Much lower salt than pre-made. Salt can be omitted. Great with half ground buffalo and half ground turkey breast or whatever you prefer. Buy bulk spices and you can make 5-plus batches for under $1.00!! Increasing black pepper and adding optional ingredients will increase heat. Using mild or regular chili powder and omitting optional ingredients will reduce heat. To keep salt content low make sure chili powder does not contain salt.

1 ½ teaspoons paprika
1 teaspoon onion powder
½ teaspoon sea salt

1 pinch cayenne pepper, or to taste

2 teaspoons dried minced onion
1 teaspoon salt
1 teaspoon chili powder
½ teaspoon cornstarch
½ teaspoon ground cumin
½ teaspoon red pepper flakes
¼ teaspoon cayenne pepper
¼ teaspoon dried minced garlic
¼ teaspoon dried oregano
1 pound ground beef
½ cup water

Steps:

  • Mix minced onion, salt, chili powder, cornstarch, cumin, red pepper flakes, cayenne pepper, dried minced garlic, and oregano in a bowl.
  • Heat a large skillet over medium-high heat. Crumble ground beef into the hot skillet. Cook and stir until the beef is completely browned, 7 to 10 minutes. Drain and discard any excess grease.
  • Return ground beef to heat. Pour seasoning mixture and water over the beef; stir to combine. Bring to a simmer and cook until the moisture absorbs into the meat, about 5 minutes.

1/4 cup chili powder
3 tablespoons dried minced onion
1 tablespoon garlic powder
2-1/2 teaspoons salt

2 teaspoons ground cumin
1-1/2 teaspoons cayenne pepper
1 teaspoon ground coriander
ADDITIONAL INGREDIENTS:
1 pound lean ground beef (90% lean)
3/4 cup water
4 whole wheat tortillas (8 inches), warmed

Steps:

  • Heat oven for taco shells. Start browning meat. Mix taco seasoning dry ingredients. While meat is browning, grate cheese and chop tomatoes; prep lettuce; get out condiments that you want to use. Watch for meat to get about 1/2 browned. When meat is partially browned add taco seasoning mix and continue until fully browned. After browned completely, add 1/2 to 1 cup water and the 2 tbsp tomato paste and cook down on low to blend flavors. It is about now that you would put your taco shells into a preheated oven. The cook times vary: 3 - 9 minutes depending on brand. Finish prepping condiments and toppings while meat mixture simmers down to almost no liquid but is still moist. Used it with 1 lb ground lean beef, corn taco shells, cheese, salsa, avocados, tomatoes. May serve with sour cream..

My Best Homemade Taco Seasoning Mix image

Years ago I used to buy those packets of taco seasoning mix, and at first they really weren't too bad. Not at all. Then through the years they got worse and worse, and I'd have to doctor them more and more until I finally just got fed up. They became VERY expensive little flour and salt packets with almost no flavor at all. Sooo, I've come up with my own starting from several that I found and incorporating my own ideas and tastes. This is truely a good mix! Don't waste another penny on junk, make it better homemade! Enjoy!! :D Photo by me.

2 tsp. - seasoning salt, i always use johnny's
1/4-1/2 - tsp. cayenne, to taste for heat preference
1 tsp. - onion powder
2 tsp. - good dark chili powder (just not the el cheapo orangey stuff)
2 tsp. - paprika
2 tsp. - garlic powder
2 tsp. - cumin
1 cup - beef bouillon, i always use superior touch better than bouillon beef base using 2 tsp.
2 Tbl. - cornstarch
2 Tbl. - flour
2 Tbl. - dried minced onion
1/2 tsp. - oregano
1/2 tsp. - sugar
1 Tbl. - ketchup
1 1/2-2 - cups beer, can sub water but use less as needed
2 lbs. - meat (ground beef, cubes of beef or pork, chicken cubes or strips)
- chopped jalapenos, fresh or jarred, optional

Steps:

  • Cook meat with or without jalapenos. Drain grease. Mix all dry seasonings and flours and whisk or shake in jar to mix. Sprinkle evenly over meat, toss meat to coat. Add bouillon, beer and ketchup. Stir til mixed. Heat to boiling, reduce heat and simmer til thick. (About 15-20 minutes.)*If using beer, don't worry, it doesn't taste like beer and most of the alcohol will cook out. This is especially good when using beef or pork cubes because beer is a natural meat tenderizer. When I make pork tacos, I simply use pork loin chops and cut them into bite-sized cubes. ETA After reading Bea's comment I thought that I should mention here that I rarely add salt to anything.......except popcorn and corn on the cob. lol. So from what Bea said......it sounds like 1 teaspoon of salt should work in this mix if you choose...

5 tsp paprika
4 1/2 tsp cumin
3 tsp onion powder
2 1/2 tsp garlic powder

  • 1. In storage container with tight-fitting lid, combine all ingredients, mix well. Seal tightly. Store in cool, dry place for up to 6 months.
  • 2. Makes 21 teaspoons (about 1/2 cup). Seven teaspoons of mix equal a 1.25 oz. pkg. of purchased taco seasoning mix.
  • 3. TIPS: Cumin, an herb, is ground from cumin seeds, and there is no substitute for its flavor.
