1 lb Brussels sprout
1/3 cup coarsely chopped pistachios, toasted
1/3 cup dried cherries or 1/3 cup cranberries
1/3 cup shredded parmesan cheese
1/4 cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
1 garlic clove, minced

Steps:

  • Shred the sprouts. First cut off the tough ends of the sprouts and any browning outer leaves. Then shred them coarsely in a food processor using the slicing blade, pressing the sprouts against the blade with the provided plastic pusher.
  • Whisk together the olive oil, vinegar, honey, mustard and garlic until emulsified.
  • In a medium serving bowl, toss the shredded sprouts with the pistachios, dried fruit, Parmesan and dressing. Serve.

1 tablespoon lemon juice
3/4 teaspoon salt
1/2 teaspoon pepper
3 cloves garlic, finely chopped
4 cups shaved or shredded fresh Brussels sprouts
1 medium Honeycrisp or Gala apple, cored and julienned (about 1 1/2 cups)
4 green onions, chopped (1/4 cup)
1/2 cup chopped cooked bacon
1/4 cup chopped toasted walnuts

Steps:

  • In large bowl, mix oil, honey, mustard, lemon juice, salt, pepper and garlic. Stir in Brussels sprouts, apple and onions.
  • Cover and refrigerate at least 8 hours but no longer than 24 hours. Top with bacon and walnuts.

2 medium tart apples, chopped
1 medium red onion, chopped
1 small sweet orange pepper, chopped
1/2 cup chopped walnuts
1/2 cup green grapes, sliced
1/2 cup shredded cheddar cheese
3 bacon strips, cooked and crumbled
1/4 cup olive oil
2 tablespoons red wine vinegar
