Hot Honey, Garlic and Pineapple Chicken Thighs image

I love chicken thighs because they cook so quickly and are very forgiving. This recipe has minimal ingredients, comes together in no time and makes for an incredibly low-fuss but satisfying weeknight dinner. Serve it with some rice and any side of your choosing!

6 bone-in, skin-on chicken thighs (about 2 pounds)
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 cup pineapple juice
3 cloves garlic, finely minced
3 tablespoons honey
2 tablespoons hot sauce
Cooked rice, for serving
Chopped cilantro, for serving, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Arrange the chicken thighs on a baking sheet, evenly spaced, and pat the skin dry with a paper towel. Rub the chicken skin with the oil and season with salt and pepper. Roast until the skin is golden brown and crispy and the meat registers 165 degrees F when an instant-read thermometer is inserted into the thickest part of the meat, 35 to 40 minutes.
  • To make the sauce, whisk together the pineapple juice, garlic, honey and hot sauce in a saucepan over medium-high heat. Cook, stirring occasionally, until reduced by half and slightly thickened, 10 to 15 minutes.
  • Drizzle the sauce over the crispy chicken skin and serve warm with cooked rice. Sprinkle with cilantro if using.

2 cups water
1 tablespoon butter
1 teaspoon salt, eyeball it
1 rounded cup white rice
2 tablespoons black sesame seeds, toasted white sesame seeds may be substituted
4 boneless, skinless chicken breasts
4 boneless, skinless chicken thighs
Vegetable oil, for drizzling
Salt and pepper
1 cup chicken broth or water
1-inch ginger root, peeled and chopped
1/4 cup honey
1/2 cup teriyaki sauce
1 tablespoon toasted sesame oil
4 scallions, thinly sliced
1 ripe pineapple

Steps:

  • Preheat a grill pan or large griddle over medium high heat.
  • Bring water to a boil in a small covered pot. Add butter, salt and rice to the pot. Return the water to a boil. Reduce heat to simmer and replace cover. Simmer 18 minutes and remove rice from heat. Take the lid off the pot to cool rice a bit. Scoop rice into balls with an ice cream scoop and your hands. Dampen hands with water to work with rice if it is very sticky. Set rice balls on a plate and sprinkle with black sesame seeds.
  • While your rice is cooking, lightly coat chicken with oil, salt and pepper. Place chicken on hot grill and cook 6 minutes on the first side.
  • While chicken is cooking, bring chicken broth and ginger to a boil. Stir in honey. When honey has dissolved into broth, add teriyaki sauce and sesame oil and reduce heat to simmer.
  • Turn chicken and coat liberally with honey teriyaki sauce using a basting brush. Cook chicken 4 minutes, turn again and baste liberally again with sauce, then cook 2 minutes longer. Remove chicken to a plate. Garnish chicken with sliced scallions.
  • While chicken cooks on the second side, peel and cut a ripe pineapple into 8 spears. Cut off top and bottom of pineapple. Set pineapple upright and trim away skin in strips from top to bottom. Halve pineapple lengthwise and quarter each 1/2, lengthwise. The core is edible, but may be trimmed if you wish. Pineapple can be very acidic. Spears set in cold water for just 1 minute will keep the fruit from stinging your lips when it is eaten. Serve with chicken and rice balls

3 pounds boneless skinless chicken breast halves
2 tablespoons canola oil
1 can (8 ounces) unsweetened crushed pineapple, undrained
1 cup packed brown sugar
1/2 cup honey
1/3 cup lemon juice
1/4 cup butter, melted
2 tablespoons prepared mustard
2 teaspoons reduced-sodium soy sauce

Steps:

  • In a large skillet, brown chicken in oil in batches on both sides; transfer to a 5-qt. slow cooker. In a small bowl, combine the remaining ingredients; pour over chicken. , Cover and cook on low for 3-4 hours or until meat is tender. Strain cooking liquid, reserving pineapple. Serve pineapple with the chicken. Freeze option: Cool chicken mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally and adding a little water if necessary.

¼ cup honey
¼ cup vegetable oil
4 skinless, boneless chicken breast halves
½ cup all-purpose flour
1 teaspoon red wine vinegar
4 teaspoons chopped fresh mint

Steps:

  • In a small bowl, blend pineapple juice and honey.
  • Heat oil in a large, heavy skillet over medium heat. Dredge chicken in flour, and arrange in the skillet. Brush with the pineapple juice and honey. Sprinkle with red wine vinegar. Cook 7 to 10 minutes on each side, until chicken is no longer pink and juices run clear. Top with crushed pineapple and fresh mint to serve.

I have submitted this recipe as it was originally written however I prepare it slightly different. The original recipe calls for the marinade that the chicken was in to be used as the basting sauce but I am not comfortable with that. I double the marinade & after it has cooled I use 3/4 of the sauce to marinate the meat & reserve 1/4 of the marinade to use as the basting sauce while cooking. This marinade also works on pork. Prep times does not include marinating.

1/4 cup honey

1/2 fresh pineapple
4 boneless skinless chicken breasts or 4 boneless skinless chicken thighs, if you prefer dark meat
4 garlic cloves, minced
salt and pepper, to taste
2 teaspoons extra virgin olive oil
1/4 cup water
1 medium onion
1 tablespoon minced fresh gingerroot
1/4 cup water
2 tablespoons honey
2 tablespoons dry sherry
2 teaspoons cornstarch
1 (6 ounce) can pineapple juice
1 tablespoon lime juice
1 teaspoon grated lime zest
1 red pepper, sliced thinly
1 green pepper, sliced thinly

Steps:

  • Twist crow off of pineapple, Cut pineapple in half lengthwise. Save one half in refrigerator for later use. Remove the core from remaining half and cut fruit from shell with a knife, then into chunks.
  • Pound chicken to 1/2 in thickeness and season with salt and pepper.
  • Warm olive oil in large pan.
  • Add garlic and onion and saute until soft.
  • Add chicken and brown on both sides.
  • Combine water, honey, sherry and add to pan.
  • Cover and simmer for about 8 minutes.
  • Remove chicken from pan and keep warm.
  • Mix cornstarch withpineapple juice, lime juice, and peel; stir into pan along with the bell peppers. Cook until sauce boils and thickens.
  • Add pineapple and heat.
  • Spoon over chicken.
  • Serve immediately over brown rice.
