Make your own muesli and boost it with fresh fruit for a wholly satisfying and healthy breakfast to keep you going through the day

225g porridge oat , jumbo ones give a good texture
125ml freshly squeezed orange juice
225ml natural yogurt , can be low fat
3 tbsp clear honey
finely grated zest of 1 lemon
2 red or pink dessert apples
2x punnets raspberries
50g hazelnuts in their skins, lightly toasted and coarsely chopped
single cream , to serve (optional)

Steps:

  • Mix oats, orange juice and 300ml/½ pint cold water in a bowl. Cover with cling film and leave in the fridge overnight.
  • The next morning, stir in the yogurt, honey and lemon zest. Quarter and core the apples, grate them in and stir well. Spoon into bowls and top with raspberries and toasted hazelnuts. Pour on a little single cream, if you like.

1/3 cup quick-cooking oatmeal (recommended: McCann's)
1 1/2 tablespoons coarsely chopped toasted hazelnuts
2 tablespoons granola with raisins
Pinch kosher salt
1/3 cup hottest tap water
1 tablespoon honey
4 large ripe strawberries, hulled and sliced
6 to 8 fresh raspberries
2 teaspoons sugar
Greek yogurt (recommended: Fage Total, for serving

Steps:

  • Measure the oatmeal, hazelnuts, granola, and salt together in a cereal bowl. Pour the water and honey over the mixture, stir, and set aside to soak for 12 to 15 minutes.
  • Meanwhile, toss the strawberries, raspberries, and sugar together in another bowl and allow to macerate while the muesli is soaking. When ready to eat, divide the muesli between 2 bowls; divide the berries between the oat mixtures and stir in. Serve at room temperature with a dollop of yogurt on top.
