GOLDEN HONEY PAN ROLLS

A cousin in North Carolina gave me the recipe for these delicious honey-glazed rolls. Using my bread machine to make the dough saves me about 2 hours compared to the traditional method. Number Of Ingredients 14

1 cup warm 2% milk (70° to 80°)
1 large egg, room temperature
1 large egg yolk, room temperature
1/2 cup canola oil
2 tablespoons honey
1-1/2 teaspoons salt
3-1/2 cups bread flour
2-1/4 teaspoons active dry yeast
GLAZE:
1/3 cup sugar
2 tablespoons butter, melted
1 tablespoon honey
1 large egg white
Additional honey, optional

Steps:

  • In bread machine pan, place the first 8 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed.), When cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let rest for 10 minutes. Divide into 24 pieces; shape each into a ball. Place 12 balls each in 2 greased 8-in. square baking pans. Cover and let rise in a warm place until doubled, about 30 minutes. , For glaze, combine the sugar, butter, honey and egg white; drizzle over dough. Bake at 350° until golden brown, 20-25 minutes. Brush with additional honey if desired.

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
1/4 cup butter, melted
1/4 cup honey
1 large egg, room temperature
3/4 cup whole wheat flour
1/2 cup old-fashioned oats
1 teaspoon salt
2-1/2 to 3 cups all-purpose flour
Additional melted butter, optional

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine butter, honey, egg, whole wheat flour, oats, salt, yeast mixture and 1 cup all-purpose flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough; shape into 15 balls. Place in a greased 13x9-in. pan. Cover with a kitchen towel; let rise in warm place until doubled, about 45 minutes. Preheat oven to 375°., Bake until golden brown, about 20 minutes. If desired, brush with additional butter. Serve warm.

Another of my make do bread recipes, when DH had a few beers left over ( doesn't happen often.) This bread can be made into loafs or rolls, but we find rolls to be our family favorite. A heavy lager might be more robust, hey give it a try, dh only drinks bud and coors, so we haven't had a chance to try the heavier beers, let us know what ya'all think. LOL so.. salute.

1 1/2 cups whole wheat flour
1 1/2 cups bread flour
1 1/2 teaspoons active dry yeast
1/8 cup honey
3/4 teaspoon salt
1/4 cup water
6 ounces beer (flat)
2 tablespoons oil

Steps:

  • Mix honey,salt,water,oil and beer in small mixing bowl , heat in microwave 1 minute, stir until well blended.
  • Place honey mix with remaining ingredients into bread machine according to manufacturers directions.
  • Select dough cycle.
  • When cycle is complete, shape dough into rolls.
  • Place in lightly greased pans. ( I like to use pie pans instead of a baking sheet so rolls are wedged next to each other).
  • Cover rolls with a damp cloth and let rise about 30-40 minute or until doubled in size. When using whole wheat flour I like to set pans on an electric heating pad set on medium. (That makes the whole wheat flour rise faster,If you don't use the heating pad, not to worry, you might need more rise time.).
  • When rolls have doubled, bake in a preheated 350 degree oven 15-20 min , brush tops with melted butter.

1 ¼ cups warm milk
1 egg, beaten
2 tablespoons butter, softened
¼ cup honey
¾ teaspoon salt
2 ¾ cups bread flour
1 cup whole wheat flour
1 ¼ teaspoons bread machine yeast
2 tablespoons butter, melted

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press start.
  • When dough cycle has finished, turn dough out onto a lightly floured surface and roll out 3/4 inch thick. Cut out rolls with a 3 to 4 inch diameter biscuit cutter. Place on lightly greased cookie sheets; cover and let rise until doubled, about 1 hour. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven for 10 to 15 minutes. When rolls are finished baking, brush with melted butter.

The mixture of Yoghurt and Honey is delightful. Of all my bread recipes, this is the family favorite. Note: some folks think the rolls are a little sweet, some have suggested cutting the honey back by half.

1/4 cup milk
1/2 cup plain yogurt
1/4 cup honey (1/8 c.for less sweet roll)
4 tablespoons butter
1 egg, beaten
2 cups bread flour
1 cup whole wheat flour
1 teaspoon salt
1 1/2 teaspoons active dry yeast

Steps:

  • Mix milk, yoghurt, honey and butter in a small mixing bowl, heat in microwave 1 minute. Stir until the butter is melted.
  • Place ingredients into bread machine according to manufacturers directions.
  • Select dough cycle.
  • When cycle is complete, shape dough into 18 equal rolls.
  • Place in lightly greased pans. I like to use pie pans instead of a baking sheet.

4 to 5 cups bread flour
1/4 cup sugar
2 packages (1/4 ounce each) active dry yeast
1 teaspoon salt
1 cup 2% milk

1/2 cup water
2 large eggs, room temperature
2 cups whole wheat flour
HONEY BUTTER:
1 cup butter, softened
7 tablespoons honey
HONEY GLAZE:
2 tablespoons honey
1 tablespoon butter, melted

Steps:

  • In a large bowl, combine 2 cups bread flour, sugar, yeast and salt. In a small saucepan, heat the milk, butter and water to 120°-130°. Add to dry ingredients; beat just until moistened. Beat in eggs. Stir in whole wheat flour and enough remaining bread flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 10 minutes. Cover and let rest 15 minutes., Divide dough into thirds. Roll each portion into a 20-in. rope. Cut each into 20 pieces; shape each into a ball. Grease three 9-in. round baking pans; arrange 20 balls in each pan. Cover and refrigerate overnight., Let rise in a warm place until doubled, about 1-1/4 hours. Bake at 350° until golden brown, 18-22 minutes. Meanwhile, in a small bowl, cream butter. Add honey; beat until light and fluffy. Remove rolls from pans to wire racks. Combine glaze ingredients; brush over warm rolls. Serve with honey butter.

1 cup (236 milliliters) almond milk or dairy milk, warm (105 to 110 degrees F)
2 1/4 teaspoons active dry yeast
1/4 cup (50 grams) plus 1 teaspoon sugar
1 teaspoon ground cinnamon
1 teaspoon kosher salt
Pinch ground cardamom
4 1/2 cups (585 grams) all-purpose flour, plus additional for dusting
2 large eggs
1/2 cup (100 grams) flavorless oil, plus additional for oiling the bowl
1/4 cup (84 grams) honey
1 teaspoon vanilla extract
Nonstick cooking spray, for the baking dish
3/4 cup apple butter (store-bought or homemade)
1 teaspoon ground cinnamon
6 ounces almond paste, grated on the big holes of a box grater or finely chopped
1 large egg
1 1/2 cups blanched almonds
1/4 cup honey
1 teaspoon almond extract
1/4 teaspoon kosher salt
Zest from 1/2 lemon
6 tablespoons almond milk
Toasted sliced almonds, for topping

Steps:

  • For the rolls: Combine the milk, yeast and 1 teaspoon sugar in a bowl and swirl together. Let sit until foamy on top, about 5 minutes.
  • Combine the cinnamon, salt, cardamom and 3 1/2 cups flour in a large bowl or the bowl of a stand mixer fitted with the dough hook. Whisk together the eggs, oil, honey and vanilla in a medium bowl. Stir the yeast mixture and oil mixture into the dry mixture and then knead, either on a work surface or with the dough hook, adding up to 1 cup more flour as needed, until the dough is smooth and slightly sticky, 15 minutes by hand and 7 to 10 minutes by mixer. Place in an oiled bowl, cover with plastic wrap and let rise until doubled in size, 1 1/2 to 2 hours.
  • For the filling: Spray a 9-by-13-inch baking dish with cooking spray and set aside.
  • Turn the dough out onto a clean surface and roll it out, dusting with flour as needed to prevent sticking, into an 18-by-12-inch rectangle. Spread it with the apple butter and sprinkle with the cinnamon and almond paste. Roll up tightly starting from a long end (so that it results in an 18-inch-long roll), and pinch the edges to seal. Cut into 12 rolls and place in the prepared baking dish. Cover with plastic wrap and refrigerate overnight. (Or cover loosely with plastic wrap and let rise at room temperature for 1 hour, then go right to preheating the oven.)
  • When ready to bake, remove the rolls from the refrigerator and loosen the plastic wrap. Let sit at room temperature until puffy, 1 to 2 hours.
  • Preheat the oven to 350 degrees F.
  • Beat the egg with a splash of water in a cup. Remove the plastic wrap from the baking dish and brush the rolls with the egg wash. Bake until the rolls are lightly browned and have an internal temperature of 190 degrees F, 35 to 40 minutes.
  • For the frosting: Meanwhile, blend the blanched almonds in a food processor, scraping the sides occasionally, until creamy and spreadable, 5 to 10 minutes. Add the honey, almond extract, salt and lemon zest and continue to blend (it may clump together at this point, and that's okay) as you drizzle in the milk. Blend until creamy. (This can be made the day before and stored in an airtight container in the fridge.)
  • When the rolls come out of the oven, spread them with the frosting, sprinkle with the sliced almonds and serve.

HONEY DINNER ROLLS

I first made these in 2000. These are my favorite dinner rolls! I got the recipe out of a cookbook that famous country singers contributed to. This was sent in by Steve Wariner. You'll have no room for dinner after you start eating these! I make my rolls a bit bigger, so of course my yield is considerably less then recipe states.

4 1/4-4 3/4 cups all-purpose flour
1 (1/4 ounce) package active dry yeast
1 1/4 cups milk
1/3 cup honey
1/4 cup margarine or 1/4 cup butter
1 teaspoon salt
2 eggs

Steps:

  • Combine 2 cups flour and yeast in a large mixer bowl. Heat milk, honey, margarine and salt just until warm (115 to 120°F) and margarine is almost melted, stirring constantly. Add to flour mixture; add eggs.
  • Beat at low speed of electric mixer for 30 seconds; scrape sides of bowl constantly. Beat for 3 minutes at high speed. Stir in as much remaining flour as you can mix in with a spoon.
  • Turn dough out onto lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 mins). Shape into a ball. Place dough in a greased bowl, then turn it once. Cover dough and let rise in a warm place till double (about 1 hour). Punch dough down; divide in half. Cover again; let rest 10 minutes.
  • Cut each dough half into 18 equal pieces. Roll into balls, and place in greased 2 1/2-inch muffin pans. Let rise until doubled (about 30 mins).
  • Bake in a 375°F oven for 12 to 15 minutes. Remove from pan. Cool on a wire rack.
  • Makes 36 rolls.

This is a homemade roll recipe from my sister's mother-in-law. I make these for every holiday or special meal and my family wouldn't have it any other way! They are the best served with the honey butter.

4 cups boiling water
2 cups rolled oats
1 ⅓ cups brown sugar
6 tablespoons vegetable oil
2 (.25 ounce) packages active dry yeast
⅔ cup lukewarm water
4 teaspoons salt
8 cups all-purpose flour, or more as needed
1 cup butter, softened
3 tablespoons honey
⅛ teaspoon ground cinnamon

Steps:

  • Stir boiling water and oats together in a bowl; set aside to thicken and cool, 10 to 15 minutes. Stir brown sugar and vegetable oil into oat mixture.
  • Dissolve yeast in lukewarm water in a bowl. Let stand until the yeast softens and begins to form a creamy foam, about 5 minutes. Stir yeast mixture and salt into oat mixture. Beat flour, 1 cup at a time, into oat mixture until dough is soft. Turn dough onto a floured surface and knead for 10 minutes.
  • Place dough in an oiled bowl and cover with a damp towel; let rise until doubled in size, about 1 hour.
  • Punch dough down and form into rolls; arrange on baking sheets. Let rise again until doubled in size, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake rolls in the preheated oven until lightly browned, 20 to 25 minutes.

I was making egg rolls one night, and just started adding things. These turned out pretty good. I had to guesstimate on the amounts of the spices. Please feel free to adjust to your taste.

4 cups finely shredded green cabbage
3/4-1 cup of finely shredded cooked chicken (i used leftovers from Crock Pot Whole Chicken thanks again kathy)
3/4 cup of finely shredded carrot
1 egg
2 teaspoons onion powder (taste to suit)
1 1/2 teaspoons garlic powder (taste to suit)
1 teaspoon black pepper
1/2 teaspoon salt
1/2-1 teaspoon cayenne pepper (taste to suit)
14 -15 egg roll wraps (16 oz.pkg.)
1 cup canola oil
1 cup honey
3/4 cup apricot preserves
1/3 cup cold water

Steps:

  • In a large bowl combine cabbage and carrots; mix well.
  • Add chicken; mix well.
  • Add seasonings, mixing well.
  • Taste, adjust seasonings if needed.
  • Add egg, mixing well.
  • To wrap egg rolls--.
  • Lay wrapper on work surface.
  • With wet fingers, damp all edges of wrapper.
  • Place 4 tablespoons of mixture evenly across center of wrapper.
  • Make sure filling is 3/4 inches away from edge.
  • Fold bottom half over to meet top.
  • Roll until tightly wrapped.
  • Make sure that you are folding in sides as you are rolling.
  • In a large 12 inch skillet, heat oil until hot.
  • Fry on both sides until golden brown, about 3 minutes on each side.
  • Drain on paper towels.
  • For Honey-Apricot Dipping Sauce--.
  • In small saucepan combine all sauce ingredients.
  • Over low heat, stir until boiling.
  • Then cool.

Steps:

  • In a small saucepan, heat milk with honey, stirring, over low heat just until lukewarm and remove pan from heat. Stir in yeast and let stand until foamy, about 5 minutes. Add butter and yolks, whisking until combined well.
  • Transfer milk mixture to bowl of a standing electric mixer (or to a large bowl, if kneading by hand). Add flour and salt gradually to milk mixture, stirring until incorporated. With dough hook, knead dough until smooth, about 2 minutes. (Alternatively, dough may be kneaded by hand on a lightly floured surface until smooth, 10 to 15 minutes.)
  • Transfer dough to a lightly oiled large bowl and turn to coat with oil. Let dough rise, covered with plastic wrap, in refrigerator overnight, or until doubled in bulk. (Alternatively, dough may be allowed to rise in a warm place about 2 hours, or until doubled in bulk.)
  • Grease 2 baking sheets. Punch down dough and divide into 12 pieces. Form each piece into an egg shape and transfer pieces to prepared baking sheets. Form a bunny tail on each piece by holding scissors, points down, perpendicular to baking sheet and making a 1/2-inch-long snip at base of wide end. Form 2 bunny ears on each piece by making a narrow 2-inch-long snip on each side, starting near wide end and cutting toward narrow end. Form eyes on each piece by making 2 holes in narrow end with a wooden pick and pressing a currant half firmly into each hole with pick.
  • Brush half of warm glaze on rolls and let rise, covered loosely with plastic wrap, in a warm place 45 minutes or less, or until doubled, in bulk (rising will take longer if dough is cold).
  • Preheat oven to 400°F.
  • Heat remaining glaze over low heat just until warm and brush rolls. Bake rolls in upper and lower thirds of oven, switching position of sheets in oven halfway through baking, 20 minutes, or until golden, and transfer to racks to cool.
  • Serve rolls warm or at room temperature.
  • In a small saucepan, heat glaze ingredients over low heat, stirring occasionally, until butter is melted. Remove pan from heat and keep glaze warm, covered.

1 pound pizza dough
1 cup shredded mozzarella cheese, plus more for sprinkling
Pepperoni slices, for topping
Vegetable oil, for the skillet

Steps:

  • Preheat the oven to 400˚ F. Melt the butter with the garlic in a saucepan.
  • On a work surface, roll out the pizza dough into an 8-by-18-inch rectangle. Brush with one-third of the garlic butter and top with 1 cup mozzarella. Arrange pepperoni slices along one long side of the dough, then continue adding pepperoni to cover half of the dough. Tightly roll up the dough into a log, starting with the pepperoni side, then slice into 16 rounds.
  • Arrange the rounds, cut-side up, in an oiled 8-inch cast-iron skillet and brush with the remaining garlic butter. Bake until golden, 20 to 25 minutes. Sprinkle with more mozzarella and continue baking until browned, about 10 minutes. Drizzle with hot honey before serving.

2 to 2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
1 package regular active dry yeast
1 1/4 cups water
1/2 cup honey
1/2 cup butter or margarine
1 egg

Steps:

  • In large bowl, mix whole wheat flour, 1 cup of the all-purpose flour, the salt and yeast. In 1-quart saucepan, heat water and 6 tablespoons each of the honey and butter until very warm (120°F to 130°F). Beat warm liquid and egg into flour mixture with electric mixer on low speed until moistened, scraping bowl frequently. Beat on medium speed 3 minutes, scraping bowl frequently. Beat in remaining 1 to 1 1/2 cups all-purpose flour until soft, smooth dough forms (dough will be sticky). Cover; refrigerate 8 hours or overnight.
  • Lightly grease 12 regular-size muffin cups with butter. Place dough on floured work surface; gently push fist into dough to deflate. Divide dough into 12 equal pieces; divide each into 3 portions. Shape each portion into a ball, pulling edges under to make a smooth top. Place 3 balls, smooth side up, in each muffin cup. Cover; let rise in warm (80°F to 85°F) place 45 minutes to 1 hour or until doubled in size.
  • Heat oven to 375°F. Uncover dough; bake 18 minutes or until golden brown. Immediately remove from pans to cooling racks. Cool 15 minutes.
  • Meanwhile, in 1-quart saucepan, heat remaining 2 tablespoons each honey and butter until melted. Brush over warm rolls.

Steps:

  • Combine dates, walnuts, 3 tablespoons honey, orange peel, and cardamom in processor. Blend until paste forms.
  • Preheat oven to 375°F. Line rimmed baking sheet with parchment. If using 17 1/2x12 1/2-inch phyllo sheets, place stack of 8 phyllo sheets on work surface. Halve stack crosswise, forming 16 sheets, each 12 1/2x8 3/4 inches; arrange in 1 stack. Or if using 13 1/2x8 1/2-inch phyllo sheets, stack 16 sheets on work surface. Cover phyllo stack with plastic wrap, then damp kitchen towel. Remove 1 phyllo sheet from stack and place on work surface; brush with melted butter. Top with second sheet; brush with butter. 2 Tbsp butter, melted (optional)

Steps:

  • 1. Place warm milk, beaten egg, softened butter, honey, and salt in bread pan.
  • 2. Add bread machine flour and whole wheat flour to bread pan.
  • 3. Top flours w/ bread machine yeast. Place pan in bread machine, select dough cycle and start.
  • 4. When dough cycle is complete, turn dough ball out onto lightly floured surface. Roll out dough to 3/4 inch thickness.
  • 5. Cut out rolls w/ 4 inch diameter biscuit cutter. (I like bigger rolls so I use top of tumbler 5-6 inches diameter). This will, of course, produce fewer sandwich buns.
  • 6. Place cut out dough rounds on lightly greased cookie sheets; cover and let rise until doubled in size (about 1 hour). Meanwhile, preheat oven to 350 degrees F.
  • 7. Bake in preheated oven 10-15 minutes (time will be determined by bun size). When rolls are baked, brush tops w/ melted butter if desired. Allow to cool thoroughly before slicing horizontally w/ bread knife. HAVE A HAPPY SANDWICH!
