HONEY NUT CHEERIOS COOKIES

I found this recipe on the Honey Nut Cheerios box sometime in the 80's when my children were little. My family loved them.

1 c sugar
1 c brown sugar
1 c butter, softened
1 tsp vanilla extract
2 eggs
4 c honey nut cheerios
1 c oats
2 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 c walnuts, chopped
1/2 c coconut

Steps:

  • 1. Cream butter with sugars, vanilla and eggs.
  • 2. Blend in flour, baking soda, baking powder and salt.
  • 3. Mix in oats, Cheerios, walnuts and coconut.
  • 4. Drop by spoonfuls onto an ungreased cookie sheet and bake at 350 degrees for 12-15 minutes.

2/3 cup honey
1 egg
1/4 cup oil
1/2 cup white flour
1/2 cup whole wheat flour
1 cup rolled oats
1/2 teaspoon baking powder
1 pinch salt
2/3 cup walnuts, chopped
1/3 cup dried cranberries (optional)

Steps:

  • Blend honey with the egg and oil.
  • Sift flours, baking powder, and salt into the honey mix. Stir well.
  • Add oats and mix until even.
  • Stir in nuts and cranberries (if using).
  • If necessary, cover and refrigerate dough 15-20 minutes.
  • Preheat oven to 350°F.
  • Line a cookie sheet with waxed or parchment paper.
  • Using an ice-cream scoop, drop dough onto sheet.
  • Bake, on the top rack, 8-10 minutes.
  • Remove from oven and allow to sit on cookie sheet 5 minutes.
  • Place on cooling rack.

Lightly sweet, soft baked oatmeal cookies. I liked this recipe because I was searching for a way to bake with less refined sugar while keeping a good flavor and texture. It took some tweeking to get the wet/dry ratio and cooking temp. down. Try with dried fruits if you like.

1/4 cup raw honey
1/2 cup unsalted butter (softened)
1 large egg
1 teaspoon vanilla extract
1/4 cup unsweetened applesauce
1 1/2 cups old fashioned oats
1 cup unbleached all-purpose flour
1/2 cup walnut pieces
1/2 cup shredded coconut
1/4 cup dark brown sugar
2 tablespoons sesame seeds
1 teaspoon sea salt
1 teaspoon baking powder
1 teaspoon pumpkin pie spice, blend

Steps:

  • Preheat oven to 325 degrees.
  • Beat together brown sugar with wet ingredients in one bowl using an electric hand mixer. Mixture won't cream together, but mix as thoroughly as you can.
  • In another bowl combine your dry ingredients and mix well.
  • Fold wet ingredients into your dry ingredients until well combined and moistened. I use a spatula since mixture gets very sticky.
  • Chill dough for 20 minutes before spooning onto a cookie sheet. Cookies do not spread while cooking, so you'll want to flatten them with a fork.
  • Bake cookies for about 10-15 minutes depending on size. They should be done when they are light brown around the edges. Be careful not to overbake.

2 cups all-purpose flour
1 cup cold butter, cubed
1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1-1/2 cups chopped pecans, divided
1/3 cup plus 1/4 cup honey, divided
1 teaspoon butter, melted
1/2 teaspoon ground cinnamon

Steps:

  • Place flour in a large bowl. Cut in cold butter and cream cheese until mixture resembles coarse crumbs. Shape into two disks; wrap in plastic. Refrigerate for 2 hours or until easy to handle., Preheat oven to 325°. Place sugar and 1 cup pecans in a food processor; cover and process until pecans are finely chopped. Transfer to a small bowl; stir in 1/3 cup honey, butter and cinnamon., On a lightly floured surface, roll one portion of dough to 1/8-in. thickness. Cut with a floured 2-in. round cookie cutter. Place a teaspoonful of filling on the center of half of the circles; top with remaining circles. Press edges with a fork to seal. Repeat with remaining dough., Transfer to greased baking sheets. Brush with remaining honey and sprinkle with remaining pecans. Bake 18-22 minutes or until golden brown. Remove to wire racks to cool.

1 cup whole wheat flour (I used white whole wheat)
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup oats
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • Combine first 4 ingredients and mix well.
  • Combine next 4 ingredients and add to honey butter mixture.
  • Add the raisins and chopped walnuts.
  • Bake at 350 degree F for 12-15 minutes or until just lightly golden brown. (The original recipe called for them to be baked 10-12 minutes but I cooked them longer because they didn't seem to be done enough.) They will turn out soft.

  • Combine flour & salt, cut in butter & cream cheese until course grain. Fridge 1 hour. Preheat oven to 375. Grind nuts & sugar in processor, stir in honey, melted butter, & cinnamon. Roll dough 1/8" thick, cut into 2" circles. Put 1 tsp filling on circle and cover with another circle, press edges with fork. Bake 16-18 min.

1 cup brown sugar, packed

1 3/4 cups honey-nut flavor toasted oat cereal, crushed to 3/4 cup
1/2 cup walnuts, chopped & divided

Steps:

  • Heat oven to 350 degrees.
  • Grease a 13x9 inch baking pan.
  • In large bowl, cream butter and brown sugar; beat in egg, milk & vanilla.
  • Stir together flour, baking powder, soda, salt, cereal crumbs, and 1/4 cup walnuts.
  • Add to creamed mixture, and mix just till blended. (Batter will be stiff).
  • Spread evenly in pan.
  • Sprinkle top with remaining 1/4 cup walnuts.
  • Bake 15 to 20 minutes, or till toothpick tests clean, and top is lightly browned.
  • Cool. Cut into bars.

This is an old recipe from my 4-H days. They are unusual and good. By rolling the yeast dough out thin, the cookies come out crispy and delicious.

COOKIE DOUGH:
3 3/4 cup(s) all purpose flour, divided
1 - envelope rapidrise yeast
1 teaspoon(s) salt
1/4 cup(s) warm water
1 - (8-ounce) container sour cream
1 cup(s) butter, softened
2 large eggs
1/4 cup(s) honey
1 teaspoon(s) vanilla extract
3/4 cup(s) sugar
1 teaspoon(s) cinnamon
HONEY GLAZE:
1/3 cup(s) butter, melted
1/3 cup(s) honey
1 cup(s) chopped pecans

Steps:

  • In a mixer bowl, combine 1 cup flour, undissolved yeast, and salt. Heat water, sour cream, and butter until very warm (120 to 130 degrees). Gradually add to flour mixture. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Add eggs, honey, vanilla, and 1 / 2 cup flour; beat 2 minutes at high speed. Return to lower speed to stir in remaining flour and make a stiff batter. Cover bowl tightly with plastic wrap. Refrigerate 2 hours.
  • Remove dough from refrigerator. Divide dough in half; returning half to refrigerator. Combine sugar and cinnamon. Roll remaining dough to 12-inch square using 1 / 2 sugar mixture instead of flour on the board or surface where you roll out the dough. Let dough sit a moment while you make the honey Glaze.
  • To make Honey Glaze: In a bowl, combine 1/3 cup butter or margarine, melted and 1/3 cup honey. Stir until well blended. Brush dough with Honey Glaze. Roll up tightly like you would for a jelly roll. Pinch seam to seal. Using a sharp knife cut into 12 equal slices. Place cut side down on greased baking sheet. Flatten to 1/4 inch thickness. Brush with Honey Glaze. Then sprinkle with chopped pecans, pressing nuts into dough. Repeat with remaining half of dough, sugar mixture, Honey Glaze and pecans.
  • Bake at 325 degrees for 20 minutes or until done. Remove from baking sheets; cool on wire rack.

This is from an old cookbook published in 1954 by the Martha's Vineyard Hospital Auxiliary. It has my mom's hand writing in it!

1/2 cup(s) butter, one stick.
1/2 cup(s) sugar
1 egg, beaten
1/2 cup(s) honey
2 cup(s) sifted flour
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1 cup(s) finely chopped nuts, walnuts one other

Steps:

  • Cream butter and sugar.
  • Sift flour and use two cups of that flour and add baking powder and salt.
  • Mix egg and honey.
  • Add honey mixture and dry ingredients.
  • Combine creamed mixture with the other ingredients.
  • Chill dough until it is slightly firm and then place it on wax paper and form a roll, chill fora while.
  • Preheat oven to 375.
  • Thinly slice dough, and place on lightly greased cookie sheets.
  • It makes about two dozen cookies, or more depending on thickness of slices. Bake 10- 15 minutes.
