Arroz Con Queso - Rice With Cheese (Bolivia) image

I used this recipe for week 32 of my food blog, "Travel by Stove." I am attempting to cook on meal from every nation on Earth, and Bolivia is my 32nd stop. Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. This Bolivian side dish is made with a fresh farmer's cheese; "kolla" (traditionally used) is saltier than queso fresco, so when making this be sure to taste and add salt according to your preferences.

2 cups short-grain rice (I used sushi rice, which seems to be the only short grain rice going around here)
1 1/2 cups crumbled queso fresco (kolla cheese is traditional, but most Bolivian resources seem to agree that queso fresco is a good s)
1 teaspoon garlic, minced
1 tablespoon red onion, minced
1 cup milk
6 cups water
salt

Steps:

  • Boil the water with the salt, then add the rice and keep boiling, uncovered, until almost all of the water has been absorbed or cooked off. The rice should still be pretty wet, but without pools of water and not fluffy.
  • Meanwhile, saute the garlic and onions in a small amount of oil for four or five minutes. Take care not to let them brown.
  • When the rice is nearly ready, bring the milk to a boil (warning, milk scalds easily so don't take your eyes off of it).
  • Add the milk, cheese and onion/garlic mixture to the rice. Cook over low heat, stirring, until all the cheese has melted.

4 tablespoons butter or safflower oil
1 medium white onion, finely chopped
2 cloves garlic, peeled and minced
3 cups fresh corn kernels
1 1/2 teaspoons sea salt, or to taste
3 tablespoons finely chopped epazote
6 large poblano chiles, roasted and peeled
1/2 pound queso fresco, cut into 6 thick slices
2 cups Mexican crema, recipe follows
3 ounces Manchego cheese, grated
2 cups heavy cream
1/4 cup buttermilk
1 1/2 cups long grain unconverted white rice
3 tablespoons vegetable oil
1/2 medium white onion, finely chopped
1 clove garlic, peeled and minced 3 1/2 cups water

Steps:

  • Preheat the oven to 350 degrees.
  • In a medium saucepan, over a medium heat, melt the butter. Cook the onion until translucent. Add garlic and cook for 30 seconds. Add the corn kernels and salt, then cover the pan and reduce the heat. Cook until the kernels are tender, about 2 to 3 minutes. Add the epazote. Set aside to cool.
  • Slit the chiles down the sides and carefully remove the seeds, leaving the top and stalk intact.
  • Stuff the chiles with the corn mixture. Put a slice of the cheese in the center of the filling.
  • In a shallow ovenproof dish, place the chiles over the Arroz Blanco, gently pushing them into the rice. Pour the crema over them and bake until heated through, about 15 to 20 minutes. Sprinkle with the grated Manchego cheese and continue to bake just until the cheese is melted.
  • Whisk the cream and the buttermilk together in a bowl. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator for as long as a week.
  • Rinse the rice in cold water until water runs clear. Let the rice drain for a few minutes.
  • In a medium size saucepan with a tight-fitting lid, heat the oil over a medium low heat. Add the onion and cook until translucent, stirring constantly. Add the garlic and cook for 2 minutes. Add the rice and cook just until the grains are coated with the oil. Add the water and cook, uncovered, over a medium heat until the liquid has been absorbed and small air holes appear on the top of the rice. Do not stir. Wrap the lid of the saucepan with a small terry cloth dish towel. Place the lid tightly over the saucepan so that none of the steam can escape. Set aside in a warm place for about 20 to 30 minutes, so that the rice can continue to cook and the grains expand.
  • Stir the rice well before serving.

1 paquete (8-1/2 onzas) de harina preparada para muffins de elote (maíz)
1 taza de queso cheddar desmenuzado KRAFT Shredded Cheddar Cheese

Steps:

  • Precalienta el horno a 375°F. Bate el queso crema y la leche en un recipiente grande, con un batidor de varillas, hasta que estén bien mezclados. Agrega el resto de los ingredientes; mezcla todo bien.
  • Vierte la mezcla en una fuente para hornear de 13x9 pulgadas rociada con aceite en aerosol.
  • Hornéala de 34 a 36 minutos o hasta que esté bien dorada.

1 taza de leche
6 onzas de VELVEETA®, cortado
1/2 taza de salsa mexicana mexicana roja
3 tazas de arroz cocido
2 tazas de pechuga de pollo cocida y desmenuzada
1 lata (11 oz) de maíz (elote), escurrido
1/4 taza de cebollitas verdes picadas

Steps:

  • Precalienta el horno a 350ºF. Cuece, revolviendo frecuentemente, la leche con la salsa y el VELVEETA en una cacerola pequeña a fuego medio hasta que éste se haya derretido; reserva.
  • Mezcla el arroz, el pollo, el elote y las cebollas en una fuente cuadrada para hornear de 8 pulgadas. Agrega la mezcla de VELVEETA; revuelve suavemente.
  • Hornea la mezcla durante 30 minutos o hasta que esté bien caliente (160ºF).
