Blue Corn Pancakes with Orange Honey Butter and Cinnamon Maple Syrup image

1 1/2 cups all-purpose flour
1/2 cup blue cornmeal
Pinch salt
1 tablespoon sugar
1 tablespoon baking powder
2 large eggs
1 1/2 to 2 cups milk
2 tablespoons unsalted butter, melted
1 cup fresh blueberries, plus more for garnish
2 to 3 bananas, peeled and sliced
Orange-Honey Butter, recipe follows
Cinnamon Maple Syrup, recipe follows
Confectioners' sugar, for garnish
3 cups fresh squeezed orange juice
2 sticks butter, slightly softened
2 tablespoons honey
Pinch salt
2 cups pure maple syrup
2 to 3 cinnamon sticks

Steps:

  • Preheat a nonstick griddle. Preheat the oven to 200 degrees F.
  • Mix together the dry ingredients in a medium bowl. Beat the eggs and 1 1/2 cups of the milk in a medium bowl until combined, then stir in the melted butter. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the blueberries. If the batter seems too thick, add some of the remaining milk.
  • Ladle approximately 1/4 cup of the batter onto the griddle for each pancake. Cook until the bottom is light golden brown, flip, and continue cooking for about 30 seconds. Remove to an ovenproof plate and keep warm in the oven until ready to serve. Serve 3 pancakes per person with a dollop of orange-honey butter, cinnamon maple syrup, and bananas. Garnish with blueberries dust with confectioners' sugar.
  • Place orange juice in a small non-reactive saucepan over high heat and reduce to 3 tablespoons. Place butter in a bowl and add the orange syrup, honey, and salt; mix until combined. Scoop into a large ramekin, cover with plastic wrap, and refrigerate until firm, about 2 hours.
  • Heat syrup and cinnamon sticks over low heat for 10 minutes. Remove and let steep for 1 hour. Remove sticks and pour into a small pitcher.

Steps:

  • Grill corn for 10 minutes. Cut the corn off the cob and cool.

water enough to cover
1 stick butter
4 Tbsp honey
1 c heavy cream
2 jalapenos seeded and sliced
salt and butter for serving

  • 1. In a large pot enough to hold the ears of corn. Add water just enough to cover. Mix in the butter, honey, heavy cream and jalapenos. Bring to a boil and reduce the heat. 1 cup hot milk
4 ounces melted butter
2 tablespoons oil
1 to 2 ears corn, shucked, kernels removed from the cob

Chipotle Puree, recipe follows
1 1/2 to 2 pounds jumbo lump crabmeat
1 ounce garlic, chopped
4 ounces mayonnaise
Pinch chopped fresh herbs (tarragon, thyme, sage)

2 cups all-purpose flour
2 eggs, lightly beaten
2 cups bread crumbs
4 tablespoons butter
Basil Oil, recipe follows
Remoulade, recipe follows
3 ounces chipotle in adobo
1/4 bunch cilantro, stemmed
1 ounce garlic
1 bunch basil, leaves picked
1 cup olive oil
2 cloves garlic
Salt and pepper
1 ounce shallot, peeled and sliced
3 ounces cornishons or 1/2 dill pickle
1 tablespoon capers
1/4 teaspoon cayenne pepper
1 cup mayonnaise
1 tablespoon brandy

Steps:

  • Mashed Potatoes: Place potatoes in boiling, salted water and cook until soft, about 15 to 20 minutes. Drain. While the potatoes are cooking, combine the hot milk and melted butter. In a small saute pan, add the oil and heat. Add the corn and saute until tender, about 5 minutes. Season with salt and pepper. Add the milk mixture to the drained potatoes with the chipotle puree and sauteed corn and mash. Season with salt and pepper, to taste. Set aside and keep warm.
  • Mix the crabmeat, garlic, mayonnaise, and herbs. Season with salt and pepper. Divide the mixture into 8 equal portions.
  • Place the flour in a shallow dish or bowl. Place the eggs in a separate bowl, and the bread crumbs in a separate bowl. Dredge each crab cake in the flour, then the egg, then the bread crumbs, shaking off any excess. Refrigerate until ready to cook.
  • Melt 1/2 of the butter in a large saute pan. Add the crab cakes in batches and cook until golden brown on both sides, adding more butter as necessary.
  • Place potatoes in center of plate. Stack crab cakes onto mashed potatoes. Drizzle chipotle honey and basil oil around plate. Place a dollop of remoulade sauce on top of crab cakes.
  • Combine all ingredients in a blender or food processor and puree until smooth.
  • Chipotle Honey:
  • 4 ounces honey
  • 1 ounce chipotle peppers in adobo sauce, pureed
  • Combine the honey with the chipotle puree
  • Blanch the basil leaves in boiling water for 10 seconds. Drain and plunge in a water bath. Dry the leaves well and place in a blender. Add the garlic and puree with oil until smooth. Season with salt and pepper.
  • Combine all ingredients in food processor or blender until smooth.

4 ears of corn, shucked and cut in half
1 stick (8 tablespoons) salted butter
2 tablespoons honey
2 whole cloves garlic, smashed
1/2 cup crispy fried jalapenos, crushed, such as French's
Chili lime seasoning, such as Tajin, for garnish

Steps:

  • Preheat the grill to 375 degrees F, setting one side of the grill to medium-high heat and the other side to low heat.
  • Place the ears of corn directly on the grill grates on the medium-high side of the grill. Let char 2 to 3 minutes per side, about 10 minutes total.
  • While the corn is grilling, in a 9-by-13-inch disposable aluminum baking pan, add the butter, honey and garlic. Place the pan directly on the grill grates on the low side of the grill. Stir occasionally to incorporate the butter and honey.
  • Once the corn is done grilling and the butter is melted, remove the pan from the grill. Roll each piece in the baking pan, coating each side of the corn. When ready to serve, sprinkle with the crispy jalapenos and chili lime seasoning.

1/3 cup honey

Steps:

  • Preheat oven to 350 degrees F. Grease your muffin tray.
  • Mixture is prepared in 2 parts - wet and dry. First prepare the wet mixture. In a large mixing bowl whisk together eggs, sour cream, melted butter, milk, honey, lemon zest and juice. In a separate large mixing bowl combine all dry ingredients. Once the dry mixture is blended begin to add the wet mixture by folding into the dry mixture. As soon as both mixtures are blended spoon the mixture into the prepared muffin tray. Fill each cup about 2/3 to 3/4 full. 3 Tbsp. fresh lime juice
2 Tbsp. honey
1 1/2 tsp. Sriracha
1 tsp. granulated garlic
1 1/2 avocados, cut into 3/4" pieces
1 serrano chile, thinly sliced
1/2 cup cilantro leaves with tender stems

Steps:

  • Prepare a grill for medium-high heat. Brush ears of corn with butter; season with salt and pepper. Grill, turning occasionally, until kernels are very tender and charred in spots, 10-12 minutes. Let cool slightly, then cut kernels from cobs.
  • Meanwhile, whisk lime juice, honey, Sriracha, granulated garlic, and 1 1/2 tsp. salt in a large bowl to combine. Add corn, avocados, chile, and cilantro to vinaigrette and toss to combine; season with salt and pepper.   • Remove husks from corn and grill over medium heat for 10 minutes. The corn should have some brown spots and be tender and not mushy. Cut the corn off the cob then scrape the cob with the back of your knife to get the juices. Set aside and let cool. Slice the tomatoes in half. Dice the avocado and chop the cilantro. Dressing Add all the dressing ingredients in a small bowl and whisk to combine. Set aside. Combine the sliced tomatoes avocado, cilantro and grilled corn and honey lime dressing and mix gently so everything is evenly coated. Be careful not to mash the avocados. Let the salad sit for 10 to 15 minutes to let the flavours mingle. Enjoy.

1/3 cup sour cream
1/4 cup 2% low-fat milk
1 tablespoon canola oil
1 (8 3/4 ounce) can whole kernel corn, drained
1 jalapeno pepper (minced, and use 1/2 if less of a kick is wanted)
1/4 cup butter
2 tablespoons honey

Steps:

  • Preheat oven to 400°F.
  • In a small bowl combine first 7 ingredients.
  • In another bowl, combine the egg, sour cream, milk and oil. Stir into dry ingredients just until moistened. Stir in jalapeño and corn.
  • Coat muffin cups with nonstick spray, fill 2/3s full with batter. Bake at 400°F for 14-16 minutes until tester comes out clean.

1 cup all-purpose flour
1 tablespoon baking powder
3/4 teaspoon fine sea salt
1/8 teaspoon cinnamon
3/4 cup fat-free buttermilk
6 tablespoons grade a pure honey
6 tablespoons freshly squeezed orange juice
1/3 cup vegetable oil
1 lightly beaten large egg
1 tablespoon salted real butter
1 tablespoon grade a pure honey
1/4 teaspoon finely grated fresh orange zest

Steps:

  • NOTE: USE ONLY GRADE A HONEY, BUTTER, AND ORGANIC RIPE ORANGES. IF MAKING MUFFINS, IT IS RECOMMENDED YOU DOUBLE THE HONEY-ORANGE GLAZE RECIPE. (STEP ONE): PREHEAT oven to 400°F for sheet cornbread, OR 350°F for muffins; BUTTER an 8"x8" square glass baking dish or a 9"x9" glass pie plate (OR grease, then add liners, in up to 18 muffin cups); FINELY grate 1/4 teaspoon fresh orange zest for the glaze; KNEAD and squeeze oranges to yield 6 tablespoons juice for the batter.

Ancho-Honey Sauce
1 cup honey

  • For the Chicken: Place chicken in a large baking dish, add buttermilk, turn to coat. Cover and place in refrigerator for at least 4 hours. Heat 1-inch of the peanut oil in a cast iron skillet to 350 degrees F. Remove the chicken from the buttermilk, pat dry and season with salt and pepper. Dip each piece of chicken in the flour and pat off excess. Dip in the eggs then cornmeal. Slowly add the chicken pieces to the hot pan skin-side down in batches. Cover the skillet and reduce the heat to medium high and cook for 7 minutes, remove the cover, turn the chicken over and continue to cook for 6 to 7 minutes. Drain on paper towels and transfer to a platter. Drizzle with the Ancho Honey Sauce.
  • For the Ancho Honey Sauce: Mix all ingredients together until blended.
  • For the Buttermilk-Bacon Potatoes: Combine all ingredients in a medium bowl and smash, don't puree.

1 1/4 cups warm Honey-Ginger Barbecue Sauce
16 ears of corn, shucked
2 tablespoons vegetable oil
1 teaspoon salt

Steps:

  • Prepare Honey-Ginger Barbecue Sauce and divide equally into two bowls.
  • Prepare grill for direct-heat cooking over medium-hot charcoal (medium-high for gas); see Grilling Procedure. .
  • Drizzle corn with oil on a large rimmed baking sheet, and sprinkle evenly with salt. Lightly rub oil and salt into corn.
  • Oil grill rack, then grill corn (covered only if using gas), turning frequently, until lightly browned and tender, 6 to 8 minutes. Move corn to different positions on grill if hot spots are present. Brush corn with some of prepared sauce and grill, turning, until sauce is hot, 1 to 2 minutes. Serve with reserved sauce.

Lime-and-Honey Glazed Salmon with Warm Black Bean and Corn Salad image

4 tablespoons extra-virgin olive oil (EVOO)
1 medium red onion, chopped
2 large garlic cloves, chopped
1/2 to 1 teaspoon crushed red pepper flakes (medium heat to extra spicy)
1 teaspoon ground cumin (1/3 palmful)
Salt and freshly ground black pepper
Juice of 2 limes
3 tablespoons honey (3 gobs)
1 teaspoon chili powder (1/3 palmful)
4 6-ounce salmon fillets
1 red bell pepper, cored, seeded, and chopped
1 10-ounce box frozen corn kernels, defrosted
1/2 cup chicken stock or broth
1 15-ounce can black beans, rinsed and drained
2 to 3 tablespoons fresh cilantro leaves (a handful), chopped
6 cups baby spinach

Steps:

  • Preheat a medium skillet over medium heat with 2 tablespoons of the EVOO (twice around the pan). Add the onions, garlic, red pepper flakes, cumin, salt, and pepper. Cook, stirring occasionally, for 3 minutes.
  • While the onions are cooking, preheat a medium nonstick skillet over medium-high heat with the remaining 2 tablespoons of EVOO. In a shallow dish, combine the juice of 1 lime, honey, chili powder, salt, and pepper. Add the salmon fillets to the lime-honey mixture and toss to coat thoroughly. Add the seasoned salmon to the hot skillet and cook until just cooked through, about 3 to 4 minutes on each side.
  • To the cooked onions, add the bell peppers and corn kernels and cook for 1 minute. Add the chicken stock and continue to cook for another 2 minutes. Add the black beans and cook until the beans are just heated through. Remove the skillet from the heat and add the juice of the second lime, the cilantro, and spinach. Toss to wilt the spinach and then taste and adjust the seasoning. Serve the lime-and-honey-glazed salmon on top of the warm black bean and corn salad.
  • Tidbit
  • If fresh corn is in season, by all means cut the kernels from 4 fresh ears instead of using frozen.

  • Place ingredients, except muffins, in a food processor and process until smooth. Place in a ramekin, cover and refrigerate for at least 2 hours.
  • Place the muffins, cut-side down on the grill and grill until golden brown. Remove from the grill and slather with blueberry butter.

1 c yellow cornmeal
1 Tbsp baking powder
1/2 tsp salt
1 c whipping cream ( i used heavy whipping cream)
1/4 c vegetable oil
1/4 c honey (i used agave)
2 large eggs slightly beaten

Steps:

  • 1. This is the cookbook the recipe came from. Preheat oven to 400 degrees F.
  • 2. These are the main ingredients used in the recipe.
  • 3. These are the NORDIC WARE mini Bundt pans I used to bake the corn bread in. They each have a 1 1/2 cup capacity. When we were in Ohio at this Rib place, they served their corn Bread in mini skillets, so I decided to use these mini Bundt Pans, but YOU MAY ALSO USE A REGULAR 8 INCH SKILLET OR PAN.
  • 4. This is the larger of the two pans, it has a 3 cup capacity.
  • 5. Combine the dry ingredients in a medium size bowl and stir to blend together.
  • 6. Beat eggs slightly in a smaller bowl, then add the other wet ingredients, oil, whipping cream, & honey, and beat together.
  • 7. Pour liquids into dry ingredients and stir till it comes together.
  • 8. Now pour into pre greased pan or skillet, and bake for 20-25 minutes or until wooden toothpick inserted into center comes out clean.
  • 9. Invert onto serving platter, cut and add softened butter if desired.
  • 10. These are 2 0f the 3 mini loaves that the recipe made.

CORN ON THE COB WITH HONEY

A corn farmer once said the only way to cook corn on the cob was to call back to house from the field, "Is the water boiling?" When the answer was yes, pull the corn and run back, shucking as you go, to get it in the pot as quickly as possible. Since most of us aren't so lucky to be able to do that, just add a bit of honey to the cooking water and your corn will be lovely and sweet.

6 ears fresh sweet corn
1/3 cup honey
1/4 lb butter, melted
1/2 teaspoon salt
1/8 teaspoon white pepper

Steps:

  • Shuck and silk the corn and cut away any bruised areas.
  • Bring lots of water and the honey to a rolling boil in a large pot.
  • Add the corn and cook for four minutes, after the water comes back to a boil.
  • Stir together the melted butter, salt and white pepper in a baking dish long enough to hold an ear of corn.
  • Drain the corn, roll each ear in the butter mixture and serve immediately.
