DILL AND HORSERADISH MASHED POTATOES
Fresh dill and spicy horseradish make these mashed potatoes memorable.

Steps:
- Put the potatoes in a medium pot, cover with cold water and add 2 tablespoons salt. Bring just to a simmer and simmer the potatoes, uncovered, until tender, about 45 minutes. Drain.
- Peel the potatoes and return them to the pot (if desired, pass them through a ricer or food mill after peeling). Mash the potatoes with the milk and butter using a fork or potato masher. Stir in the dill, horseradish and 2 teaspoons salt; season with pepper. Sprinkle with fresh dill fronds.

- Remove a thin strip of peel around the center of each potato. Place in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Combine the remaining ingredients. Drain potatoes; add butter mixture and stir to coat.

- Heat water, milk, butter, salt and dill weed to boiling in 2-quart saucepan; remove from heat.
