I have made this for years, with a little tweak here and there and finally think I have it perfected. It has just enough bite from the vinegar, but a subtle sweetness too. I make quadruple batches and store it in old mayo jars in my garage fridge for quick meals. The longer you simmer it, the better it gets!

2 tablespoons butter
1 cup onion, chopped
2 1/2 teaspoons salt
6 garlic cloves, minced
1/2 cup maple syrup
1/4 cup molasses
1 cup vinegar
1 1/2 cups catsup
2 1/2 cups chicken stock
3 beef bouillon cubes
1 1/2 tablespoons Worcestershire sauce
1 teaspoon liquid smoke
1/4 teaspoon black pepper
Tabasco sauce

Steps:

  • Melt butter in a large stewpot over med-high heat.
  • When the bubbling subsides add the onions all at once.
  • Sprinkle with the salt and cook for 5-8 minutes, stirring often, until golden.
  • Add the garlic and cook for another minute until fragrant.
  • Add the syrup, molasses, vinegar and catsup. (At this point I use a hand blender to puree the onions, but this is optional).
  • Bring to a boil, then reduce the heat to med-low.
  • Add the remaining ingredients and continue to simmer until thick and bubbly, at least 30 minutes. The longer you simmer it, the better it will be.

Ok so we were all poor once, I still am LOL, but my richness comes from the Lord. I wanted to barbecue, but alas no sauce. I did have odds and ends of stuff. This awesome barbecue sauce came from my quick thinking.

1 - sweet onion medium sized
3 clove(s) garlic minced
4 tablespoon(s) real butter
1 tablespoon(s) red pepper flakes
1 tablespoon(s) liquid smoke flavoring
1 teaspoon(s) celery salt
10 - grinds mccormicks sea salt
10 - shakes chili powder
6 - shakes of paprika
1 - shake of lemon peel
1 cup(s) catsup
2/3 - bottle of the bear honey
1 tablespoon(s) peanut butter creamy

Steps:

  • STEP ONE: melt butter in sauce pan over low heat, saute chopped garlic and onion til onion is clear. Place in food processor. To this :
  • STEP TWO: grind til smooth. Put back in the sauce pan. To the sauce pan add : add red pepper flakes, liquid smoke, celery salt, the grinds and saute a bit
  • rest of remaining ingredients (catsup, honey, and peanut butter) STEP THREE: Cook over medium heat til it just starts to bubble. Let cool and use over chicken pork etc.
