This is the meatloaf my mom made and it was always one of her most requested recipes. I'm not sure if it's one of her recipes or not, since she was always clipping recipes from magazines and newpapers. It's still a big hit with family and friends and remains one of my most requested recipes. My hubby is a hunter, so I do make it with ground vension and vension sausage and it's wonderful. You can also make meatballs with the meat mixture and brown them in a skillet, pop them in a crockpot with spaghetti sauce and it's great served over pasta. The meatballs also make a wonderful appetizer served with your favorite sweet & sour or BBQ sauce. Any leftover meatloaf or meatballs make a mean sandwich the next day as well. I usually make two recipes and bake both loaves on a large baking sheet so I have enough for sandwiches the next day, LOL.

1/2 cup ketchup
2 teaspoons brown sugar
1 teaspoon dry mustard
1 lb bulk pork sausage
1 lb lean ground beef
1 cup uncooked quick oats, not instant
1/2 cup chopped onion
1 egg, beaten
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a small bowl, combine ketchup, brown sugar and mustard; set aside.
  • In a large bowl, combine 1/3 cup of the ketchup mixture and the remaining ingredients; mix well.
  • Spray a foil lined, shallow baking pan with non-stick spray. Shape mixture into loaf and bake at 350 for 1 hour; remove from oven and pour remaining sauce over loaf; bake for 10 more minutes and remove.
  • Let stand for 5 minutes before slicing.

I got this recipe out of the Fannie Farmer Boston Cooking School cookbook. It is now my only meatloaf recipe and my family is constantly requesting it. I did change slightly and you can change the ketchup and water to just water or just milk. The Parmesan cheese can be omitted as well. If you prefer you can use any other type of ground beef. And the original recipe called for bacon placed on top.

1 egg, slightly beaten
2 teaspoons salt
1/2 cup ketchup
1/2 cup water
1 cup soft breadcrumbs (I use Italian seasoned crumbs)
2 tablespoons instant minced onion
1/2 cup parmesan cheese
2 lbs 90% lean ground beef

Steps:

  • Preheat oven to 350.
  • Mix all ingredients together using hands or potato masher.
  • If you prefer more seasoning you can add whatever you prefer.
  • Pat into a greased loaf pan.
  • Bake one hour at 350.

This is a meatloaf recipe I came up with because I don't like to put ketchup in my meatloaf (though you certainly could). This recipe got rave reviews from my family. It is great served with garlic mashed potatoes and salad!

1 1/2 lbs lean ground beef
1/2 yellow onion, finely chopped
1 large garlic clove, pressed
2 large eggs
40 Ritz crackers
1 (20 ounce) can V8 vegetable juice
3 tablespoons tomato sauce
3 tablespoons canned diced tomatoes
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, combine ground beef, onion, garlic, and crackers.
  • Add 10 oz. V8 vegetable juice (1/2 a can), eggs, salt, pepper, and canned diced tomatoes.
  • Knead all ingredients until they are thoroughly dispersed.
  • Put mixture into a loaf pan.
  • Spoon tomato sauce evenly over the top. I also add a bit more V8 vegetable juice to the top.
  • Bake for 1 hour or until the middle is thoroughly cooked.
  • Cut into slices and serve.

My husband is a very picky eater who doesnt like ketchup, it was very difficult to come up with a meatloaf recipe that did not have ketchup but I finally came up with one that we both can agree on!

1 lb cooked ground beef
2 large eggs
1 cup plain breadcrumbs
1/4 cup parmesan cheese, grated
1/4 cup onion
1 tablespoon italian seasoning
14 ounces marinara sauce

Steps:

  • Heat oven to 350 degrees F.
  • In large bowl, mix all ingredients except marinara sauce.
  • Add 1 cup marinara sauce; mix well.
  • Press mixture into ungreased 8 X 4 inch loaf pan.
  • Bake at 350 F for 40 minutes.
  • Pour remaining marinara sauce over meatloaf.
  • Bake an additional 15 to 20 minutes or until meat is well browned and firm.
  • Let stand 10 minutes before serving.

1/2 lb bacon
1 cup chopped onion
1 cup chopped celery
3/4 tablespoon black pepper
3/4 tablespoon onion powder
1 1/2 tablespoons dried thyme
2 tablespoons salt
1 1/2 tablespoons dry mustard
1 1/2 tablespoons paprika
3/4 tablespoon garlic powder
1 cup tomato juice
3/4 cup evaporated milk
2 cups dry breadcrumbs
4 eggs
5 lbs ground beef

Steps:

  • Preheat oven to 450 degrees.
  • Cook bacon in frying pan, remove, drain and chop.
  • Leave drippings in pan and saute (but do not brown) onion and celery.
  • Add pepper, onion powder, thyme, salt, mustard, paprika and garlic powder.
  • Cook for 10 minutes.
  • Remove pan from heat and add tomato juice and evaporated milk.
  • Mix bread crumbs with eggs and add to meat.
  • Add spice mixture and bacon to meat mixture and mix gently.
  • Place mixture in two or three 8 x 4 inch individual loaf pans.
  • Cook until done, about 40 to 50 minutes, or until internal temperature reaches 160 degrees on a meat thermometer.

1 lb ground chicken or 1 lb ground turkey
1/4 cup fresh cilantro leaves, chopped
3 green onions, chopped

3 tablespoons oyster sauce
1 tablespoon fish sauce
2 teaspoons hot chili sauce
1/2 teaspoon black pepper
2 eggs
3/4 cup dry breadcrumbs (preferrably panko)
1/4 cup ketchup
1 teaspoon hot chili sauce
1 teaspoon soy sauce

Steps:

  • In a large bowl, combine pork, chicken, cilantro, green onions, garlic, oyster sauce, fish sauce, pepper, eggs, and bread crumbs. Combine thoroughly.
  • Pack into a 9 by 5 inch (2L) parchment lined loaf pan. Bake in a preheated 350 F (180 C) oven for 55 minutes.
  • Meanwile, in a small bowl, combine the ketchup, chili sauce and soy sauce. Spread over the top of the meatloaf . Return to oven and bake for 20 to 25 minutes or until a meat thermometer registers 170 F (77 C).
  • Let stand for 5 minutes. Pour off any accumulated juices. Cut into slices.

Nonstick cooking spray
2 pounds ground chuck
1 cup crushed saltine crackers
1/2 cup finely chopped celery
1/2 cup finely chopped onion
3 tablespoons Worcestershire sauce
1/4 cup Dijon mustard
2 tablespoons chopped fresh parsley, plus more for garnish
1 1/4 teaspoons salt
1 1/4 teaspoons ground black pepper
2 large eggs, lightly beaten
One 6-ounce can tomato paste
5 slices white bread
2 tablespoons firmly packed brown sugar
1 tablespoon fresh lemon juice

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with aluminum foil. Spray the foil with nonstick cooking spray.
  • In a large bowl, combine the chuck, crackers, celery, onions, Worcestershire sauce, 2 tablespoons of the Dijon mustard, the parsley, 1 teaspoon each of the salt and pepper, the eggs and half the can of tomato paste, and mix together until just combined.
  • Place the white bread on the bottom of a baking sheet and place the beef mixture on top. Shape the mixture into a 12-inch loaf.
  • In a small bowl, combine the brown sugar and lemon juice with the remaining tomato paste, Dijon mustard and salt and pepper. Spread the mixture over the meatloaf and tent with aluminum foil. Bake until a meat thermometer registers 165 degrees F, about 50 minutes. Remove the foil during the last 10 minutes of cooking.
  • Let the meatloaf stand for 10 minutes before slicing. Garnish with fresh parsley if desired.

I use an oval crock pot when making this. It just helps maintain the traditional meatloaf shape. I serve this with mashed potatoes and green beans.

1 - (8-oz) container of refrigerated prechopped celery, onion, and bell pepper mix
2 clove(s) garlic, minced
2 pound(s) ground round
3/4 cup(s) uncooked quick-cooking oats
1 cup(s) ketchup, divided
3/4 teaspoon(s) salt
1/2 teaspoon(s) freshly ground pepper
2 large eggs, lightly beaten
2 tablespoon(s) brown sugar
1 tablespoon(s) yellow mustard

Steps:

  • Melt butter in a large skillet over medium-high heat. Add celery mixture and garlic; saute 3 minutes or until tender. Combine sauteed mixture, ground round, oats, 1/2 cup ketchup, salt, pepper, and eggs in a large bowl.
  • Shape mixture into a 9 x 4" loaf; place in a lightly greased 5 or 6 quart slow cooker.
  • Cover and cook on HIGH for 1 hour. Reduce heat to LOW, and cook 3 more hours. Remove slow cooker insert, and carefully pour off excess fat. Return insert to cooker.
  • Stir together remaining 1/2 cup ketchup, brown sugar, and mustard. Spread over meatloaf. Cover and cook on LOW 15 minutes or until no longer pink in center. Remove meatloaf from insert, and let stand 10 minutes before serving.

1 pound ground beef chuck
1 1/4 teaspoons salt
1/4 teaspoon ground black pepper
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 egg (beaten)
8 ounce can diced tomatoes with the juice
1/2 cup quick cooking oats
Brown Sugar Glaze:
1/3 cup ketchup
3 tablespoons brown sugar
1 tablespoon yellow mustard

Steps:

  • Preheat your oven to 375 degrees.
  • Mix the ground beef, salt, pepper, onion, green peppers, egg, oats and diced tomatoes well. You may have to use your hands, but don't overwork the meat. Just until the ingredients are mixed in.
  • Form a loaf and place in a baking dish.
  • Mix ketchup, brown sugar and mustard together and spread over meatloaf.
  • Bake uncovered 1 hour, draining grease away twice by tipping the dish and using a spoon or holding the meatloaf with a spatula and draining straight from the dish.
