1 1/2 teaspoons cornstarch
Salt
Freshly ground black pepper
1 tablespoon honey
2 tablespoons Dijon mustard
1/2 cup flour, for dredging
1 pound boneless, skinless chicken breasts
2 tablespoons extra virgin olive oil
2 small unpeeled apples, cored and cut into eighths (use Fuji, Granny Smith, Jonathan, Jonagold, Pippin, or McIntosh apples, good cooking apples)
1/2 cup chicken broth
Fresh parsley for garnish

Steps:

  • Whisk apple cider, cornstarch, mustard, honey, salt and pepper: (to taste) in a bowl. Set aside.
  • Salt the chicken well and dust in flour: Shake off the excess.

1 (12-oz.) jar apple jelly
1 teaspoon ginger
1/2 teaspoon garlic powder
2 tablespoons soy sauce
2 tablespoons honey mustard
4 boneless skinless chicken breast halves

Steps:

  • Heat grill. In small saucepan, combine all glaze ingredients; mix well. Bring to a boil over medium heat. Boil 1 minute, stirring constantly.
  • When ready to grill, lightly brush glaze on one side of each chicken breast half. Place chicken, glaze side down, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Lightly brush glaze over chicken; cook 5 to 8 minutes.
  • Turn chicken; cook an additional 5 to 8 minutes or until fork-tender and juices run clear. Bring any remaining glaze to a boil; serve with chicken.

6 skinless, boneless chicken breast halves
salt and pepper to taste
½ cup honey
½ cup prepared mustard
1 teaspoon dried basil
1 teaspoon paprika
½ teaspoon dried parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle chicken breasts with salt and pepper to taste, and place in a lightly greased 9x13 inch baking dish. In a small bowl, combine the honey, mustard, basil, paprika, and parsley. Mix well. Pour 1/2 of this mixture over the chicken, and brush to cover.
  • Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with the remaining 1/2 of the honey mustard mixture. Bake for an additional 10 to 15 minutes, or until chicken is no longer pink and juices run clear. Let cool 10 minutes before serving.

8 skin-on, bone-in chicken thighs (2 to 2 1/2 pounds)
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 large onion, cut into large chunks
2 cooking apples (such as Cortland), cut into chunks
1 cup low-sodium chicken broth
2 to 3 tablespoons honey mustard
1 1/2 teaspoons unsalted butter, softened
1 tablespoon all-purpose flour
1 to 2 tablespoons roughly chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F. Season the chicken with salt and pepper.
  • Heat the olive oil in a large ovenproof skillet over medium-high heat. Working in batches if necessary, add the chicken, skin-side down, and cook until golden, about 6 minutes. Flip and cook 2 to 3 more minutes, then transfer to a plate. Pour off all but 2 tablespoons of the drippings.
  • Add the onion and apples to the skillet and season with salt and pepper. Cook until slightly softened, about 4 minutes. Mix the broth with the mustard, then add to the skillet and bring to a boil. Arrange the chicken, skin-side up, in the skillet. Transfer to the oven and roast until the chicken is cooked through, 15 to 20 minutes.
  • Mix the butter and flour to form a paste. Use a slotted spoon to transfer the chicken, apples and onion to plates. Bring the pan juices to a simmer, whisk in about half of the butter-flour mixture and boil to thicken, 2 minutes. Continue to cook, adding more of the butter-flour mixture as needed to make a slightly thick gravy. Season with salt and pepper. Pour over the chicken and sprinkle with parsley.

Our family loves honey mustard, and it is a natural with chicken breasts since they are mild and absorb the flavor so well. Just make sure they are skinless and can absorb the sauce (plus they are so much healthier that way!) This is a favorite fall and winter dish for us, or when we have guests!

3-4 - large boneless, skinless chicken breasts
1 - large apple, cored and thinly sliced
3 tablespoon(s) honey
3 tablespoon(s) mustard
1/4 cup(s) minced green onion
1 1/2-2 cup(s) chicken broth (reserved from chicken breasts)
2-3 teaspoon(s) cornstartch
- salt and pepper to taste

Steps:

  • Begin by rinsing chicken breasts and slicing them into halves (this results in 6-8 servings).
  • Then, in large saucepan, boil chicken breasts until meat is no longer pink.
  • While chicken is cooking, mince green onion and set aside, reserving 2 teaspoons for garnish.
  • Next, mix honey and mustard thoroughly in a mixing bowl and stir in green onion.
  • When chicken is cooked thoroughly, extract 1 1/2-2 cups broth from saucepan and mix with honey mustard mixture in bowl to prepare a sauce. Stir in 2 teaspoons of cornstarch until absorbed completely sauce is smooth; cook mixture in a small saucepan over low heat until thickened. Slowly add additional teaspoon of cornstarch only if needed.
  • Then, pour a small amount of sauce over bottom of prepared glass baking dish (11" X 7" or 9" square)to coat. Arrange split chicken breasts over this sauce in dish. Add remainder of honey mustard sauce, covering the chicken.
  • Thinly slice apple into 12-16 slices. Arrange slices between chicken breasts, also coating with sauce. Sprinkle reserved minced green onion over top as garnish.
  • Bake in preheated 350 degree oven for approximately 30 minutes. Sauce will thicken more during baking.
  • Allow to sit about 5 minutes before serving.
  • Serve chicken warm. A small ladle can be used for apples and sauce. Remaining servings refrigerate well for 1-2 days.

½ cup honey
½ cup Dijon mustard
1 cup seasoned bread crumbs
4 (4 ounce) skinless, boneless chicken breast halves

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with nonstick spray.
  • Mix honey and mustard together in a bowl. Place bread crumbs in a second bowl.
  • Roll chicken in honey-mustard, then roll in bread crumbs. Place in the prepared baking dish. Mix remaining honey-mustard and bread crumbs together and set aside.
  • Bake in the preheated oven for 30 minutes. Has to be my signature dish. Everyone loves it. I must admit though, that I got the honey mustard recipe from my hero Alton Brown! Oh well, this is my most requested dish for pot lucks and meals for people at church. Adjust it if you need to for more servings. I've got to where I just eyeball the measurements for the honey mustard and it still turns out great. Hope you enjoy!

3 tablespoons creamy Dijon mustard (not the grainy kind)
2 tablespoons rice wine vinegar
1/4 cup chopped pecans

  • I like to brown the chicken first, but it's not necessary. I like the color.
  • Preheat oven to 350°F.
  • Make the dressing.
  • Whisk the 3 ingredients for the honey mustard together.
  • Add the nuts.
  • Place chicken in a shallow baking dish and cover with honey mustard dressing.
  • Bake at 350°F for about an hour or until chicken is done all the way through.

4 sheets aluminum foil, lightly sprayed with cooking spray, 18 x 12 inches

1 medium apple, cored and cut into 8 pieces
3/4 cup peach jam
1 small red bell pepper, diced
2 tablespoons honey mustard
1 tablespoon cornstarch
1 garlic clove, minced
1/2 teaspoon ground ginger
1/4 cup green onion, sliced (optional)

Steps:

  • Prepare grill for direct cooking.
  • Place one chicken breast in center of each sheet of foil. Season with salt and pepper. Place 2 apple wedges beside chicken. Repeat with remaining chicken, foil, salt, pepper and apple.
  • Combine jam, bell pepper, mustard, cornstarch, garlic and ginger in a small bowl. Spoon over chicken and apples.
  • Double-fold sides and ends of foil to seal packets, leaving head space for heat circulation. Place on baking sheet.
  • Slide packets onto grill grid. Grill, covered, over medium-high coals 11 to 13 minutes until chicken is no longer pink in center. Carefully open one end of each packet to allow steam to escape. Open packets and transfer mixture to serving plates. Sprinkle with green onions before serving.
