2 mangoes (finely diced, about 2 ½ cups)
2 small avocados (finely diced)
½ cup red onion (finely chopped)
1-2 serrano peppers (or jalapeños, seeded and diced)
2 Tbsp. lime juice (freshly squeezed)
⅓ cup cilantro (finely chopped)
¼-½ tsp. salt (to taste)
⅛ tsp. black pepper

Steps:

  • Combine diced mango, avocado, red onion, peppers, and cilantro in a large bowl.
  • Squeeze lime juice over the ingredients and sprinkle with salt and pepper, to taste.
  • Toss gently until just mixed.
  • Serve immediately or store in an airtight container in the refrigerator for up to 3 days.

My grandma came back from Honduras with some amazing snack recipes up her sleeve and I just needed this one in particular. It is great for parties and adds a very festive feel to your surroundings. It is best served alongside some tortilla chips, and I prefer yellow corn tortilla chips and if you have to use a name brand I prefer Tostitos.

1 mango, peeled and diced
2 avocados, peeled and chopped
1 tomatoes, diced into very small pieces
1/8 red onion, diced
1 red pepper, diced into very small pieces
1 dash garlic powder (optional)
1 dash lime juice (optional)

Steps:

  • Cut up the mango avocados, tomato, red onion and red pepper in to the amounts described.
  • For extra flavor, add a dash of garlic powder and/or a dash of lime juice.
  • Then when all the work is done, let it sit in the bowl for about 20 minutes or over night with a plastic wrap over it to keep its flavor.
  • After that, all you have to do is serve it with chips and enjoy!

1 ripe mango
1 -2 firm ripe avocado
1 small red onion
1 large red bell pepper
1 -2 clove garlic
1 inch fresh ginger
1 jalapenos or 1 serrano chili
lime juice
salt and pepper

Steps:

  • Peel and stone the mango and avocados.
  • Dice into small cubes (1/4 inch).
  • Peel and clean the onion, bell pepper, garlic, ginger and chile.
  • Cut any large items into small chunks.
  • Place all ingredients escept the mango, avocado and lime juice in a food processor and pulse until very finely minced.
  • Scrape into a bowl.
  • Gently stir in the mango and avocado.
  • Sprinkle with lime juice, salt and pepper and toss lightly to combine.
  • Serve immediately or cover tightly and chill for a couple of hours.
  • Serve with fish, chicken or pork.
