combine mayonnaise, sugar, mustard, horseradish, salt, pepper, and vinegar and stir until sugar is dissolved.
  • Pour mixture over shredded cabbage and stir until cabbage is well coated.

3/4 cup finely julienned (2-inches long) green cabbage
3/4 cup finely julienned (2-inches long) carrots
1/2 cup finely julienned (1-inch long) red onions
2 tablespoons thinly sliced scallions
1 tablespoon freshly grated horseradish
1/2 clove garlic, finely minced
2 tablespoons creme fraiche
2 tablespoons champagne vinegar
1 teaspoon whole-grain mustard
1/4 teaspoon celery seeds, toasted
Salt and freshly ground black pepper

Steps:

  • In a large bowl combine the cabbage, carrots, onions, scallions, horseradish and garlic. In a small bowl, whisk together the creme fraiche, vinegar, mustard and celery seeds. Toss the slaw with the dressing and season everything with salt and pepper. Marinade the slaw for 1 hour.
  • Drain as desired, depending on the consistency you are looking for.

3 carrots, peeled and chopped
3 ribs celery, chopped
½ cup apple cider vinegar
¼ cup white sugar
1 ½ teaspoons salt
1 teaspoon ground black pepper
1 cup mayonnaise
3 tablespoons prepared horseradish
2 tablespoons stone-ground mustard
½ teaspoon chopped fresh parsley
½ teaspoon celery seed
½ teaspoon onion powder
½ teaspoon ground mustard

Steps:

  • Combine cabbage, carrots, and celery in a large bowl. Whisk vinegar sugar, salt, and pepper together in a small bowl; pour over cabbage and stir until well coated. Refrigerate cabbage mixture for 15 minutes.

4 scallions, sliced
2 tablespoons sunflower seeds
1 apple, peeled and diced small-ish
1/4 cup raisins
1/2 cup reduced-fat mayonnaise
1/4 cup nonfat plain yogurt
1 tablespoon lemon juice, fresh (actually juice of one lemon)
2 tablespoons prepared horseradish
2 tablespoons honey (less if you don't have a sweet tooth like we have!)
1 tablespoon Dijon mustard (I use my homemade Dijon, which is really hot ( you might want to try a little more than a tablespoon)

Steps:

  • Combine salad ingredients in a large bowl.
  • In a small bowl, combine dressing ingredients; whisk until well blended.

1 head green cabbage (about 2 lb)
2 cups mayonnaise or salad dressing
2 tablespoons prepared horseradish

1 tablespoon sugar (omit if using salad dressing)
1 teaspoon salt
1/2 teaspoon celery seed
1/2 teaspoon freshly ground pepper
1 clove garlic, finely chopped
3 medium carrots, shredded (1 1/4 cups)

Steps:

  • Use sharp knife to cut cabbage head into quarters and remove core. Place 1 quarter, flat side down, on cutting board. Slice cabbage thinly with knife. Cut slices several times to make smaller pieces. Repeat with remaining quarters. You will need about 10 cups shredded cabbage.
  • In large bowl, mix mayonnaise, horseradish, vinegar, mustard, sugar, salt, celery seed, pepper and garlic. Add carrots and cabbage. Stir well to combine. Serve immediately or refrigerate up to 3 hours.

2 lbs cabbage
1 cup mayonnaise
1/2 cup sour cream
1 lemon, juice of
1 tablespoon horseradish (or to taste)
1 tablespoon sugar (or to taste)
1 teaspoon dry mustard
salt and pepper

Steps:

  • Shred cabbage, and soak in cold salted water for one hour.
  • To prepare dressing, combine all remaining ingredients together.
  • When ready to prepare salad, drain cabbage well and toss with dressing.
