8 bacon strips, cut into 1-inch pieces
1 cup finely chopped onion
2/3 cup finely chopped celery
1/2 cup finely chopped green pepper
2 garlic cloves, minced
2 teaspoons all-purpose flour
2 teaspoons sugar
2 teaspoons salt
1/4 teaspoon pepper
2 cans (14-1/2 ounces each) diced tomatoes, undrained
8 cups frozen lima beans (about 42 ounces), thawed

Steps:

  • Preheat oven to 325°. In a 6-qt. stockpot, cook bacon, onion, celery and green pepper over medium heat until bacon is crisp and vegetables are tender. Add garlic; cook 1 minute longer. Stir in flour, sugar, salt and pepper. Add tomatoes. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in beans., Transfer to a greased 3-qt. baking dish or a 13x9-in. baking pan. Bake, covered, 35-40 minutes or until beans are tender.

2 cans (15 ounces each) pork and beans
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) lima or butter beans, rinsed and drained
1 medium onion, chopped
1/2 cup packed brown sugar
1/2 cup ketchup
4 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine the beans, onion, brown sugar and ketchup. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with bacon. Cover and bake at 350° for 1 hour. Uncover; bake 30 minutes longer.

I was trying to re-work my frozen lima beans into something I could entice the kids with and came up with this dish. It was so simple with its zesty sweet flavor, and the kids ate every bite.

1 (16 ounce) bag frozen lima beans
5 slices bacon
1/3 cup diced red onion
1/3 cup brown sugar
salt and pepper

Steps:

  • Boil the lima beans according to package (about 10-12 minutes-I used pressure cooker for 5 minutes).
  • While beans are cooking fry bacon in a medium frying pan on medium heat until crisp and drain.
  • Add the red onion and cook additional 5 minutes.
  • Add lima beans, salt, and pepper to pan.
  • Sprinkle brown sugar and stir.
  • Add a couple Tablespoons water for saucier texture.
  • Serve.

1 1/2 cups lima beans, dry
5 cups water
4 slices bacon, cut in 1 inch squares
1/3 cup celery, chopped
1/4 cup onion, chopped
1/4 cup bell pepper, chopped
1 garlic clove
2 tablespoons flour
1 1/2 cups tomatoes, canned
2 teaspoons salt
1 teaspoon pepper
2 tablespoons sugar (optional)

Steps:

  • put limas in cold water and boil until tender ,drain.
  • place in 1 1/2 quart casserole.
  • cook bacon in skillet.
  • add celery.
  • onions pepper and garlic.
  • cook until veggies tender add flour brown salt pepper and sugar if you wish cook until sauce is thick(may need a little water ) pour this sauce over beans( mix).
  • cover and bake 1 hour at 300 degrees.

1 lb fresh lima beans or 1 lb frozen lima beans, cooked until tender
1/4 lb bacon, chopped fried until translucent
1 medium onion, chopped
1 medium green pepper, chopped
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
salt
3/4 cup grated monterey jack cheese

Steps:

  • If you are using fresh or frozen cover the beans with water and bring to a boil, skim the surface& simmer untiltender about 25 minutes for fresh, 6 minutes for frozen.
  • Canned Lima beans just heat& drain throughly.
  • Grease an oven proof pan (Deep Casserole).
  • Fry the bacon until translucent,m add onions& pepper saute for about 6 minutes Add beans and cook until hot, stirring frequently About 5 minutes.
  • Add tomatoe sauce& stewed tomatoes.
  • Cover and simmer for 10 minutes.
  • Uncover and simmer until most of the juice has evaporated about 20 minutes.
  • Pour into the casserole dish.
  • You can do the recipe up to here the day ahead, refrigerate. Bring to room temperature before putting in the oven) Heat oven to 450 degrees F.
  • Sprinkle with the cheese, bake until hot with the cheese is melted and lightly browned Apprx 20-25 minutes.
  • If you are going from start to finish with this recipe without refrigerating you will only want to have it in the oven for apprx 15 minutes just to get the lovely color to the cheese and have it bubbly
  • Serve immediately - hot

1 can (16 ounces) butter beans, rinsed and drained
1 can (16 ounces) kidney beans, rinsed and drained
3/4 cup packed brown sugar
1 tablespoon prepared horseradish
1 tablespoon yellow mustard

Steps:

  • In a Dutch oven, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 1 tablespoon drippings. Add onion to drippings; cook and stir over medium heat until tender., Stir in the remaining ingredients; return bacon to pan. Transfer to a greased 2-qt. baking dish.
